Also, it is very important that you use unsweetened coconut flakes, because the sweetened ones DO NOT turn into a butter. They're still delicious, but not so useful if you're going for coconut butter lol

I always use my emulsion blender to make peanutbutter, it works really well even though it was kinda cheap. I recommend using salted peanuts, it makes everything so much easier!

When making almond butter, I like to either buy the almonds without the skins or I soak and peel them myself. Having the skins removed make it look nicer, and it's easier to digest.
I tried it with molasses instead of syrup to give a holiday zing to it. Did have to stir it a bit longer, but the molasses compliments the peanut butter beautifully.
Thank you!! Coconut butter is AWESOME, it can often be subbed for coconut oil (depending on the recipe). I use it all the time in baked goods as a cleaner fat! Makes a great substitute for regular butter :)

Just wanted to share that if you just made your coconut butter it will be warm enough to not need any more heat so you can skip the double boiler method. Just make sure your peanut butter and maple syrup is at room temperature and you're good to go!

If you use unsalted peanuts, I'd definitely add a pinch of salt! I used roasted and salted peanuts so there was already a good flavor with that salt :)

It's a nice idea! I haven't tried it personally and it may change the texture of the fudge a bit or make it tricker to set, but it would be a cool experiment!

peanut butter is pretty inexpensive as is, and peanuts aren't too expensive either so I wouldn't say it makes much difference. BUT other nut butters I definitely think it can be less expensive to make it IF you buy your nuts in bulk and get them reasonably. Sometimes pre-packaged nuts like almonds and cashews can be so expensive that it doesn't end up saving you much to make your own. Still, I always think it tastes better with homemade :)
nope! coconut butter may separate a bit so the oil ends up on top if it is left to sit, but coconut butter includes the meat or flesh of the coconut, and coconut oil does not. In coconut oil, the oil has been completely separated from the meat. Hope this helps!

I make peanut butter in my Vitamix all the time! go slowly and listen to your blender, depending on the power you have it may take some stirring :)

Blender is ok but if you go too slow or way too fast when it becomes like a paste it'll get stuck at the top and the blade will just be spinning air

You can melt the ingredients separately in the microwave and then combine them, it's just easier to do them all at once with a double boiler! :)

Technically honey is not vegan, maple syrup would be a good sub :) Homemade PB lasts about a month in the fridge :)
