POV making of a Smash Burger

  • Made a smash burger inspired by youtubers J. Kenji Lopez Alt and Ethan Chlebowski. American cheese, burger sauce, and onions on a wheat bun. Sure a potato bun or brioche bun would have been great too, but sometimes I like to get some whole wheat in there.
    For the burger sauce: combine mayo, ketchup, pickles, and one canned chipotle in a bowl. Add a few cracks of black pepper and mix. Set aside until the burger patties are cooked.
    Set a cast iron pan on high or medium high. I used 80/20 ground beef. Make two meatballs of ground beef, each around the equal size. Salt and pepper the meatballs. I like to do this in a container so that I can roll the balls around the excess salt and pepper.
    Once the pan is smoking hot, drop the first meatball into the pan. Immediately smash the ball thin, and don't touch it for at least 50 seconds or until the bottom is browned. Then flip the burger, making sure nothing sticks to the pan. Put a slice of cheese on top of the patty. Remove after another 40 seconds or so and place it on the bottom bun. Repeat these steps for the next patty.
    My order of toppings, from bottom to top, was: bottom bun, red onions, patty #1, cheese, patty #2, burger sauce, top bun.
