In the video I stated that I didn't live the Shipwreck casserole. The next day I ate it and loved it! Absolutely would make it again. Funny how some foods are sooo much better the next day.

Scalloped Potatoes with Kielbasa
5 medium potatoes, sliced thin
1 rope of Kielbasa cut into coins/rounds
1/2 onion finely chopped
salt and pepper
3-4 T. flour
Vegetable oil
1-1/2 to 2 C. milk, maybe more or less
1-1/2 to 2 C. grated cheddar or colby jack cheese
Wash potatoes and slice thin. Chop onion and slice kielbasa into coins. Put small amount of veg oil into a Dutch oven or cast iron skillet. Cook onions until soft, add kielbasa. Add 3-4 T. flour and stir into oil. Let cook for 1-2 minutes. Add salt and pepper to taste. Add 1-1/2 to 2 C. milk and stire together well so as to not make white sauce lumpy. White sauce should be a thin to medium consistency. Add potatoes and submerge. Bake at 350 degrees F for 15 minutes. Top with cheese and bake additional 20-25 minutes until potatoes are done when knife or fork inserted easily comes out. 4-6 servings. Use one potato per person unless small potatoes.
One Pot Pizza Pasta Casserole
1/2 lb. sausage
10-15 slices of pepperoni
2 C. pasta
2-1/4 C. beef broth or 2-1/4 C. water and 1 tsp. beef soup base or bouillion cube
1 (14 oz.) of pizza sauce
1/2 onion, chopped
3-4 sliced mushrooms
1/4 tsp. garlic powder or to personal taste
Brown sausage, add onion and cook together. Add mushrooms if using fresh. Add jar pizza sauce, 2-1/4 C. beef broth. Add pasta and simmer covered for 15 minutes or until pasta is tender. Add garlic powder, salt and pepper and pepperonis cut into quarters. Serves 4-6
One pan Pork Fried Rice
3 C. water 1-1/2 C. white rice
1 C. pork or ham, chopped
1/2 of a chopped onion or scallions or both
Veg oil
Frozen chopped broccoli or florets
1/8-1/4 tsp. Garlic powder
pinch or two of Ground ginger
2-3 T. soy sauce
1 T. of brown sugar
Put 3 C. of water to fry pan and bring to a boil. Add 1-1/2 C. rice and lower heat to low. Cover and cook for 20 minutes on low. Stir cooked rice and add in about 1-2 T. of veg oil, add onion, and stir. Cook on med heat. Add a pinch or two of ground ginger, 1/4 tsp. garlic powder or more to taste, salt and pepper to taste. Add cooked pork or ham to the rice. Add broccoli and let cook. If raw broccoli, add after the rice is cooked. Add 1-2 T. soy sauce, 1 T. brown sugar and stir well. Aproximately 6 servings.
One pot Chicken Alfredo
1-2 lbs. chicken cut into chunks
2-1/2 C. water or chicken broth
1 tsp. chicken soup base, omit if using broth
Salt and pepper to taste
1/4 tsp. garlic powder or to taste
1 C. washed baby spinach
1 pkg. (8 oz. ) cream cheese
Olive oil
2 C. Pasta
Add olive oil to fry pan and brown chicken on medium heat. Salt and pepper and add garlic powder. Add 2-1/2 C. Water, add soup base. Add 2 C. Pasta to fry pan and stir. Let pasta simmer on low heat until cooked through. When almost done add a block of cream cheese, stir in. Add water if needed and adjust seasonings. Add spinach. 4 servings
Shipwreck Casserole

1 lb. Ground beef
Salt and pepper
Chopped onion
1 can of diced tomatoes with juice
1 C. peas
1 C. Corn-frozen or canned
1 C. milk
1 box macaroni and cheese
1 C. shredded cheese
Brown the ground beef, add chopped onion. Drain some of the fat off. Add cheese sauce, pasta, tomatoes, and milk. Turn down low so milk does not scorch. Add vegetables and cover and cook for 9 minutes. Stir after a few minutes. Add some water if needed. You can add chili powder or Italian seasoning. Add cheese on top. Can add a can of beans or leftovers. Served 4-6

I use light and dark fabrics, and kept the lights together and the darks together. I did two 6-1/2 inch squares, right side facing and drew a line down the middle, then 1/4 inch from middle on each side drew a line. I stitched on each of the lines but the center. I cut down the center line. squared up the squares to be 5-1/2 inch squares.

    Do you put half of the whole crushed berries in and then all of the juice from the sieved one? Or just sieve all the berries and only use the juice?

      Yes, about half crushed berries and half juice. You wouldn't have to sieve them but I don't like it with all of the seeds.

    Trying to sew a bonnet here in PA the night before my daughter needed it for a Church activity. Never used a pattern before and couldn't make sense of most of the vague instructions on the pattern. I needed divine intervention to get it done. You were part of that grace.       I've been working on a few patterns for toddlers and adult bonnets that people could make up themselves at home and ran into a snag with measurements. And other things have gotten in the way so I haven't gotten to those videos before "trek" season. I found the pattern instructions on the pattern I purchased a little difficult to understand. I thought it was just me. Thanks for your comment.

    To keep your fabric from getting stuck, just slide a small scrap piece of fabric under your needle and start stitching. When you get to the edge, stitch a couple stitches past and slide your block under the foot. Keeps your block from hetting stuck

      It's been awhile but I think it was because I wanted the stitching that would show on the back to meet and not overlap. Also on the edges so I could sew the squares together with just the top pieces and not all 3 layers(back, batting, top) but you do what works for you.

    I like watching you put this quilt together. Your voice is mild and easy to listen to. I always stress about what fabric to use and what I need to buy to make it. I have to learn to just use what I already have. I haven't made a quilt since I was a teenager in the early 70's. I didn't know how to do it then and I just put it together and knotted the corners. My youngest son loves that quilt even though it needs mended. I've put safety pins the hold it together where the stitching has come undone. Thank you so much for your honesty and homey quilt that you've made. You're a treasure. 🙂

      I don't remember if I expressed in the video how much time I spent staring at the fabric pieces trying to figure out the layout. Lol. I decided awhile ago if I waited til I was perfect at it that I would deprive myself many years of joy. Plus, I look at quilting at a skill that you master after many years of practice, not as a talent that you automatically have.

      Probably. Haven't watched that video in over 3 years. Sorry, my words get mixed up sometimes. I edited the best I could having hours of video to sift through and I can't remember if I had figured out how to do voice overs at that point or not.

      I think that people get too hung up on being able to sew something perfectly and dismiss it as not having the talent to do it. I think sewing is a skill as is almost everything and you learn from doing it. Too bad so many people will not feel the satisfaction of a completed sewing item because they were afraid of making a mistake. Almost everything is fixable and seam rippers were made for a reason. Lol. Thank you!

    I made a few blocks and I get frustrated with hand sewing 🪡 so I trimmed the batting, fabric & pressed. Then I used my zigzag stitch & sewed the blocks together on my sewing machine . It worked out really well & was a huge time saver.

    I always use a stripe fabric cut on a bias on my binding. I will also use any extra fabric placed in random spots in my binding. I find it interesting to see how you ( guilt as you go method ). I am a machine quilter so that is easier for me but I really enjoyed learning your technique.
