- Hi friends, today we are making one of the most popular restaurant and take-out dishes in Iran, and that is pizza!
Now, you might think Pizza is the same everywhere in the world, but some things make Persian or Iranian Pizza different from the rest of the world.
So, if you are Italian, best to skip that part, lol
The pizza we make today is a hybrid between Iranian and American style and it is the one I like to make for my family.
I have a long history with pizza myself :)

in albania we make the exact same pizza, i think its called grandma style, or village/farmer, classic or special, its done in many countries the same way with minor changes, its not specific to any country but most think its their own

I ordered this Persian style pizza at a cafe. It was very good and the halal ham tasted just like ham. I did enjoy it more without ketchup though.

Culinarily speaking, adding ketchup is just the same as adding a little sugar, vinegar, and spices. Adding a small bit might be the "tune-up" that your sauce requires; especially since you are using fresh tomatoes, which are usually picked unripe from the vine and are cursed with a metallic taste that calls for heavy spices to mask the flavor. Unless you can pick your tomatoes close to full ripeness, not too ripe because you still want that clean acidity, I always advocate for using crushed canned tomatoes for pizza sauce.
With that being said, ketchup away Mr. Yousef!
