Mum's Lemongrass Chili Tofu: The BEST Fried Tofu Ever! 👩❤️ (Đậu Hũ Chiên Sả Ớt)

🧵 EQUIPMENT 🧵
• Food processor (if you're blitzing the lemongrass yourself)
🥣 INGREDIENTS 🥣
• 600 g / 1.3 lb fried tofu (we buy it fresh and pre-fried from the local Asian grocery store but any firm tofu will do)
• 4 stalks lemongrass (blitzed until fine)
• 1 tsp light soy sauce (or to taste)
• 1/2 tsp salt (or to taste)
• 1 tsp honey (or to taste)
• 6 tbsp cooking oil
• 2 chili (optional)
👩‍🍳 INSTRUCTIONS 👨‍🍳
1. Cut up the fried tofu into smaller chunks (or leave as is if preferred).
2. Marinate the tofu with the lemongrass, honey, salt, soy sauce and chili for a minimum of 5 minutes.
3. Oil a wok on medium to high heat, then sear the tofu for 3 minutes on both sides or until golden brown. Mum's Tip: Don't throw away the marinade in the bowl. Instead, scrape the lemongrass over the tofu as you fry.
4. Serve the Lemongrass Chili Tofu as is over rice!

    I'm just curious about why people use vanilla extract along with pandan extract or Juice? Do you think that would over power the pandan taste?

      Hi, Derrick! Pandan extract or juice alone is quite fragrant but subtle in flavour. I would imagine adding some vanilla extract would add an additional kick to the pandan taste. I would also say that it could overpower the pandan taste if a lot is added. At the end of the day, it would be up to the person cooking to decide how much vanilla flavour and how much pandan flavour they want in their dish. I hope that helps!

      Hi, Rose! My Grandma or Mum must’ve gotten it decades ago at an Asian bargain shop haha. I’ve tried searching it up for you and have found some when I looked up ‘insulated carafe’, but they’re stainless steel on the outside. You might have better luck sourcing it from an Asian bargain shop if you have any nearby. Hope that helps!

      Hi! Sorry to hear that it didn’t turn out as you’d like. The pickled mustard greens can vary in sourness from brand to brand, so you can give it a taste before you add it in and adjust to preference. Here are some other ways to lower the sour flavour: - Use less pickled mustard greens. - When rinsing the mustard greens, squeeze out as much liquid as you can. Repeat the rinsing if need be. - Add more water, then season to taste. - Add sugar to taste. I hope that helps!

      Thanks for the reply @@WokandKin , we transformed the dish into curry to "save it". But if I ever try again, I'll certainly use your recommendations :) And you get bonus points for introducing me to taro, fried like that, they were better than potatoes haha.

    Just chances upon yr channel and thank you for keeping our mama’s cooking alive. Ever since we had these Covid lockdowns before I’d been fooling around in the kitchen for fun and UA-cam has helped me reconnect with so many comfort foods we would not be able to get in Chinese restaurants for whatever reasons and ever since then I’m blessed to bump into people like you who’s helped me relive my childhood so I could let my daughter get a taste of my family’s cooking and I know it will be with her even when I’m gone one day. Her favourite is stifry broccoli with beef slices in oyster sauce. She loves it haha. Thank you once again and will be looking forward to your videos. ❤️

    What if you don't have pandan leaves? For the coconut, not coconut milk but coconut cream from a carton?

      Hi! You can skip the pandan leaves altogether. Adding pandan leaves gives it a nice aroma, but isn’t necessary. You’ll still have a delicious dessert! I would suggest using coconut cream for a richer texture and flavor, but if you don’t have that then coconut milk can work. Just keep in mind that it’ll be lighter and milder in taste. If you want to thicken the coconut milk up, you can try using a corn starch slurry to get it thicker. I hope this helps!

      Hi! Yes, they do all have sugar, but once you add the chicken stock/water and lemon or lime juice in, it helps to balance it out. You can always try using less of each ingredient and more of the stock and adjust it if it’s not to taste. Or make it as the recipe is and if it’s too sweet, add stock to dilute the sweetness. I hope that helps!
