We freeze dry strawberries and peaches and bananas and apples. They taste and look like fresh when reconstituted. They are good for years and saves freezer space.
I need to get a freeze dryer!

How do you store it?
in a cool dry place, usually in a basket or mesh bag
You would be surprised what a greenhouse on top of a greenhouse can do in the winter. Full tomatoes, cucumbers, peppers on the inner one. and then cooler season crops on the outer one.

First time I cut my fruit trees down to size my husband about had a heart attack. That next spring we got 40 lbs of peaches. Don’t be afraid they love to be pruned

you can grow any plant anytime if you trick it into thinking it's the right time
It really depends on your climate, here in zone six it's still too cold inside for any heat-loving crops like tomatoes peppers eggplant cucumbers etc. But I can do 20+ other things that like the cold weather! In the summer you could use as a hot house, or swap the plastic for shade cloth.

I grew baby bok choy. Bok choy comes in all different sizes and can be quite large

for the cranberries ! you asked for recipes + this is the easiest staple one for me if you have a pressure cooker ~ i love to pressure cook cranberries (1:1 with water as a base but it's flex) + then strain to drink the juice + then with the remaining berries, i smash out excess liquid w a wooden spoon + gently mix in a small bit of raw honey + then use it as a quick jam !
you can also do stovetop ~ i just know pressure cooker makes this v body/energy accessible for me (also disabled) + keeps more of the nutrients
I need to get a pressure cooker it does seem a lot more accessible!

Last fall, I planted stone fruit that had been in pots for years and has gotten big and tall. Would topping / removing all leaf bearing branches while still dormant result in the trees growing new shoots or kill the tree?
At that stage of maturity it is risky to do such an aggressive chop
