Pork tenderloin sandwich made by a Hoosier

  • The pork tenderloin sandwich is the official sandwich of Indiana. It is a very thin breaded pork loin chop that is fried and put on a sandwich bun with toppings. So basically schnitzel on a bun. I've had many of these sandwiches while living in Indiana so today I thought I would make one on my own.
    Butterfly a boneless pork loin chop. Cover the pork in plastic wrap and pound it thin with a mallet or a pan. Go for a thickness of around 1/4 inch. Season the pork after it is thin. Next you will batter the pork by dipping it into flour, then egg, then breadcrumbs (I used panko since it is the crispiest).
    Heat up some oil/lard on medium heat. Place the battered pork into the oil. It should sizzle once in the pan. Flip after a minute or two. When the crust is browned on both sides it should be done. As long as the pork is very thin, it shouldn't take very long to cook.
    Remove the pork from the pan after it is done and let it cool on a rack. Then place your large pork tenderloin on your bun and assemble any other toppings. Enjoy.

    Now THAT is a sandwich. The bread had no chance to cover that monster lol. Fun recipe. I bet homemade condiments would make that out of this world. Nice work. Keep at it!

    This looks so awesome! The pickled red onions were definitely a good move for the topping and the crunch heard from your first bite is killer.

    Love how massive the breaded porkchop ended up being..now THAT'S a sandwich! I also love those first few bites before hitting the bread too when you get to taste just that delicious crispy pork there, yum! Reminds me of back when I was in grad school and one of my German friends made us all Schnitzel, he used butter of course.
    P.s. Very curious how you film in POV, probably some sort of camera attachment? While being able to cook with both hands, it must take some skill to maneuver all of that!

      Thanks Dan! As a kid I always enjoyed eating all the pork on the outside first until it was finally the size of the bread. I bet that Schnitzel was amazing!
      To film this way, I use a head-mount that I found on Amazon. It was actually pretty difficult to find a head mount for my phone. I film on my phone currently. Also getting the correct camera angle took some practice, since I can''t actually see what I'm filming.

      @@jacobhaseyes-povcooking1219 I'd eat the same way, although I would save a few bites on the other side of the sandwich for a a couple just only meat bites midway through, haha!
      Very cool, it must be tricky with the camera angle, I'm thinking eventually you could tether your phone to a laptop or some other device with a screen so you can see what you're recording as you go, but it seems to work pretty well for you right now as is! Awesome work, keep it up! 😊
