    I'm so psyched about this. My son has a milk allergy and it can be tough finding dairy free fudge recipes that aren't terrible!

    • @MindOverMunch

      YAY that's awesome to hear! This fudge is definitely light and super tasty! :)

      It was a hit! A little grainy, but I don't think I blended the peanut butter enough! I am out of raw local honey so I was forced to make classic syrup from water and organic sugar. Not ideal, but it worked in a pinch!

    Also, it is very important that you use unsweetened coconut flakes, because the sweetened ones DO NOT turn into a butter. They're still delicious, but not so useful if you're going for coconut butter lol

    When making almond butter, I like to either buy the almonds without the skins or I soak and peel them myself. Having the skins removed make it look nicer, and it's easier to digest.

      If you use coconut oil the recipe may set but it will definitely melt more quickly at room temperature. I suggest coconut butter for a better fudge consistency :)

    Blender is ok but if you go too slow or way too fast when it becomes like a paste it'll get stuck at the top and the blade will just be spinning air

      oh thanks! It definitely depends on the blender and size.

    Love it and although I've never thought of making fudge this peanut butter recipe might be the exception but doesn't it need a little salt?

    • @MindOverMunch
      @MindOverMunch  7 років тому

      If you use unsalted peanuts, I'd definitely add a pinch of salt! I used roasted and salted peanuts so there was already a good flavor with that salt :)

      Ok, that got passed me but I'm always buying natural peanut butter and I know their is salted and unsalted which is probably the route I'll take. I really enjoy your videos and how much fun you put into your presentations. Happy Holidays to you and yours.

    I wonder if using powdered peanut butter would be a good way to cut down on the calories!

    • @MindOverMunch

      It's a nice idea! I haven't tried it personally and it may change the texture of the fudge a bit or make it tricker to set, but it would be a cool experiment!

    Your fudge looks amazing, I'm ready to make a batch, but I'm allergic to peanuts, so can I use roasted pecans?

    Apparently heating nuts removes the nutrients, do you even have to heat it?

      saraa x also peanuts and cashews are both susceptible to Aflatoxins which is a toxic mold

    Would you guess it's cheaper to make or buy peanut butter?

    • @MindOverMunch
      @MindOverMunch  7 років тому +1

      peanut butter is pretty inexpensive as is, and peanuts aren't too expensive either so I wouldn't say it makes much difference. BUT other nut butters I definitely think it can be less expensive to make it IF you buy your nuts in bulk and get them reasonably. Sometimes pre-packaged nuts like almonds and cashews can be so expensive that it doesn't end up saving you much to make your own. Still, I always think it tastes better with homemade :)

    Any suggested alternatives to a double boiler?

    • @MindOverMunch
      @MindOverMunch  7 років тому

      You can melt the ingredients separately in the microwave and then combine them, it's just easier to do them all at once with a double boiler! :)

    Are you as a vegan allowed honey? and how long would the homemade pent butter last for as long as store bought?

      Technically honey is not vegan, maple syrup would be a good sub :) Homemade PB lasts about a month in the fridge :)

    I thought coconut butter was just coconut oil in its solid form ?

    • @MindOverMunch
      @MindOverMunch  7 років тому

      nope! coconut butter may separate a bit so the oil ends up on top if it is left to sit, but coconut butter includes the meat or flesh of the coconut, and coconut oil does not. In coconut oil, the oil has been completely separated from the meat. Hope this helps!

      The syrup is for sweetness. Use a sweetener of your choice is what I would suggest.
