Hello, my name is Thuy i’m based in central Indiana. I started blogging about Vietnamese cooking back in college because I was missing home cooked meals. But most importantly I wanted to stay connected to my Vietnamese root through food and cooking.

What’s in the dressing? Paprika? Something red
Looks great, but I don't see any herbs in your wrap. That's where the flavor is at in Vietnamese foods...especially wrapped stuff.
Sometimes I cut steps out because it didn’t have a good flow or angle. But if you watch closely at the part when i’m dipping, there is basil underneath there.
@@ablogofsalt3359 I did look at it a couple of times as your platter of herbs/veggies contained the herbs but just didn't see it in your final shot. But my eyesight isn't the best and I guess I also load mine up with herbs so you definitely can see it. Thanks for clarifying.

3 Chinese Sausage Links boiled then diced 1 cup Cha Lua (Ham roll) diced 1/2 cup dried shrimp rehydrated 1 cup chopped green onions fried egg strips sticky rice 1. To make the sweet & savory toppings start by sautéeing minced shallots with rehydrated dried shrimp and 1 tbl water until shrimp are tender. 2. Next add diced Chinese sausage and diced cha lua. 3. Season with 1/2 tbl fish sauce and 1 tsp sugar more or less to your liking. Add 1 tsp mushroom seasoning and 1/4 tsp black pepper. Sautéed all the ingredients on low-medium heat until are the ingredients soak in the seasoning. 4. Add the chopped green onions and turn up the heat for like 5 mins so it will caramelized. Make sure you pay attention so you don’t burn it. 5. Make fried egg strips and sticky rice. 6. Add savory toppings to sticky rice plus the egg strip

Base on a 10 qt pot: 4 lbs pork hock 3 lbs of shrimps banh canh noodles 2 daikon salt rock sugar sugar fish sauce mushroom seasoning cilantro green onions black pepper fried shallots fresh chili 1. Parboil pork hock and then rinse well. 2. Add pork hock to pot, along with onion and daikon. Fill up with water. 3. Peel 1 lb of shrimp then smash or you can ground in food processor. Sautéed shrimp with some shallots and oil. Add this to the pot. 4. Let pot come to a boil and remove scum as necessary. 5. Season pot with 2 tbl of salt, 2 tbl mushroom seasoning, 1 large rock sugar. 6. Let pot simmer until pork hock is tender. 7. Boiled 2 lbs of shrimp an peel shell. 8. Once pork hock is tender removed pot. Adjust broth with additional seasoning to your liking. 9. Boil your banh canh noodle. 10. Prepare your noel with noodles, pork hock, shrimps. fried shallots. Add broth and enjoy with fresh chili.

Recipe for sauce
Ingredients ( Makes 2 serving): 1 firm unripen mango 1 cup of conch meat 2 cups of Vietnamese coriander 1 tbl fried shallots chopped fresh chili Dressing: 1/4 cup of lime juice 1/4 cup of sugar 2 tbl fish sauce 1 tbl of sambal ( chili paste) fresh chili to your liking 1. Thoroughly rinse your conch meat. Boil it won’t salt and ginger for 15-20 minutes. 2. Once cooled, thinly slice the conch meat the long way. 3. Julienned your mango. Washed your herb and let it dry off a bit. 4. Combine ingredients to make dressing, adjust to your taste. 5. Add the sliced conch meat to the mango and add some of the dressing. Lightly toss it together. 6. Add some coriander leaves and transfer to a serving plate. 7. Top off with fried shallots and more chili. 8. Enjoy!

Ingredients: sliced pork belly 8-10 jumbo shrimp chopped 2 zucchini diced 1 onion diced 1/2 cabbage diced 8-10 mushroom diced 2 tbl minced garlic cucumbers thinly sliced 3-3 tbl black bean paste ~1 tbl of mushroom seasoning 1 tbl sugar 1 cup of water 2 tbl of cornstarch slurry cooking oil as needed noodles 1. Fried the pork belly until crispy then add the shrimps and cook for 1-2 minutes. Season with salt and pepper to taste. Remove and set aside for later 2. Brown minced garlic then add the onions and mushrooms. Cook until onions are a little translucent, add the zucchini and cabbage. 3. Add 1 tbl of mushroom seasoning and 4 tbl black bean paste. Mix well. 4. Veggies will release liquid. Add an additional cup of water. Pop on the lid for 2-3 minutes so the veggies will cook. I like my cabbage to stay crunchy so I do the minimum. 5. Add back the pork belly and shrimp. Add 1 tbl of sugar or more to your liking. 6. Add cornstarch slurry and mix until sauce thicken. 7. Ladle sauce on top of noodles and top with sliced cucumbers.

Ingredients for broth: 2 lbs of pork spare ribs or just pork bones is fine 1/2 cup of dried shrimp rehydrated in water 1-2 shallots 6-8 roma tomatoes 1/2 sliced sweet onions 1/2 cup of chopped green onions salt rock sugar mushroom seasoning Fried Fish: 2-3 pompano cleaned and cut into steaks salt fish sauce mushroom seasoning black pepper paprika turmeric Other ingredients: fried fish cake (cha ca) lettuce, cabbage, mint, cilantro vermicelli noodle fresh chili, lime diced green onions chopped dill fried shallot 1. Clean and par boiled your riblets. Rehydrate the dried shrimp. 2. In a pot add water about 8-10 quarts, riblets, dried shrimp, and shallot; let pot come to a boil the turn it down to low-medium. 3. Season with salt, rock sugar, and mushroom seasoning to your liking. Cook broth until riblets are tender. 4. Sautéed some sliced shallots, add 2-3 tbl tomato paste. Add roma tomatoes halves. Season with some fish sauce. Add this to the broth. 5. Add sliced sweet onions and chopped green onions. Adjust with additional salt and sugar to taste. 6. Marinate fish steaks with salt, fish sauce, mushroom seasoning, black pepper, paprika, and turmeric. Let fish marinate for at least a couple hours. Then deep fried until crispy. 7. Prepare your other ingredients like fried fish cake, veggies, herbs, garnishes and condiments. 8. Add noodles to a bowl and add broth, tomatoes, pork, fried fish, fried fish cake. 9. Enjoy!

Can I substitute the pork?
You can make a broth out of chicken or even shrimp. Leave out the pork and just use all shrimp and crab meat.
