    Thank you. Of over 2 dozen recipes I looked at for fudge yours was the only one recommending letting it cool a while first before putting in the fridge. Putting hot anything in a fridge wears out the fridge and warms up other perishables. Thanks again. Another way to rapid cool is to sit the fudge tray...I do this for turkey in the hot pan also...into a sink or larger pan that has ice in it. Not to dilute anything with ice only to rapid cool the food and its pan so to prevent room temperature salmonella or causing excess heat added to the fridge. Thanks again

      Yep...why in Gods name would youNOT put baking paper at least in the bottom...and why cut into tiny pieces before getting the fudge out the tray? This is so stupid it leads me to believe the guy did it on purpose for the attention...Nobody is THAT stupid, are they?

    I made it today .... I LOVED IT THANK YOU.I love your channel and i tweaked the recipe a bit.
    Instead of golden syrup i used 2 Tablespoons of honey
    Instead of brown sugar common white and to top it all off
    I used a white chocolate with crispy pieces (like crunch) and brown chocolate
    TOTALLY AWESOME (The color turned out to be a bit weird due to the use of normal white sugar but the chocolate pieces in the white chocolate did the trick)

    For anyone wondering, golden syrup is a British (and evidentially Australian!) food that has a unique taste and is hard to substitute. I wouldn't advise replacing with honey as it's too thin, corn or maple syrup would be better (maple syrup would probably taste awesome in caramel fudge!). Must try this recipe sometime very soon!!!

    Amazing recipe! We don't have golden syrup in the USA so I improvised by adding 1 tbsp of molasses 2 tbsp corn syrup and increased white chocolate to 150g or so.

    You could boil the condensed milk for 3 hour's and then you have caramel!

    3 cups sugar
    1 1/4 cups milk
    1/4 cup light corn syrup
    2 tbsp butter
    2 tsp maple extract
    Old-fashioned maple fudge recipes used pure maple syrup. These days, maple syrup is very expensive so this maple fudge recipe uses maple extract which is much more affordable.
    Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

    I just made it now with two spoons of ahornsirop ;DD went perfect!! The taste is even more deeper then with glucosesirop ...It went out perfect ..I took it of the stove between softball and firmball...really sooooooo nice!! greetings Igniter

    Golden syrup is a pale treacle. It is a thick, amber-colored form of inverted sugar syrup, made in the process of refining sugar cane or sugar beet juice into sugar, or by treatment of a sugar solution with acid. It is used in a variety of baking recipes and desserts. It has an appearance similar to honey, and is often used as a substitute for people who do not eat honey.

    Does anyone know how to make a 'hard' fudge, that is almost like firm icing consistency? I remember finding this type of fudge at fetes as a kid but not sure how to go about it now

      If u want a firm fudge u need to do your simmering fo something like 30 mins or 35

    Then
    In a large 3 quart saucepan, combine sugar, milk, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Do not stir. Remove from heat. Do not stir.
    Cool to 120F. Add maple extract. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

    hey malak if you wanted to make it less oily and a little healthier u can use coconut oil it may change the colour slightly but it works a charm

    Je kunt gecondenseerde melk in elk geval bij de Jumbo kopen. Staat bij de koffiemelk. Het recept is heel makkelijk, je moet het alleen iets langer in de koelkast (of nog beter de vriezer) laten staan, en ik zou de bakvorm bekleden met bakpapier, want deze caramel krijg je er nooit goed uit zonder papier. Succes!

    different recepie for those who have no condensed milk: 350g sugar, 300 ml milk, 100g butter. That's all. You can add vanila extract if you want.
    Also you might want to boil the fudge mixture more than in this video (higher temperature) and do it for 15 minutes. if you don't it'll get soggy.

    Thnx 4 making this channel, found it last week.
    I'm from Denmark, and as i was googling what, condensed milk is, i fell over a trick u perhaps wanted to try.
    Boil the unopened can for about 3 hours (make sure it fully covered with water, or it can explode) - the result is caramel with the same texture as Nutella.
    But of cause, it don't have the same flavours as u add.
    Keep up the good work :o)

    It's a type of syrup made from cane sugar. Just look for golden coloured syrup in the supermarkets. If you can't find it, use clear, light flavoured honey (but you can slightly taste it at the end depending on what type you use) or use corn syrup or glucose syrup, which is a clear syrup. Just search golden syrup and corn syrup in google.
    *Try looking in a baking speciality store if you can't find it.

    @lapambo They are different :D Maple syrup is a syrup usually made from the xylem sap of sugar maple, red maple, or black maple trees while Golden Syrup is a thick, amber-colored form of inverted sugar syrup, made in the process of refining sugar cane or sugar beet juice into sugar, or by treatment of a sugar solution with acid.

    Golden syrup is produced during the refinement/processing of sugar cane. If you can't get it, it's not important. It's only added for extra sweetness.

    No you need to use golden syrup & brown sugar. It doesn't need to be frozen. I don;t know what the butter brand was :D

    you can make it.
    you can mix 2 parts of glucose syrup (corn sugar syrup) and 1 part of molasses
    or
    1 part of glucose syrup and 1 part of honey
    these are the ON LY 2 versions of golden syrup

    carmel is simply heated butter and sugar. he used brown sugar and butter. he added contense milk, syrup, and white chocolate to the recipe = carmel fudge.

    For the non metric version:
    1/2 Cup Butter
    1 2/3 Cup Sweetened Condensed Milk
    Just under a 1/2 Cup of White Chocolate.
