Great video! My dad has been cooking curries like you do for years, so between you and him, I can now confidently cook a BIR style curry at home - the Garlic chilli chicken is probably my favourite so far!
I remember the first Madras I ever made, a few years ago. Took some over to my dad and he said "It's not bad, you just needed to fry your spices off for longer" - since then I've been practicing and I love making curries for him - can't wait to try this one!

I recently discovered I have an indian supermarket near me, and have been able to buy ingredients I could never get my hands on before. It is inside a premier, of which we have about 8 on the same road, thus why I never noticed it before.
One of which is garlic pickle.... this stuff is amazing if you love garlic...really great for garlic chilli chicken.

What do you do with the rest of the base curry after you finish your curry? As you always seem to have loads made up, I know you can freeze it but do you refreeze once you have used the amount you need? Great channel btw slowly making my way through your videos, garlic chilli chicken is my personal favourite which I’ve made a few times, making a Rajeshwari this afternoon… keep up the great work and the hair is looking sharp 👌🏻

The Bassur spice, can it be used in other curries Al?
Yes just use either one to replace curry powder
Looks delicious Al, little tip for pouring Guinness into a glass is put the glass on top of the open can and turn it upside down and as it pours lift the can up slowly but not too quick just above the head till it's finished, this makes it nicer and a lovely head😉

I like these as an alternative way to build the curry. Interesting that there is no ginger, and the order is different with the fresh garlic.

NAZIR company used to do a good range of paste and sauces but I can't seem to find any more
I find the problem with wet spices like the paste that you are using.. unless you make curries from the same jar everyday.. after 2+ weeks (maybe a month) the stuff becomes moldy and wasted. This is in the fridge.. unless you would freeze it.. but then the glass would crack. Hence I prefer dry powder spices all the time.

Is it safe to fry that much oil outside uncovered? If it started to rain couldn't that cause it to explode like water in a chip pan?
Make sure it isn’t going to rain before you start then!
