Peanut Butter Cornflake Cookies (Gluten free)

Great quick make cookies for potlucks, neighbor gifts and family.
Peanut Butter Cornflake Cookies
1 C. granulated sugar
1 C. light corn syrup
1 C. creamy peanut butter
1 tsp. vanilla extract
6 C. corn flakes cereal
Combine sugar, corn syrup and peanut butter in a saucepan. Cook over medium high heat until center starts to boil, making sure to stir constantly. When it comes to a boil, remove from the heat and stir in vanilla and corn flakes. Mix until eveny coated.
Use a cookie scoop to drop cookies onto parchment or wax paper as quickly as possible.
Let cool 20-30 minutes.
