Yeah - I use virgin coconut oil when I actually want to add a hint of coconut to something (or the product is so potent you can't taste the coconut over it). An example would be a refreshing coconutty cocoa drink (with coconut oil instead of the cocoa butter you'd get if using chocolate instead of cocoa powder).

I use the recipe on the back of the marshmallow fluff jar. The only changes I make is adding a dollop of corn syrup and not mixing in the chocolate/marshmallow/vanilla until the boiled sugar/butter/milk gets down to around 120F. Learned that from Alton Brown. Super easy to make and very tasty.
I made the simple version this weekend and it is delicious! A warning though : the amounts given in the recipe produce a very large amount of fudge. You could halve the quantities and still end up with a decent amount of fudge

Except for her being vegan and a little aggressive about being herself on her profile, I decided she matched up pretty well with what I was seeking (she cleared my list of non-negotiables) and sent a message. Sometimes people give a like though as a placeholder for if they might later want to send a message to you, which is rather cruel to get someone's hopes up like that. Also, I get lots of likes from people who clearly haven't read my profile because what I'm seeking and what they've written down don't mesh at all (it feels like a bot might be doing it). So, to make sure she was a real person who'd read my profile, I pointed out that I was an omnivore and as she's currently big on going to the gym and I'm just...big (lol), I wanted to ensure she was okay with that. She responded to the tune of "I am, but as long as you know there's no way to humanely kill animals and that eating meat is more likely to give you cancer, you're fine with me." I...I mean...I guess? 😅. I don't want to change anyone and neither does she, but I have a feeling the veganism is going to crop up in other ways and maybe become a bother, lol. Like silently being judged, haha. We shall see. Edit: Not even 24 hours later and I see it's not going to work out. A blend of self-righteousness and then sprinkled with just enough niceness to cut through the acid, makes for a dangerous combination. I had asked the simple question of if her family has any issues making meals for her during the holidays and got the response of "Everyone caters to my diet. Everyone. But since it's just real food minus the blood and feces, nobody minds it." Jesus, I can't with this woman 😑. I'm the gentle, easy going, goofy kind of person. Opposites can attract and I don't mind having a partner that pushes me but wow...below, the word "sanctimonious" was used and I'm going to now agree with that for this person. She's the walking cliche of vegans that we all hear about, but I had thought was a myth. For those who are vegan who aren't like this (like trying to sneakily guilt trip others for not following their food standards), sorry you guys have another one like her in your midst. Now how to end things without being too obvious as to why, lol. Think I'll play the silent game and see what comes of that. The rest of the week we eat vegetarian meals. There are actually a lot of great vegetarian/vegan recipes that won't have you missing meat at all. :) very hearty and filling. Also look to the cuisine of countries that don't eat a ton of meat. Curries and Indian dishes are a staple in our house. On that note, pressure cookers are great for curry.
I’m also lactose intolerant, and I’ve found they actually make some really good dairy or lactose free chocolate, and I more recently discovered there is lactose free condensed milk!

And I don’t even use a saucepan, I just toss everything (except salt and vanilla ofc) in a microwave safe container and let it melt all together. The results are still insane for what it’s made of though!
There's like a hundred videos out there with variants on the first fudge, you can do it in the microwave. Go get yo fudge on if you want some fudge. But yeah, it's sexy.
My mom makes a five-minute microwave that's actually pretty good. Just melt two bags of chocolate chips in the microwave with a can of condensed milk, stirring every minute or so. Once melted and evenly stirred, spread in a 9x13 pan and let it cool before cutting. You can add chopped nuts, dried fruit, or mini marshmallows.
For Christmas last year my mom and I made pretty much the same recipe as the first fudge in the video ( but we did it in the microwave since it was our first time) and we added crushed peppermint on top. It was SOOOO good 🤤❤️

The steel on these knives is very hard, which makes it very brittle as well. They are built for pure cutting performance, so the blade edge is sharpened to a very narrow angle (around 15 degrees typically), and the hard steel stops that thin, super-sharp edge from rolling over and blunting easily, improving edge retention drastically. These knives will effortlessly glide through vegetables and meats and such, but anything hard itself can easily chip that thin, brittle edge. Western style knives typically use softer steels and a wider edge angle (around 20 degrees), and so while the knife will not cut as effortlessly and will require more frequent honing and sharpening, the edge will almost never chip, but will instead bend a little if at all (much easier to fix than a chip), and will be much more durable overall. Joshua should have broken out an old beater knife for this job instead of being Mr. Fancypants.

I recommend replacing the coconut oil with coca butter. I've made many 'fudges' like that and it holds together much better than coconut oil at room temperature.

A few tips from an ex candy chef: 1. don't refrigerate your fudge for extended periods of time after its cooled, the sugar will crystallize and get very hard. 2. A little baking soda thrown in when the pralines are finished cooking will improve the texture.
Cooking probably 200-300 covers a night is A LOT different than cooking for a UA-cam channel. They both deserve some respect either way but that’s comparing apples to oranges.
Just mix a tin of condensed milk and a jar of peanut butter. Press it into the baking tin, sprinkle a bit of sea salt on the top and body-slam it into the freezer. After an hour or so, take it out, cut it into squares, and suplex it back into the freezer again. Then just take it out whenever you fancy a piece. Easy as fudge.

Even the shortcut fudge trips me up, I tried the "just melt chocolate with sweetened condensed milk" and I just wound up with chocolate goop. It would not even set if I froze it for days in a freezer, just goop.
Butter, sugar, evaporated milk + marshmallow fluff. Boil for 5 mins, add a pinch of instant coffee powder, some vanilla and the chocolate goes in LAST. You're welcome. I make this every winter and it never fails. Only takes 20 mins of stirring over the stove

Hey Josh, super easy way to remove the skins is with 1-2 tbsp baking soda in simmering water for about 3 mins or until water turns black. Skins slide right off. Works like magic.

A few tips from an ex candy chef:
1. don't refrigerate your fudge for extended periods of time after its cooled, the sugar will crystallize and get very hard.
2. A little baking soda thrown in when the pralines are finished cooking will improve the texture.

Cooking probably 200-300 covers a night is A LOT different than cooking for a UA-cam channel. They both deserve some respect either way but that’s comparing apples to oranges.

Just mix a tin of condensed milk and a jar of peanut butter. Press it into the baking tin, sprinkle a bit of sea salt on the top and body-slam it into the freezer. After an hour or so, take it out, cut it into squares, and suplex it back into the freezer again. Then just take it out whenever you fancy a piece. Easy as fudge.

I made your ultra easy chocolate fudge and put chopped heath bar on top. It was wonderful and it went in my Xmas gift bags for my neighbors. Everyone loved it.
This is basically the North American version of a Brazilian dessert called "brigadeiro"

I wanted something that had a lot of options but was still good for someone that just cooks at home for themselves despite having some advanced cooking skills .

Even the shortcut fudge trips me up, I tried the "just melt chocolate with sweetened condensed milk" and I just wound up with chocolate goop. It would not even set if I froze it for days in a freezer, just goop.
I think your heat may have been too much. I just keep the heat to the lowest possible setting whenever I work with chocolate.
Butter, sugar, evaporated milk + marshmallow fluff. Boil for 5 mins, add a pinch of instant coffee powder, some vanilla and the chocolate goes in LAST. You're welcome. I make this every winter and it never fails. Only takes 20 mins of stirring over the stove

Hey Josh, super easy way to remove the skins is with 1-2 tbsp baking soda in simmering water for about 3 mins or until water turns black. Skins slide right off. Works like magic.
