Ashe Shalgham (Persian Turnip Soup) - Cooking with Yousef

  • Hi friends, today we make Ashe Shalgam (also spelled Ash or Aash, which is Persian Turnip Soup. This delicious soup can be enjoyed at any time of day and is the lesser-known but just as tasty variation of the beloved Ash Reshteh.
    This one doesn't take much time to cook, once you've gathered all the ingredients. And it will really help keep you warm in the chilly winter months.
    Ingredients List:
    • 6 Medium Turnips (or 4 large)
    • 500-750 grams of Chopped Fresh Herbs included below:
    • One bunch of Parsley
    • One bunch of Cilantro
    • One bunch of Dill
    • One bunch of Chives (or green onion leaves which I use in the video)
    • 2/3 Cup Rice (soaked in water)
    • 2/3 Cup Green Lentil (soaked in water)
    • 2/3 Cup Bulgur (soaked in water)
    • 3 Onion
    • 6-8 Cloves of Garlic
    • Beef Bone Broth (or Chicken Broth or 3 Chicken Bouillon)
    • 1 Tablespoon Turmeric
    • 1 1/2 teaspoon salt
    • 1 1/2 Black Pepper
    • 3-4 Tablespoon Dried Mint
    • Some Liquid Whey
    • Cooking Oil
    Additional condiments you can add at the end (pick one):
    Liquid Whey (Khask) or Vinegar or Sour Grape Juice Kashk

    I love everything about this! The herb blend I can smell from my living room! When I lived in England I used rutabaga all the time, very similar. This is a wholesome bowl of comfort!

    Ashe Reshteh is one of my all time favourite meals, but I’d never heard of this until your video popped up on my recommendations. Looks absolutely delicious, and the meat stock is easily swapped out for vegetable. Currently in the middle of a standard Welsh summer (cold and wet) so I shall definitely be making this tomorrow!

Can I put in a request for some more vegetable/grain/rice dishes, please? As someone who doesn’t consume animal products, and who loves Persian flavours, the more dishes I can make, the better!

    Looks very good! I love turnips but have never had them this way...only roasted or boiled then mashed...this way looks more tasty. Will try it soon as it is perfect weather for soup. Could it be made with other root vegetables? 🧡

      yes, other root vegetables would work as well but the flavor profile will change

      By itself, just like a soup. Sometimes it’s served as an appetizer but it is very filling by itself
