VANILLA/CARAMEL FUDGE [American/Imperil conversions in brackets as best I can determine] - 150 gms unsalted butter --- [American measure: 1/3 lb butter, aka 1+1/3 stick of butter, aka 10 Tbsp + 2 tsp butter] - 500 gms brown sugar (@28g per ounce) --- [American measure: 18oz, aka 2+1/4 Cup brown sugar] - 125 ml milk --- [American measure: 4.23 fluid oz, aka ~1/2 Cup whole milk] - 395 gms sweetened condensed milk -- [one 14 oz can of sweetened condensed milk] - 1 tsp vanilla Combine in pan & STIR CONSTANTLY w/ heat-proof wisk, over MED heat approx 15 minutes (it will begin bubbling at some point... continue the full 15 min while stirring) TAKE IT OFF the HEAT after 15 min, then continue to stir another 10 minutes (to caramelize ingredients & firm up the fudge) Scrape into prepared pan (greased & parchment papered) Let cool & firm in fridge ~ 4 hours Remove & cut into squares (may need to keep in fridge to maintain form) [mcsmama 11.17.2023]

Best video I've watched for making fudge. No rolling boil & constant stirring while it thickens are the key to successful fudge. Other videos had pitted & crumbly fudge when cut ... To save time, I melted the butter first w/the milk - much quicker. My arthritic hands can't stir for long periods of time. I also grabbed one my kids to finish the last stage of stirring process ... 😆 Absolutely delicious as well as beautiful! 😊

Even nowadays we make milk candies almost the same way. but, of course, using condensed milk is easier. If you add grated coconut you get a coconut candy.
I made this fudge today and it’s a fantastic recipe. I cut them into cubes and as finishing touch sprinkled a little fleur de sel over them. Thank you, Todd!

I made this fudge this week. Followed your recipe and it turned out amazing! My first time ever making caramel fudge. I honestly the the sugar measurement was wrong because it looked so much! haha but it turned out perfectly and tasted so good!
This looks really good. I'll have to try it. Only tip I have is that if you use vanilla extract add it after it is through cooking. Most of it will be burned off due to the alcohol in it if you don't.
If you want it to last outside the fridge just cook it for a bit longer, then when cooling and stirring it will rather quickly become the consistency of fudge, then pour into mold, refrigerate once and bag it up and mine keeps well in the cupboard. Pro tip is allow a tiny bit of burnt caramel towards the end then quickly mix it in with the rest well before removing from the heat, it adds something a little extra ;)

I just found this recipe and made it tonight. Holy SH!T!!!! It was excellent!!!! Creamy just like Carmels. Tastes like high quality Carmels. On the bottom of the pan I put broken almond and milk chocolate chips. On top I put a pecan half nicely placed. Everyone was in amazement!! I’m a baker but never made Carmels due to the time it takes. Well worth it! Dipped some in chocolate too. Wowzers! Thanks for sharing this recipe! I’ll make it again and again!

Finally an easy way to make fudge. Looks awesome mate. My dad had a go at making toffee once and it turned out quite hard but it was still nice and the aroma coming from the kitchen was pretty good. Great video mate 👍

Made this yesterday and put in the fridge overnight to set. Got it out this morning and it’s like chewy caramel. It won’t cut up at all, just sticks to the knife.
This is a bit late in the game... did you try using a sharp knife dipped in boiling water and dried before cutting? You might need to do it for each lengthwise cut, but that should do the trick!
So brown sugar, butter, vanilla, sweetened condensed milk. Med heat for about 20 minutes stir consistently. Is this the recipe. How much of each ingredient. Thank you. Betty Luzar

I'm a true native American and I tried your recipes, with this one exchange a half cup brown sugar for half cup dark brown sugar 😍 gives it depth
I used dark brown sugar too and browned butter! Yummo
The higher molasses count on dark brown sugar will make it great. I have always used molasses for my pancake syrup

Yum ! I really enjoy caramels and fudges, so this recipe is ideal. I might add a small amount of salt for salted caramel in some of the mixture 😋
Just a sprinkle of kosher salt on top before it fully sets...

Inadvertently got Condensed milk sent to me instead of evaporated, during Lockdown. Now I know what to do with that condensed milk.😍
Put it in the crock pot with water just above it for about 6-8 hours and you get caramel sauce and I meant the sweetened condensed milk
