Chicken Biryani - Cooking with Yousef
Hi friends, hope you are having a wonderful day today. Today we are making a wonderful dish prepared and enjoyed in many parts of the world called Biryani.
This is the chicken version and this recipe is tailored toward Iranian cuisine. In fact, the dish originated in Iran (I did not know this until researching it for myself) but is more popular now in areas like India, Pakistan, and Afghanistan.
This is not a difficult dish to make, but it needs quite a few ingredients in the spice department, but after frying the onion, and preparing the rice, it becomes a one-pot dish.
It is incredibly tasty, aromatic, and wonderful to make so I hope you try it out!
Ingredients list (4-5 ppl)
• 1 Whole Chicken Cut into Pieces (thigh legs or breast
• 3 Cups Basmati Rice
• 4 Onion
• Bunch of Cilantro
• Bunch of Fresh Mint
• 4 Tablespoons of Yogurt
• 1 1/2 Tablespoons grated or ginger paste
• 6 Cloves of Garlic. (paste)
• 4-5 Bay Leaves
• 2 Chili Pepper (jalapeno or Serrano)
• 2 Cinnamon Sticks
• 12 Whole Cardimon
• 1 Star Anise
• 4 Whole Cloves
• 1 Teaspoon Black Pepper
• 1 Teaspoon Coriander Powder
• 1 Teaspoon Chili Pepper
• 1 Teaspoon Turmeric
• 1 1/2 Teaspoons whole Cumin
• 2 Teaspoon Gram Masala
• Salt to your taste
• 1 Lemon (or lime)
• 1 Glass of Saffron Milk (saffron + 1/3 Teaspoon Saffron
• Cooking Oil

    Chef, even though your food looks delicious & mouth-watering, i have to say that i disagree with the use of olive oil in ANY Persian food! Also i'm hesitant to use cinnamon in a Baghali Polo dish! Other than that, thank you for showing how this famous dish is prepared & made. 👍

    Yeahhh….you finally attempt to make it. I learned that the biryani name came from Iran, the cooking steaming method came from Central Asia, and spices came from south east Asia. There is a video from an Indian man that explains it - ua-cam.com/video/KYWpiehjZCI/v-deo.htmlsi=2yGchDxcQ3N0NxMQ Some people put tomatoes, kerwa water, unnatural food color, and Alu bokrah- Pakistani Biryani style. Hyderbadi biryani is closer to Persian biryani. Hope to bump into someday in the valley.

    Thank you for that lovely video. That looks delicious. My dad is from Iran and taught my mom so many dishes. I took it for granted as a child eating Persian food almost every day. I miss it every day since I moved out. You remind of my dad a lot and I mean that in the best way. Also love the classic Persian fruit bowl with cucumber and the orchids. Reminds me of home.

    You cooked biryani the authentic way. But I respectfully disagree with biryani's Persian origin. Although I must concede I am not a food historian. Firstly as far as I know (please correct me if I am wrong) modern Iran doesn't have any dish named biryani. I am an Indian living in US. I have some Irani friends. None of them were aware of any dish called biryani. They did tell me there is a dish called beryan in Isfahan. But it is not a rice based dish. I have followed your channel for some time. I did find your cooking style of Zereshk Polo similar to biryani. I even made it myself. It was very tasty, however, its flavor was quite different from any of the biryanis in India I have ever tried. I have also come across some Iranian Balochi channels cooking biryani. But Baloch people also had contact with the Indian subcontinent for a long time. I haven't met any Balochi before. But from what I have read about them their culture is more similar to Indian subcontinent than Iran. Although in the end we all are fellow travelers in this journey through the world :) Secondly, there are references in old Indian texts of recipes similar to biryani. Specifically there is a dish called Maamsodana which involves cooking half cooked rice and meat together in a pot sealed with dough on low heat. An objective evidence of its existence is a 12th century text called Paakdarpana (meaning philosophy of cooking). This is before Mughals, who were of Turkic and Persian origin and are generally credited with 'introducing' biryani to India, came to India. Although references to maamsodana exist in even far older texts also. I have been made aware that in Faarsi, birinj means rice and beryan means to fry or roast. Maybe the Mughals, when they first came across biryani in India, gave the dish the name biryani on the basis of these words. So, in my opinion the name of biryani is of Irani origin, but the original recipe might be Indian. All that being said there is no denying that there is also proof that the modern version of biryani with all its riot of aromatic spices was perfected in Mughal time. The whole Mughlai cooking style is indeed inspired from Persian cooking. Please feel free to correct me anywhere if I have erred. I do enjoy your recipes. Besides Zereshk Polo, I also cooked Gheme Bademjaan and Fesenjun relying primarily on your recipes. Thank you for introducing me to all the awesome Irani dishes. Love from India.

    I followed your instructions, and my stew became extremely bitter. I added 6 dry lemon, which was a bad idea. Next time, I won't use dry lemon. I will use half a lemon juice without seeds. Also some sugar can eliminate the bitterness when you use the stupid dry lemon.

      Dry lemon is very important for the flavor but you can use less. Most important thing is to not let them break up in the stew.

    Ashe Reshteh is one of my all time favourite meals, but I’d never heard of this until your video popped up on my recommendations. Looks absolutely delicious, and the meat stock is easily swapped out for vegetable. Currently in the middle of a standard Welsh summer (cold and wet) so I shall definitely be making this tomorrow!

      Just regular curry powder. I use Sadaf brand but you can use any that you like.

    I have been enjoying your content and inspiring me to try different recipes. I am very interested in the style of propane/gas grill you are using or would recommend for this type of kebabs. I enjoy charcoal for koobideh as I find cooking is quick. However propane options that could compare to fast cook times, I don't know. Your BBQ in this video suggests a traditional American Weber gas BBQ. Not sure. Thoughts?

      Hi friend, what I am using is a gas mangal sitting on top of an American gas BBQ. They are hard to find here and I brought this back from Iran. Charcoal is more traditional way, but is not convenient for me. I suggest you keep using charcoal if that works great for you, especially a charcoal mangal.

    Youssef, I am so glad I found your channel. I am a 75 yr. old Italian-American woman who loves Persian food…yes..,even more than I love Italian food! (But I don’t tell my family this! ☺️) When I was in my 20’s, I knew many Iranians, lovely people. That is how I came to know Persian cuisine. But my husband and I recently retired to a very rural area in Washington state, and there aren’t any Persian restaurants within a reasonable driving distance. I loved Fesanjan, among many other fabulous Persian dishes, such as Gourmeh Sabzi, Khoresht Bey, and the rice with barberries. I want to make this beautiful Fesanjan recipe. However, several people in my family have allergies to walnuts, but not other nuts. Can Fesanjan be made with a different nut…perhaps Pecans, which are similar to walnuts? I am subscribing to your channel, and hope to find many more recipes for delicious, healthy Persian Cuisine. Merci!
