  • Baked Catfish to be eaten as Spring Rolls with rice paper, vermicelli rice noodles, fresh veggies, and tamarind fish sauce.
    Ingredients:
    1 whole catfish
    salt
    mushroom seasoning
    cooking oil
    Toppings:
    scallion oil (green onions and cooking oil)
    crushed roasted peanuts
    fried shallots
    Tamarind Fish Sauce:
    tamarind pulp
    fish sauce
    sugar
    garlic
    chili
    water
    Spring Rolls:
    rice paper
    vermicelli noodles
    veggies of choice

    I love it and it truly looks delectable! I'm thinking fish doesn't need to be cooked for that long, right? I mean, you cooked it for like 30 minutes and based it 3x (at 15 minutes each). That doesn't dry out the fish at all? Love the dip you made, too.
