I love pickled vegetables, especially beets, but have never tried this simple recipe! I will be making it very soon, it looks good. I also want to say thank you for all your videos. They have introduced me to many new foods, and since I started saving some kimchi from every batch, this week I got to try my very own 1 year old kimchi!

Thank you so much for this recipe, dear Maangchi! It's so yummy! I made this kind of shredded pickled cabbage two months ago, which I used on everything. Bibimbap, grilled cheese sandwiches, as a side (next to sushi or as a banchan next to any kind of stew), hot dog, fried rice, bbq... and now I made another batch of this pickled cabbage. It works to literally anything savoury. By the way, today I didn't only grate ginger and beetroot for this cabbage. I also grated an apple, which I think will help adding a lovely sweet'n'sour flavour to this already lovely cabbage.
This looks like a great side dish. I wonder how it would taste. I was looking for a good Spicy Soondae Soup to make with this and kimchi and kimchi cucumber. Great show!!

I'd like to try the sweetened version, but don't know how long it'll last in the fridge and if the fermentation is accelerated because of the extra sugar. I can't consume too much pickle, so knowing the shelf life in advance helps in deciding how much I should prepare. 😊
I am a big fan of kimchi. I want to ask, there are thousands of kinds of kimchi in South Korea, why are red radishes or cherry radishes never used to make kimchi? they are really tasty, aren't they?
We have something the same here in germany we call "Sauerkraut" and I love it and it is very healthy too! But with the coloring from red beet, I would try it this way! Thank you Maangchi!👍🏽😊

The sugar here acts as a flavor balancer to cut the acidity. It lasts just as long, from experience.
