    I loved this, my fav Chinese restaurant went out of business and I have tried so many times to imitate their shrimp chowmein. I never realized the magic was in udon + dark soy + Sesame oil to get that authentic-my-neighborhood-restaurant-smell-n-style. Thanks for teaching me the udon style noodles, love from an Indian mom

    Hi Ling. It's been a while since I tried udon noodles. I prefer the soft tight seal package than the frozen ones. When I make these, I usually like to add a meat or seafood item with it. Either way how it's done, it taste delicious.

      @@ChineseHealthyCook Hey Ling. I didn't find the frozen udon's that good. The sealed ones tasted much better for all my stir frying needs. You and I would have a blast making Chinese foods under the same roof, lol. To answer your question, it was great. 17C which is excellent for this time of the year. But starting Saturday, the temperatures will really drop, so it will be time to warm up in my leathers. A few days ago, I made a chow fun stir fry. The family loved it. It was a lot of "fun" to make, lol.

    Wanted to share with you, had lunch the other day at this Sichuan noodle shop. Order Chongquing(?) noodle, omg it was so spicy 😫 🔥, I couldn't eat much, despite me telling them to make it mild. Drank 2 glasses of icy cold water.

    Is this intended to have a more raw garlic flavor? I noticed you cut the garlic fairly thick rather than chopped or minced, and then barely cooked it in oil before adding in the other ingredients. Also, what are your thoughts on adding some ginger and fish and/or oyster sauce?

    What's the brand of the sesame oil and vegetable oil that you are using. When you hold it up, you can't see the label.

      I used Evergreen sesame oil and Trader Joe’s avocado oil, but any brand is fine. Enjoy!

    This is very similar to something I make maybe once per week. Sometimes includes, carrot, or cabbage, or whatever I have laying around.
    More importantly, I never bother boiling the Udon noodles - I just throw them straight in the wok. Does that make a big difference?

      If it worked for you, you don’t have to boil. This package says to cook before stir frying.

      @@ChineseHealthyCook Ok thanks, I can't read the package because it's all just squiggles to me.
      Udon noodles are definitely my favourite type, I know everything else has its place but Udon are just so much easier - no need for soaking / separating / etc. Maybe I just need to learn to be less lazy to appreciate rice, glass etc. Thanks for your suggestions as always.

      i think it is best to cook it in boiling water for minute and using your chopsticks to separate the strands 2:28

    to improve the overall taste I would add oyster sauce and some 1 teaspoon of chicken powder stock. If you want a super healthy meal then the above recipe would suffice.

    I have never, ever seen anyone adding table salt when you're going to add soy sauce and two of them. If you want saltier just add more soy sauce.
