BBQ Sandwiches traditionally are served on hamburger buns. Today I used a pita which offered a few enhancements to the usual BBQ Pork sandwich.       @@michaelcraig5295 metal spatulas are safe to use on cast iron. J Kenji Lopez Alt even uses a razor scraper for his smash burgers. Well-seasoned cast iron is the most durable and versatile pan in the business! Sorry grandma, but you can use metal! Just don't cut into the coating

    I'm totally on board with using a pita for this BBQ sandwich! I was also thinking of making a type of burrito or wrap with this filling too with a tortilla, that would also help solve the problem of the filling falling out!       Thanks! Broiling the cheese would have been nice too but my smoke alarm tends to go off whenever my broiler is on, even for only 3 minutes. No smoke or anything, just the intense heat makes the alarm go.

    So the shape of my meat technically isn't a ball. But I have a few reasons for that. By making the meat more horizontal, I have even distribution of the meat through each bite.       Haha I had to watch a few pronunciation vids from Greek people before uploading, just to make sure I was saying it right lol. I probably mispronounce plenty of other things since I'm American lol. But thanks a lot! I made the crust of the lamb a priority in this, and it tasted great.

    This is a pretty solid way to make gyros at home. The main takeaway I wanted to show with this video was to get a deep-brown crust on at least one side of the ground lamb. Cast iron helps with this. The crust is a key component of restaurant gyros, and I achieve my crust through searing and scraping the meat with a metal spatula. Adam Ragusea's recipe (also very good) gets the crust through deglazing the pan with white wine and ketchup. I personally prefer my method, where you don't necessarily need to deglaze. You just need to release the crust with the right kitchen tool (metal spatula). Subscribe if you would like to see more!
