    Ingredients:
    1 cup brown lentils
    1 cup basmati rice
    3 pieces garlic
    small piece ginger
    1 red onion
    1 tomato
    2 tbsp olive oil
    pinch of salt
    1/2 tsp cumin
1/2 tsp chili powder (cayenne pepper)
    1 1/2 tsp sweet paprika
    1 tsp coriander
    pepper to taste
    1 1/2 cups veggie stock
    few lemon wedges
    few sprigs parsley
    Directions:
    1. Place the brown lentils into a large bowl. Fill with about 3 cups of water and let it soak for 8 hours or overnight. Then, strain out the lentils and set aside
    2. Rinse and drain the basmati rice two to three times. Then, set aside
    3. Finely chop the garlic and ginger. Dice the red onion and tomato
    4. Heat up a sauté pan to medium heat. Add the olive oil and red onions. Sauté for 4-5min
    5. Add the garlic and ginger. Sauté for 1-2min. Add the lentils and sauté for about 1min
    6. Add the rice, salt, cumin, chili powder (or cayenne pepper), sweet paprika, coriander, and pepper
    7. Add the tomato and sauté for about 1min. Add the veggie stock and give the pan a stir to deglaze
    8. Turn the heat to medium high and bring to a boil. Then, cover and cook on medium low for 15min. After 15min, turn the heat off and let the rice continue to steam covered for a further 10min
    9. Plate the rice and garnish with fresh lemon juice, parsley, a drizzle of olive oil, and freshly cracked pepper

@@theworldisastage3425 doesn’t look like they were cooked ahead. From what I saw or understood, the Lentils were soaked 8 hours. The rice was rinsed 3 times to rid the extra starch. They were cooked when all were added to the pot.
That’s my understanding but I could be wrong.

A lot of UA-cam content creators seem to feel like they have to pull silly faces, speak very loudly, strike stupid poses, jump up and down, and otherwise create a clown show. It's really odd. I wonder if UA-cam encourages this in some sort of "tips for content creators" or something? I don't know.
But yeah, it's refreshing when a content creator actually looks and sounds like a normal person.

I had to make a few substitutions, I didn't have basmati, so I used Long Grain, no fresh tomato, so I used 1/2 of a can of diced tomatoes (without juice). I am looking forward to making more of your meals - I did purchase the Cooking with Confidence and Yeung Man cooking for digital download last night, so I'm very excited to try more. Thank you!!

We have a similar recipe called khichri, which is usually eaten when a person has an upset stomach. So the local version doesn’t have a lot of chilli powder but a lot of cooling whole spices such as green cardamom, fennel seed, salt and some black pepper.
The spicier version is eaten as a regular dish which is accompanied with a yoghurt side and some pickle and pappadom.

The lentil and rice dish was great, I did it as the recipe which was delicious, but when I made it again I included a couple of additions, a tad of white miso and reduced the amount of veg stock bouillon, I’m in a miso phase and I buried a few frozen blocks of spinach, whilst the pot rested after cooking which added more colour and more nutrition, both ways are winners. I am really enjoying this new calming channel discovery 🙏 thank you.
