Tip for Indians : guys we can use tikhalal chilli powder instead of hot pepper flakes we can use normal cabbage instead of nappa cabbage these are approved by some koreans who live in india

@@sukritidang u can make em with just vegetables she mentioned except cabbage and there are so many videos in youtube too but cabbage is the key point if kimchi na but try using some kind of leafy vegetables and try ur best :)
My daughter has developed an allergy to anchovies and because of that cannot have fish sauce but she loved kimchi. So being able to make this for her has been wonderful so she can still have kimchi.

The only problem is- I've been vegetarian most of my life so that can be a struggle with Asian cuisines as they tend to be heavy on the meat. I just made this recipe tonight and it is SO good. Most asian culture (except certain colder mountainous region and Philippines) actually involves vegetarianism/veganism to a certain degree. Common seasoning usually includes soy sauce, soy bean paste/spicy bean paste in place of fish and oyster sauce. Things like garlic, chives, onions, spring onion and similar family are usually not eaten in Asia's definition of vegetarianism (except Indian vegetarian), however. You can try to google for Chinese, Japanese, Indian and Thai vegetarian ideas. It is rather big in these few cultures (religious reasons). Or you can find vegetarian substitute e.g. mushroom soy sauce for fish sauce/anchovies when looking through Maangchi's videos!
Hello! I want to encourage everyone to try this recipe even if they don't have access to some ingredients. In Romania this cabbage and radishes are very hard to find or very very expensive. I used regular cabbage, apple and celery stalks. One time i used leak instead of green onions and it still was so so delicious. A year ago I didn't know what kimchi is and now is always in my fridge. Thank you Maangchi for this wonderful recipe! 😘

@@chandrakalabuddha6267 1. I use Chinese cabbage. 2. Yes normal red chili powder but you must know, Masaana a city in Rajasthan grow chilli organically so i have used that. 3. No fish sauce 4. Yes i made vegetable stock and use in the kimchi.

@@surayyah7503 hello, I'm very late at this but you should store your kimchi in an airtight container (glass is ideal but BPA free plastic container should be good). Make sure to press down so they're not exposed to air, and store them in the fridge. You can enjoy it until it runs out. Hope this helps!
Hii maangchi I am 17 years old high school student and made this yesterday for dinner and especially for my mom...it was our first try on korena dish and U won't believe it turned out amazing The only difference was that I used regular indian cabbage instead of Napa cabbage

I’ve tried just about every store made Kimchi-and hated them all. So, I made your recipe 3 days ago. It has sat out on the counter for past 3 days (house smells like cabbage and garlic-yummm) and this morning I put it in the refrigerator. It tasted good this morning, but needs a little more time. I'm really envious of Maangchi's knife skills. It takes me ages to hack my way through a single onion! Maangchi, I'd love you to do a video demonstrating various techniques and also recommending the best equipment to buy.
It just starts with having a great knife, such as the Wusthof Classic Chef's Knife. Seriously, if you are dead broke and have a crappy cutting board, frying pan, pot, oven, etc...a quality chef's knife would still be a requirement.
(This for my personal use but you can use it too! :) Recipe: 3 pound cabage Six tabblespoon salt (kimchi sauce recipe) 2 tbsp glutinous rice flour 1 cup vegetable stock 1 tbsp sugar (Other vegetables) Radish 6 green onion Buchu(optional) 1/4 cup carrot (kimchi sauce again) 9 clove garlic 1 medium onion 1 tsp peeled ginger 1/3 vegetable stoch 1 tsp sugar 3 tbsp salt 1 cup gochugaru
Because of maangchi, I started making my own kimchi years ago! I’m a pescatarian now, but I was a vegetarian at the time. One thing that I’d recommend adding, if you’re looking for a flavor that still includes that sort of briny, sea-related flavor is dried seaweed! I used Japanese Hijiki. Basically like strips of konbu/dashima that are still dried and sort of tiny and shriveled up. They absorb some of the kimchi juice and give their savory flavor back in return! Super delicious. Thank you for inspiring so many of us to explore and enjoy korean food, maangchi! I never would have found out how much I love it without you.

This recipe is pure gold. Using regular rice flour works perfectly. I ferment at room temperature for 2 to 3 days using a Kefirko vegetable fermenter and another with a glass weight to press the kimchi down and a one way air valve. Making the vegetable stock yourself as per Maanchi recipe more or less is a go to move for this. Can’t keep enough it disappears from the fridge! THANK YOU!

Daniel, not everyone has time to make stock from scratch. I use th brand "Better Than Buillion Sodium Reduced Vegetable Base." It's really delicious. It's sold at all your chain grocery stores, and even at Costco. I use it to boost umami in vegetarian recipes, and it also makes a satisfying hot beverage. It lasts forever in the fridge.

I was feeling super grumpy and sad yestreday so I decided I was gonna make kimchi today. It was a lot of labor (especially since I had to pulverize the onions garlic and ginger by hand 😭😭) but the result was so good!!! I have missed kimchi so much since store bought in my area just isn't the same as a homemade or restaurant made kimchi. I have a bunch in my fridge and a fresh bowl in front of me and I'm so happy now :)

My Dear, I just made your kimchi and it's amazing!!! I did use monkfruit sweetener instead of sugar. I also used a mixture of almond flour and arrowroot flour instead of rice flour. I'm trying to cut out sugar n carbs. Turned out delicious. Thank you!! You are the best❤❤❤ Take care!!

Hope it doesn't go bad. I already made kimchi pancakes with it.. everybody loved those.. will try again after it turns sour 😁
If you use regular green cabbage, you will need more vegetable stock but it sounds like your kimchi is well fermented. Good luck with your Korean cooking!

@@melissavivan5334 Not sure what Maangchi suggests but I added 1/3 cup of vegetable stock again. I felt its good consistency. We already ate half of it.. The more it ferments the more juice we get..

You can try to google for Chinese, Japanese, Indian and Thai vegetarian ideas. It is rather big in these few cultures (religious reasons). Or you can find vegetarian substitute e.g. mushroom soy sauce for fish sauce/anchovies when looking through Maangchi's videos!
There are a lot of vegan and vegetarian Asian temple dishes. Like what the monks will eat in Asia...!

I want to encourage everyone to try this recipe even if they don't have access to some ingredients. In Romania this cabbage and radishes are very hard to find or very very expensive.
I used regular cabbage, apple and celery stalks. One time i used leak instead of green onions and it still was so so delicious.
A year ago I didn't know what kimchi is and now is always in my fridge.

2. Yes normal red chili powder but you must know, Masaana a city in Rajasthan grow chilli organically so i have used that.

@@surayyah7503 hello, I'm very late at this but you should store your kimchi in an airtight container (glass is ideal but BPA free plastic container should be good). Make sure to press down so they're not exposed to air, and store them in the fridge. You can enjoy it until it runs out. Hope this helps!

So, I made your recipe 3 days ago. It has sat out on the counter for past 3 days (house smells like cabbage and garlic-yummm) and this morning I put it in the refrigerator. I'm really envious of Maangchi's knife skills. It takes me ages to hack my way through a single onion! Maangchi, I'd love you to do a video demonstrating various techniques and also recommending the best equipment to buy.
It just starts with having a great knife, such as the Wusthof Classic Chef's Knife. Seriously, if you are dead broke and have a crappy cutting board, frying pan, pot, oven, etc...a quality chef's knife would still be a requirement.

Because of maangchi, I started making my own kimchi years ago! I’m a pescatarian now, but I was a vegetarian at the time. One thing that I’d recommend adding, if you’re looking for a flavor that still includes that sort of briny, sea-related flavor is dried seaweed! I used Japanese Hijiki. Basically like strips of konbu/dashima that are still dried and sort of tiny and shriveled up. They absorb some of the kimchi juice and give their savory flavor back in return! Super delicious.

This recipe is pure gold. Using regular rice flour works perfectly. I ferment at room temperature for 2 to 3 days using a Kefirko vegetable fermenter and another with a glass weight to press the kimchi down and a one way air valve. Making the vegetable stock yourself as per Maanchi recipe more or less is a go to move for this. Can’t keep enough it disappears from the fridge! THANK YOU!

Daniel, not everyone has time to make stock from scratch. I use th brand "Better Than Buillion Sodium Reduced Vegetable Base." It's really delicious. It's sold at all your chain grocery stores, and even at Costco. I use it to boost umami in vegetarian recipes, and it also makes a satisfying hot beverage. It lasts forever in the fridge.

I was feeling super grumpy and sad yestreday so I decided I was gonna make kimchi today. It was a lot of labor (especially since I had to pulverize the onions garlic and ginger by hand 😭😭) but the result was so good!!! I have missed kimchi so much since store bought in my area just isn't the same as a homemade or restaurant made kimchi. I have a bunch in my fridge and a fresh bowl in front of me and I'm so happy now :)

I think you can use crab or shrimp boiled water if you don't have salted shrimp or fish sause and I recommend fish sauce

Thank you Maangchi for the vegetarian recipe😊 Made it few days ago and its easy to make.. my kid loves red foods, he wanted to eat it while i was making it 😃 I substituted with regular green cabbage and put it in the fridge right away.. it doesn't have much juice to submerge the top though. Hope it doesn't go bad. I already made kimchi pancakes with it.. everybody loved those.. will try again after it turns sour 😁
If you use regular green cabbage, you will need more vegetable stock but it sounds like your kimchi is well fermented. Good luck with your Korean cooking!
