Vegetable sandwich that is Tastier and Prettier

- Internetshaquille recently had a Vegetable Sandwich video and it inspired me to make my own. This one is packed with veggies and very tasty.
Slice and broil one red pepper until the skin is blackened. Remove the dark skin once pepper rests. Slice into strips and set aside. Slice and saute some broccoli on medium until tender with salt and pepper. Slice and sear some strips of mushrooms in a medium-high pan with oil, salt, and pepper. Remove once both sides are nicely browned.
Bake a baguette/hoagie/hero roll until warm. Assemble the sandwich with hummus, roasted red peppers, broccoli, mushrooms, and semi-homemade ranch. I also added some pickled carrots and onions.
This was a delicious vegetable sandwich that was tastier and prettier than most. Thanks to Internetshaq for the ideas! I will be making more veggie sandwiches in the future.

You had me at roasted red peppers, and then you added in portobello mushrooms! YUM!!! Glad to see that ranch make another appearance here too! This is soooo healthy and guilt free!!!!
Really enjoyed this one. I love hummus in sandwiches. Sweet roasted red peppers with the meaty mushrooms on good bread. What else can I say. Delicious 😋 great job 👌
Thank you! Next time i would probably just roast all the veggies in the oven at the same time. That would save me some time on dishes

oh yeahhhhh. Been trying to eat more veggies so love to see vegetable content. I do something similar with my bell peppers but I just put the whole thing without cutting it directly on a flame and then i'll get that steam going to loosen up the skin. Haven't tried doing it with electric coils though.
Thanks yeah having the electric coils isn't great haha. I could have broiled the whole thing but the way i did it, allowed me to not worry about flipping it multiple times!
