idiot-proof Pan Pizza: perfect for weeknight

  • Made a garlic-pepperoni pan pizza in cast iron. The bottom was perfect. This is ideal for the weeknight since it uses store bought dough. You will never know it's not homemade dough, since the top gets crisp under the broiler and the bottom gets brown in the pan. Subscribe for more.
    This is becoming my favorite way to make pizza at home.
    Cut a roll of pizza dough in half. Season your cast iron pan with olive oil, oregano, salt and pepper. Place the dough in the pan, shaping it to your pan. Let it rest covered for 30 minutes, with no heat on yet.
    Put the pan on your largest burner. Turn the burner on medium and your oven's broiler on high. Spoon the sauce onto the dough. After the heat has been on for about 4 minutes, sprinkle the pizza with parm and then the mozz. Put on the toppings and get ready to transfer the pizza to the oven. After about another minute on medium heat, put on your oven mitt and transfer the pan to the broiler, and broil for about 2 minutes. Don't leave it under there too long. I don't leave the room while this is happening.
    Remove the pizza once the top looks done (up to you) and let it cool in the pan until firm. Use a spatula to easily remove the pizza onto a rack. Let it sit a couple minutes. Then slice and enjoy.
