  • Hi friends, today we are making a delicious, healthy & easy vegan version of a meal called "Bademajan Va Gojeh Farangi" (بادمجان و گوجه فرنگی) which is basically Eggplant and Tomato.

    Ingredients List:
    • 6 Small Regular Eggplants (two large or 3 Japanese/Chinese eggplants)
    • 5 Tomatoes
    • 3 or 4 Cloves of Garlic
    • 1 Tablespoon Tomato Paste
    • 1 Teaspoon Salt
    • 1 Teaspoon Garlic Powder
    • 1 Teaspoon Black Pepper
    • 1 Teaspoon Paprika
    • Cooking Oil
    • Half a lime or lemon juice (optionally)

    Hi Yousef I found your channel and I love it! I am in love with Persian flavors! I am vegan with GF diet but I love recipes like this one! I know that in northern Iran they have a lot of vegan recipes. There is one that is filled with walnuts. Thank you for sharing your skills and your passion for Iranian food and please share more vegan recipes! Thank you!

    What do you put to the tomatoes? Is it garlic? And another question how many threads of saffron do you put?
