I spent many hours of my childhood sitting with my Korean mom at the dining room table making the little dumplings to freeze. One of my favorite memories with her. She was so patient and never criticized my sloppy little dumplings. She went to heaven at age 56, I’m now 60 and still miss her so much.
You lost her too soon. When you prepare or eat Korean food, may you remember all the wonderful times you shared with her. What a lovely mother she must’ve been. May she rest in peace. May you live in serenity.
A tip for frozen Mandu or any other dumplings. First freeze for about 3-4 hours on the baking sheet, then you can put them into freezer bags and they won't stick together as much. It makes it easier to take out as few or many as you want when you are ready to cook them.
My friend Lily made hot pot when my boyfriend and I visited her home a few years ago. The next day, we had Mandu for our hangover breakfast. 😄 She had a bag kept in her freezer. I was so happy and so full! Thank you for this recipe, and for reminding me of good times!
Such a lovely presentation for making mandu. I was stationed in South Korea in 1975 and fell in love with the dumplings, noodles, bugogi, and other savory dishes. Couldn't do the fermented kimchi or red pepper oil, but there were so many soups and vegetables to try. There was a sidewalk shop where I used to have steamed dumplings with soy sauce and vinegar, just like you fixed, and sweet potato chunks with a sugar coating, I could live on those dumplings. The name of the shop was Yakimandu. I found that mandu means dumpling, but I always wondered what the entire word meant. I will never forget South Korea, it was a fascinating and eye opening time in my life. I enjoy your channel and delightful cooking. Anahashimika! 😊
so, "yaki" from "yakimandu" (야끼만두) actually just comes from the Japanese word for "fry/fried" the native Korean verb for frying is guptta/kupda (굽다) so fried mandu is also called gunmandu (군만두). in summary, yaki is just a word to express that something has been fried. it does not matter whether someone uses yaki or gun, because they mean the same. for example, the korean subtitles on this video use the native word (군만두) instead of the japanese term. i don't really know the history behind it and why it seems that nowadays yakimandu is a more popular way to describe fried dumplings than gunmandu, but hopefully this satisfies your curiosity.

I suddenly remembered how my mother used to make mandu. Her way may be represented by the need to improvise as most Korean products were available in the US at the time. Availability came after she died. She used ground beef for the filling with bean sprouts, green onions and carrot. Then we wrapped them in won ton skins. Shapes were rectangle or triangle, then fried. She made them for parties or potlucks.

I've picked up frozen mandu at the grocery store on occasion. I sometimes brush it with a bit of oil or spritz it with cooking spray and cook it in the air frier. It's not quite the same as frying it, but it's an easy way to get it crunchy.
In India dumplings are also called momos and I love these. Especially with mushrooms or spinach and tofu. Loved your recipe and the idea of freezing ahead, making it easy to make at any time. Thanks!
To make the batch - yes.....but then you have a heap of time saving 'instant' meals on hand! Saturday afternoon, put some good music on, co-opt a loved one to help fill and pleat, very pleasant way to prepare a treasure trove of very healthy, inexpensive, convenience food!
Yeah after seeing how much time it takes, I think I will have to stick to store bought frozen dumplings lol Although I'm sure these are 100x better than the store bought ones in quality and taste

I love dumplings, my favourite filling is with kimchi, fried onions & mushrooms, kidney beans and sometimes I add tofu, if I have some or gochujang for more spice, since the heat from kimchi gets diluted by other ingredients.
I discovered that here in the CA Bay Area, we have a lot of Asian stores. I found H-Mart recently. It's a Korean grocery. A lot bigger than I expected! So many foods that I don't know how to use yet. Anyway, I bought a lot of ingredients there today. And they had at least 10 varieties of mandu wrappers! Wow. My wife is cooking dinner right now, so I'll make mandu tomorrow morning. I'll use shiitake instead of pork because my son's girlfriend is vegan. Thank you, Maangchi, for encouraging me to cook Korean style! 🥟🥟🥟 🙂

Thank you for also demonstrating the use of the sink for washing dishes. Lol,. I'm trying to teach some cooking skills to a grand son. Your recipe is lovely. Can't wait to incorporate your teaching into my 'mandu' making skills. I have 6 grand children and can't seem to make enough to get any frozen. The current recipe I use takes two days, because I make the skins and an oil for soup later. I haven't been squeezing out moisture so I have been having too much water when I make the mandu. This makes them soggy and stick together. Great tip!

I have been making mandu for years, but not nearly with this many ingredients. I introduced korean food to my inlaws and whenever I make mandu I have to make it an entire weekend of filling and folding, they eat so many! I am so used to deep frying them I am going to make some for myself steamed AND in that soup. Looks so good!
This all looks amazing! I'll have to try making these as soon as I can find the ingredients in my new city. This is how I've always made pot stickers, assembling a big batch, freezing them on baking sheets and bagging them up, so I can just grab a handful out of the freezer whenever I want. Thanks for this recipe!
@@sharkchisha Most frozen foods are tastiest within the first few months (think 3-6), but as long as they always stay under freezing temperature (0c, not sure about in f) they don't really go off. If yo're worried about it, the best thing to do is put the date on the bags when you freeze them, and then go with your gut. If there's an off smell or texture, or freezerburn (which won't make you sick, it just makes food kinda yucky in texture and taste), or evidence they may have come above freezing temperature (like water pooled in the bottom of the bag, or pooled and froze), then you may want to think about throwing them away.

I absolutely love eating gyoza, this seems very similar. I haven't made gyoza in a few months but likely will make some soon. I haven't seen a person using tofu for a filling ingredient before, I haven't tried tofu yet but I may try some in the future thanks to your video. Thankyou for the inspiration and for sharing your recipe.
The tofu has little to no flavor of its own. It takes on the flavors of what you cook it with. One of my favorites is pork flavored tofu stirfry. The tofu is cut into small squares, marinated in pork flavor then stir fried with veggies. The taste is savory and the texture is firm. I wish you good luck trying tofu.

Watching this makes me hungry, and makes me want to get up and get into the kitchen to cook. I'm recovering from surgery, but now as soon as I have some energy (which shouldn't be long, because I can cook up some healthy, tummy-safe porridge any time I like thanks to Maangchi) I'm going to go through my garden and our local market, and make as many dumplings as my freezer can fit.

The current recipe I use takes two days, because I make the skins and an oil for soup later. I haven't been squeezing out moisture so I have been having too much water when I make the mandu. This makes them soggy and stick together. Great tip!
Maangchi, it all looks so delicious just like all your dishes. I will soon buy your cookbooks and try them for myself and I’m so excited about it. I have been making mandu for years, but not nearly with this many ingredients. I introduced korean food to my inlaws and whenever I make mandu I have to make it an entire weekend of filling and folding, they eat so many! I am so used to deep frying them I am going to make some for myself steamed AND in that soup. Looks so good!

This all looks amazing! I'll have to try making these as soon as I can find the ingredients in my new city. This is how I've always made pot stickers, assembling a big batch, freezing them on baking sheets and bagging them up, so I can just grab a handful out of the freezer whenever I want. How long can u let them lie in the freezer for before they start going bad?
@@sharkchisha Most frozen foods are tastiest within the first few months (think 3-6), but as long as they always stay under freezing temperature (0c, not sure about in f) they don't really go off. If yo're worried about it, the best thing to do is put the date on the bags when you freeze them, and then go with your gut. If there's an off smell or texture, or freezerburn (which won't make you sick, it just makes food kinda yucky in texture and taste), or evidence they may have come above freezing temperature (like water pooled in the bottom of the bag, or pooled and froze), then you may want to think about throwing them away.
I just made your recipe for my family! I changed up the fillings with pork, shrimp, napa cabage, enoki mushrooms, and kimchi. The kids gobbled it up so quickly I almost didn't get any! Thanks so much for this delicious recipe as always!

I tried fried mandu about a month ago and I loved them. I’m not a foodie at all but I am always excited getting Korean food
I absolutely love eating gyoza, this seems very similar. I haven't made gyoza in a few months but likely will make some soon. I haven't seen a person using tofu for a filling ingredient before, I haven't tried tofu yet but I may try some in the future thanks to your video. Thankyou for the inspiration and for sharing your recipe.
The tofu has little to no flavor of its own. It takes on the flavors of what you cook it with. One of my favorites is pork flavored tofu stirfry. The tofu is cut into small squares, marinated in pork flavor then stir fried with veggies. The taste is savory and the texture is firm. I wish you good luck trying tofu.

저는 명절에 만든 속이 꽉 찬 김치만두를 좋아합니다. 굽거나 끓이는것보다 쪄먹는걸 좋아합니다. 어렸을 때는 속이 꽉 찬 만두속보다 부들거리는 만두피를 좋아했는데 요즘에는 속이 꽉 찬 만두가 그립더라구요. 온 가족이 둘러앉아 만두를 빚으면서 하하호호 하는게 정말 그립네요. 빨리 설날이 왔으면 좋겠습니다 :)

Watching this makes me hungry, and makes me want to get up and get into the kitchen to cook. I'm recovering from surgery, but now as soon as I have some energy (which shouldn't be long, because I can cook up some healthy, tummy-safe porridge any time I like thanks to Maangchi) I'm going to go through my garden and our local market, and make as many dumplings as my freezer can fit.
