- Episode 2. This week we are making an authentic Birmingham Balti Style Garlic Chilli Chicken.
Truly one of the nations favourites. This is deep, rich, aromatic and also packs a nice little punch but not too much. Follow Al as he takes you through each step along with the beer and Banter. Enjoy.

Please Enjoy the Vid. All I ask in return is a like and subscribe/comment to keep the Channel going and keep me motivated. Al xx
I invented curries.
I'm so proud of the way people have accepted this type of cuisine.
One tip of advice.
Just before you serve it, put a small dollop of butter into the curry.
You'll thank me for it.
This could be my favourite curry ever!
I managed to get my pan on fire, which took me completely by surprise, and once I’d got over the shock of nearly burning my house down - the smell was immediately absolutely amazing!!
Thanks Al. 🍽
Al, is such a heavenly soul. It's such a pleasure to watch him cook.
Thanks for this Al, made it last night and it was superb and my kitchens still standing 👌🤣
Thanks for all your videos mate, you've saved my family a fortune over the last couple of years 👍
Well done Al, on the spice mix. Keep bringing us great drinks and food.
I'm absolutely salivating! Love it cooked in a Balti bowl. Great video Al. Garden looks amazing by the way 👍
Looks great as usual Al. Big boys playing with fire 🔥🔥🔥
Nice one Al, and a very nice garden you have too mate! I look forward to the Madras Video you mentioned..
Thanks 👍
Nice to see you did my idea of making the spice mixes mentioned when I was following you in lockdown. Hope the product sells well
Hi Al, Cooked this last night. What a stunning dish! Definitely the best Balti I have cooked. Superb taste. I've been following you for some years now and have lost count of your dishes that I've cooked. The specials were great and this Balti series is fantastic. Cooked every one to date. I'll be doing the Balti Madras next week. Thanks for all your tutorials. Kevin
Great, quick versin outer later today
Great vid again Al!! I will definitely be ordering some of those spice bags.
That balti looks the business, garlic chilli is definitely one of my all time go to do I'll be knocking one of these up once I've made my next batch of base!🤤
Al. Amazing. Again. Another gem to try. Love the outside cooking and 🔥🔥🔥. Did notice the hose behind you incase 😆😆keep up the great work Al Barry millar
Created it at home and it was amazing; thanks so much Al.
What a great garden Al you must have to spend some time keeping it looking tidy
Yep. If I didn't have Al's Kitchen there would have Al's garden channel lol
Made this tonight, it was fantastic, reminded me of my student days in Brum.
Lovely garden Al 😀
Lovely garden 🏡
Just made the base gravy and ordered some of your Bassar power. Garlic chilli chicken heaven... Here I come. :)
Lovely garden Al! My lawn looks like a football goal mouth after the summmer we just had!
Great video. My favourite is also garlic chillie chicken. Great garden as well. 👍👍
Inspired by yourself and others, I have been experimenting with using my slow cooker for indian food, using base gravy as the stock and adding the spices (whole and ground) along to the mix, haven't quite got it 100%, possibly because the spices haven't been toasted, but initial results are encouraging.
OMG just made first Als curry… where have you been all my life.. truly amazing
Spicy joes is a game changer, certain things on site are hard to source at times. Will defo be ordering from site, like the wee tubs they come in, i have all my spices in bags the came in and can get quite messy and time consuming arranging what i need for a curry. Out all the channels i have come across on you tube hands down als kitchen has been the most influencial in my life, i have made so many curries and other things that have tasted soooooo good. Keep up the good work Al doing a great job, good to see your channel going the way it should
Can’t wait to try this, thank you!
Drooled watching this, followed !
As a Brummie, I've had more Balti's than I can count. That is the closest tasting home recipe I've ever come across. Amazing stuff, Al! 👏
Glad you enjoyed it
Al , as I'm from Wolverhampton and been to many balti restaurants . One of my favourites many years ago was Azims in Lozzells . Your Balti looked amazing actually I was dribbling while you cooked that beautie . Congratulations mate you've cracked it .
@Nigel Gray. Lived about 3 mins walk from it. Can concur. Top curry house on lozzells Rd.,as was High quality balti house. Good times.
Wow, 👌👌👍👍, thanks Al.
Looks very good as always Al, your gardens looking nice too. Madras is definitely one of my favourites if that's up next. Cheers 🍻
Many thanks
Oh boy, that looks great. Your method makes so much sense and it might resolve my problem of always having burned-tasting Indian food (that I cook). As an ex Brummie, it's great to see you doing your thing here. It may save me a trip over to Birmingham to eat on Ladypool Rd.
Used to eat at a place called the Lunch house/box back around '85 in Ladypool Rd. That was my first Balti!!
That looks banging Al. So damn good 👍
As an Ex Black Country bloke living in Wigan I’m craving a decent Brummy curry, curry’s in Wigan are barely edible.
I’ll be making this at home, just bought your bassar mix too. Thanks Al as always 👍🏻👍🏻👍🏻
Will be trying your mix mate. Great idea! Keep up the good work fornus curry lovers out there!
Thanks again Al. I don't yet have a proper balti bowl to cook in but I have cooked this recipe a few times now in my usual pan using both raw chicken and pre-cooked chicken tikka and I have to say that this recipe is banging!
Excellent Al, shall be followed. That point at 7:35 got me truly wanting one, am impressed.
Thanks & regards from East Dunbartonshire.
Welcome aboard!
Omg that looks delicious Al making that today thank you
Can’t wait to try this Saturday night thanks 🙏
As someone who is lucky enough to have some fantastic curry houses in Glasgow nearby, your stuff is up there with any of it if not even better. Fantastic work Al
Epic job
Can't wait to try it mate
Love it , another masterpiece sir
Greetings from Dallas Texas
On this one. That's Saturday sorted. Great work Al
Looks amazing Al. I try this thank you xxx👍👍
My pleasure 😊
Looks great, I'm a Madras man myself, but I've lived in Birmingham, Indian and Chinese restaurants, and best in the UK.
Defo looks like an outdoor dish with them flames😀
Nice garden Al

Looks spot on mate. I’ve modified one of my front hobs I drilled the gas feed jet out for bigger flames haha
Looks great, no tomatoes too. I wish I had a window that posted out hot naan's. 🤣
Yessssss!
Can't wait for this tonight, thank you Al
Enjoy!
Al your a legend love your work buddy 👍
Wow, thank you
Make some shorts Al and watch your channel blow up. You can also use those shorts on tiktok and insta and make your UA-cam channel blow up some more. 😎😎 Love your vids. I stopped doing my cooking channel to concentrate on my works channel but i still cook lots of curries, always inspired by your vids, great content and fun to watch. All the Best, Derek

Thanks for your videos Al. I’m currently working in Spain, with not a single curry house near. I’m taking a brief trip home and plan on bringing some ingredients back. If you were in my situation, what ingredients would you bring back? Bearing in mind I won’t have a lot of bag space. Cheers
that is my favourite curry AL a curry shop in Newport does it TWINZ and its banging IM sure once i try yours it will be in the same catergory nice one AL
Proper Madras next Video cheers Al, thanks for this one to, just cooked your Lamb Cylon, delicious
Thank you
Al, you've inspired me to have a go @ cooking curries, urs look delicious. I've got the Birmingham baltic bowls on your recommendation. I need to know the ring burner you have and them little spice dishes, them I will be on my way. any chance including you cook stuff in the dicscription. cheers
Yay! Hey Al.
PS. Bought your spice mixes so I can see how they compare to mine. 😁😁
I liked the David Copperfield trick at 03:30 when your eyebrows magically vanished 😂😂😂
brilliant mate
I'm going to cook a Garlic Chilli Chicken tomorrow night. I hope I don't get those flames in my kitchen ! The wife will go divvy !
I'm off to get the ingredients for this now for my tea tonight! Is there a recipe anywhere for the bassar mix?
Al, this recipe looks amazing. I really need your help to find the recipe for a dish with lots of charred garlic and lots of chilli. It’s called a Kolhapuri and it’s an absolutely amazing hot Smokey dish, nothing like any of the recipes I can find. Please help! Best one I’ve had was from the vine and spice in Long Wittenham
This curry looks amazing and we are going to do this one. Sadly Shabbabs need to answer emails as I have emailed twice about one of thier dishes. :)
Top Video - Love it 😃
Glad you enjoyed it
Al, have you got a p.o box to send stuff?? If not, Try and get your hands on some San Servolo Croatian lagers and beers. Tried them all last week while i was there - all of them were amazing!! Shipped myself 60 bottles back to blighty!!
I do have a address to receive things mate
Hi Al another banger mate. I prefer a madras but made with lamb. I feel hot dishes work better with lamb. Here’s to the next recipe!
With how the cost of living is going up its great to be able to knock up an authentic balti at home I will be trying this one out this weekend
Great stuff
Very true buddy, to be fair, Als curry are better than a takeaway and even better the next day. To much oil in takeaways, only my opinion tho
Yeah it will only cost you £9k in gas to cook it 😂
What's in the base gravy? I usually marinate all the chicken before cooking, extra flavour.
If you start international shipping i will gladly give your mixes a try 😏
Looks great Al just ordered the spice mix’s have you posted a recipe where you use the Bassar mix ? 👍😎
Jumped the gun there it’s in this one 🤦♂️☝️
One of the best ones yet made with mixed spice can’t wait to try it with Bassar
Been waiting for this
Madras for me next time Big Al 👍
Loving the Baltis!
I’ve never been lucky enough to eat a proper brum balti but I made the other balti last week. Looking forward to this tomorrow!
Glad you’re back with a bang.
Hi Al, can you freeze these curries you make,
Thanks for all your hard work great content 👍
Yes you can!
Al, have you ever tried Ethiopian cuisine before? There are some dishes that are quite curry-like and use their own spice mixes such as mekelesha and berbere. 'Doro wot' is a dish I'd recommend you try!
I have actually. Been to a couple of restaurants and they were amazing. Very spicy dishes with this big sponge like naan.
Love the video & recipe. But why grams of onion & pepper? That smacks of dragging out the kitchen scales, electric or otherwise. And what do you do with what's left over? It's 1 medium onion & a small /medium pepper, chopped. Even the chicken works out at about 1 small pack, or half a large pack from the supermarket [ 400g ].
Just ordered al, thanks, could you put a link too your gas burner your using, thanks
The link is there mate
Where did you get your stove/hob?
Al, which base gravy are you using? Is it your Base Gravy 2? great video btw!!
If I was making this on a standard electric hob (no flames), would I use the highest heat? Thanks
Yes, you would.
Yes but you won't get the same end result, buy one of the burners from Amazon
Another banger
Al been watching your channel for a while now and it's amazing easy to follow could I ask what burner that is you are cooking on please thank you
In the description mate with link.
Great vid mate, For me hotter the better 👍 🔥
What’s the method/ingredients for the base gravy, Al? Looks wonderful dude!!😍
Here you go mate ua-cam.com/video/LOn9wkjLpCc/v-deo.html
beef madras would be a good video
