    LEARN HOW TO MAKE AN EASY AND TASTY UDON NOODLES STIR FRY RECIPE TODAY!
    LAY HO MA (how's it going in Cantonese)! Udon noodles are one of my favourites - it's accessible, easy to cook, versatile, and has an incredibly robust texture. Join me in this episode and learn how to make a deliciously saucey udon noodles stir fry recipe today! Let's begin
    Ingredients:
    1/2 red onion
    2 pieces garlic
    1/2 carrot
    50g broccolini
    125g cabbage
    90g smoked tofu
    1 tbsp soy sauce
    1 tsp dark soy sauce
    1 tsp black vinegar
    1 tsp toasted sesame oil
    1 tbsp plantbased oyster sauce
    1 tbsp avocado oil
    250g udon noodles
    Directions:
    1. Bring a pot of water to boil for the noodles
    2. Slice the red onion and garlic. Chop the carrot into thin matchsticks and chop the broccolini into bite sized pieces. Thinly shred the cabbage and slice the smoked tofu into strips
    3. Make the sauce by combining the soy sauce, dark soy sauce, black vinegar, toasted sesame oil, and plantbased oyster sauce
    4. Heat up a nonstick pan to medium heat. Add the avocado oil followed by the red onions. Sauté for a couple of minutes. Add the garlic and sauté for about a minute
    5. Boil the noodles for a minute less than package instructions
    6. Add the carrot and broccolini to the pan and sauté for a couple of minutes. Add the shredded cabbage and sauté for a couple of minutes. Then, add the smoked tofu and give the pan a stir
    7. Drain the noodles and add to the pan followed by the sauce. Sauté for a couple of minutes. Plate and serve!

    I'm always grateful that most of the recipes are smaller servings which is perfect for my home. Not that leftovers aren't a good thing, but I do like the meals that are made to order for 1 or 2.

    My absolute fave, veggies & noodles!
    I have 3 all-time summer dishes using my garden produce; BLT, veggie stir-fry plain, noodkes, rice, pasta or eggs (omelet)
    My mom would argue my fave is grazing, but i only count the produce that makes it from the garden to the kitchen as a meal.
    My late winter & wasn't sitting growing season has been 15-20° cooler than the past 4 years which in bet excited about. All my greens, broccoli, cauliflower, Brussel sprouts and cabbage doing realy good. Getting ready to get snow peas in the ground, haven't been able to grow peas since 2020....

    Will, honestly...I could watch you make those stir-fry recipes ALL DAY LONG! I'm gonna give this one a try because it looks really simple. Thank you for sharing this recipe! When I was younger, I was into all the fancy-schmancy recipes where everything was so laborious because I did all ingredients or sauces or whatnot by hand from scratch & was proud of having done so. Now that I'm in my 50's...not so much. I guess with age comes humility...lol!

    I made this dish for lunch today and it was so scrumptious! I think Udon noodles are my new favorite. The texture reminds me of my grandma's homemade noodles.....a bit chewy and thick (but not doughy). I am impressed how the noodles absorb so much flavor. I only changed a few things, adding mushrooms to replace the tofu and broccoli instead of the broccolini. It was a big hit at our house. Thanks again for sharing these excellent recipes!

    Could I keep this dish warm in my crockpot to take to a church potluck? Our senior pastor is vegetarian and he usually gets left out because most of us are meat eaters, although that is changing.

      Stir fried noodles have to be served fresh, it's not like any stew dish that can be kept in a crockpot, the noodles and veggies will get soggy...js

    Hello from a non vegetarian…….i love all your recipes as they can be adapted; on occasion I’ve added shrimp or a rotisserie chicken, thin slivers of beef are even better….probably not your intended goal but I think your recipes speak for themselves in that they can be dressed up or dressed down. Recently I made dinner for my son, his wife and two very fussy children. It was quite the challenge.
    I heard my daughter in law warn the children to have manners and eat up their dinner………half way through the meal there was silence except for the sound of forks hitting the fine china then the children asking, “is there any more Granny?”
    Your books have become my go to recipes. Thank you for bringing back the joy to my cooking and making fond memories for me, my grandchildren, my son and his wife…

    I made this tonight. I don't like tofu, so I added in water chesnuts. I also didn't have black vinegar, so I used balsamic. It was delicious. I get very intimidated by cooking Asian food. So many special ingredients that I don't normally have and was never raised using. But he made this so easy... Even this viking could do it. What a nice change of pace. Will definitely be doing again and again.

    Wow, that was great - and easy too! My son ate the dish with absolutely impressive speed.
    I added some more of this delicious sauce and we even finished off our plates with a little more dark soy sauce. Now we're a little thirsty :) But happy.
