My adjustment: only cooked it with one and a half cups of vegetable broth in my instant pot and ended up reserving a lot of that liquid before blending because I didn’t want my cheese sauce to be too thin. It turned out amazing! This will be the thing that saves me from my cheese addiction as I pursue a whole foods plant-based diet.
I recently went dairy free. I also don't eat most meats (Pescetarian), and nuts are not in my budget (only peanuts really), so it's nice to find cheese sauce recipes without nuts. Thanks for this.
I'm pescetarian as well! Going dairy free for breastfeeding, and all the other "cheese" recipes use raw cashews. Those are SUPER expensive! I'm excited to try this out soon!
This rivals any cashew based sauce I’ve ever had. Hands down, this is my new favourite. I used frozen butternut squash and frozen cauliflower to save time and it was amazing. I will be making this over and over again.
Okay so I made the cheese sauce and I was like it's pretty good but it doesn't taste very cheesy to me. It'll make a yummy soup. So I let it sit in the refrigerator for a clue of days and OMG. I think the flavors had a chance to merge or something. I'm new to this whole plant based but I am not going to find a better vegan cheese sauce than that. Delicious!!! I like the idea of the lady who made nachos out of them. Now that it is fall I think I'm going to add a little bit of broth and some cooked broccoli to it and make a nice broccoli cheddar soup with it. I can not believe that is made out of cauliflower and butternut squash. That tempeh filling was my first time making tempeh. It was delicious. Next time I make I'm going to add some tomato sauce to it and I will make some spaghetti.
I just made your cashew based cheese sauce over the weekend and my carnivores LOVED it. I can't wait to try this one too and it's the perfect time of year with an abundance of squash in the garden!

I just made this cheese and it blows my mind. My husband ate it and said he would never notice that it wasn't real cheese- and he's hyper aware of any "fake" recipes I make. Made a Mac and cheese casserole and it's the bomb. I've been so sad trying to find dairy subs as they're usually expensive/they suck.
Oh, man. I'm excited to try this. Going corn, rice, and dairy free due to allergies has drastically decimated the number of things I can eat. It's easier to list the things I can than cannot, but this seems so simple and I can probably find corn-free options to actually make something for once! Big thanks.
Love the look of this cheese sauce. I made a cashew and spinach cheese sauce earlier this week using just a quarter of the cashews in the recipe. It was so rich I wasn't able to get through my greens, broccoli, brown rice and a few other ingredients of the "bowl". Nuts just make me feel so full. This sauce is on my menu this Saturday! Sister, if you want to prevent the pasta from overcooking, after you've drained it, submerge it in cold water and then drain it again. This is very convenient if you have guests coming so you can sauté your pasta with the creamy cheese at the very last moment. ❤️😇🤗
I absolutely loved this! By far my favorite recipe I've tried for "cheese" ( I have tried a lot). Finally something without cashews, I strongly dislike any cheese recipe that calls for cashews. I add a few tablespoons of paprika for some yummy mac and cheese/ nacho dip.

I made this tonight for the first time. So delicious! I added 1/2 teaspoon dry mustard and it gave it a bit of the tang you get from real cheese. My hubby and I are already thinking off the different recipes we can use it in.

Hi Nisha! I made this recipe today (because I'm allergic to cashews) and the taste is great! I wanted to let you know that I added in 1/4cup+2TBSP oat flour to make it more "gooey" (less runny) like liquid cheese and it worked! You may want to try that sometime. This is soo good! I used chili powder instead of paprika (cuz I just had plain paprika) to add flavor & used mushroom broth (since I was out of vegetable). This was so good, I could easily just eat this as a soup & I'd be totally satisfied!! I had to force myself to put it in the fridge when it got done so I wouldn't eat it all. Was making this & your recipe for homemade hummus to go with my Vegan burrito bowl. This is my second "cheese" sauce recipe I've made. The 1st (by someone else) was okay - they used potatoes & carrots. This recipe is Epic! 1000% a keeper!!
Jackfruit and mushrooms are becoming great recipe builders.. I have been using sweet potato and carrots to make cheese, I have to use a thickener...But, this way it's sliceable. However, I can't wait to try it this way. Thank you so much for sharing..

SOOOOOO GOOD!! I cannot stop licking the spoon. This is hands down the best vegan cheese sauce I’ve ever tasted. I have poured it over my pinto bean enchiladas right now, baking away. I love that it’s but free. Guiltless due to the lack of heavy calories. And sneaking in some awesome veggies. Thank you for this! I didn’t have fresh garlic so 1.5 tsp of garlic powder worked. I added 1 tsp of onion powder and an extra 1/4 cup of nutritional yeast. So good!!!!! Have you frozen it? How does it hold up?
I so need to make this! I have been trying to eat as raw as possible. I cook a few things, here and there. I tried to make cheese sauce with nuts, and it tasted like nuts! The consistency was gross. Funny. The other day I had leftover cauliflower that we cooked in our solar oven with peas and garlic, and I thought to myself, “ I bet this would be a solid vegan cheese base.” Turned out amazing! And is especially special because we don’t always have access to affordable nuts where we live. Next, I want to experiment making it with our surplus of summer squashes growing! Love your vids!

Made this today. It tastes really good! I don't think it tastes exactly like cheese, but I look forward to adding this to my meatless grain bowl tomorrow morning and spreading it on sandwiches!
I haven't tried to make a cauliflower based sauce yet, but this looks fantastic! I'll have to try it. I did just make a light tofu based nut and oil free sauce that was light and delicious. I think cauliflower would really add to it. Thank you for the inspiration!

I was synical about making this purely because every other vegan cheese recipe I have tried has been a disappointment. Today I decided to bite the bullet and give it a try... and I'm so glad I did!!! After simmering the vegetables and transferring them to the blender I kept thinking 'how do all these ingredients mixed make a cheese sauce'?! I persevered until the very end and when I finally tasted it, I was like OMG! THIS IS DELICIOUS!!! It was like lightening had struck my brain!!! Finally, a vegan cheese recipe that actually tastes like cheese! Better than real cheese!!! Thank you so much for this, I had almost given up on the whole vegan cheese thing! I had the sauce with pasta and garlic bread, it was beautiful!! 😁👌 Do you have a recipe for solid vegan cheese? I've tried many recipes but none of them have been that great tbh. The recipes I have tried all use cashew nuts, not sure if that's perhaps the issue? If you have any suggestions about making solid vegan cheese I would be very grateful to you. I just made this cheese sauce and it was Da Bomb!!!! I lightened up on the garlic..10 cloves scared me. 😲 I used 5 instead. It was good..but A lil more wouldda been fine. It made more than I needed, but I'm sure I can find ways to indulge in more creamy goodness. Still, for future reference, can it be frozen? Love your recipes and you! Thx, Linda
@@jedinyte1 OK, I just had macaroni cheese with a sauce made from this recipe. I used smoked paprika so the cheese sauce had a touch of 'hammy' flavour but it didn't detract from the overall effect. This is a very tasty alternative to fermented nut cheese. Top marks!

I made this cheese sauce for mac and cheese. I used 3/4 cup of nutritional yeast. This sauce is delicious and the tastes to me like an alfredo sauce.

Funny. The other day I had leftover cauliflower that we cooked in our solar oven with peas and garlic, and I thought to myself, “ I bet this would be a solid vegan cheese base.” Turned out amazing! And is especially special because we don’t always have access to affordable nuts where we live. Next, I want to experiment making it with our surplus of summer squashes growing! Love your vids!

I haven't tried to make a cauliflower based sauce yet, but this looks fantastic! I'll have to try it. I did just make a light tofu based nut and oil free sauce that was light and delicious. I think cauliflower would really add to it. Thank you for the inspiration!

I was synical about making this purely because every other vegan cheese recipe I have tried has been a disappointment. Today I decided to bite the bullet and give it a try... and I'm so glad I did!!! After simmering the vegetables and transferring them to the blender I kept thinking 'how do all these ingredients mixed make a cheese sauce'?! I persevered until the very end and when I finally tasted it, I was like OMG! THIS IS DELICIOUS!!! It was like lightening had struck my brain!!! Finally, a vegan cheese recipe that actually tastes like cheese! Better than real cheese!!! Thank you so much for this, I had almost given up on the whole vegan cheese thing! I had the sauce with pasta and garlic bread, it was beautiful!! 😁👌
Do you have a recipe for solid vegan cheese? I've tried many recipes but none of them have been that great tbh. The recipes I have tried all use cashew nuts, not sure if that's perhaps the issue? If you have any suggestions about making solid vegan cheese I would be very grateful to you.

I just made this cheese sauce and it was Da Bomb!!!! I lightened up on the garlic..10 cloves scared me. 😲 I used 5 instead. It was good..but A lil more wouldda been fine. It made more than I needed, but I'm sure I can find ways to indulge in more creamy goodness. Still, for future reference, can it be frozen?

@@jedinyte1 OK, I just had macaroni cheese with a sauce made from this recipe. I used smoked paprika so the cheese sauce had a touch of 'hammy' flavour but it didn't detract from the overall effect. This is a very tasty alternative to fermented nut cheese. Top marks!
