      Made it fine the first time, somehow managed to burn the sugar the next time. It wasn’t bad, just tasted like coffee caramels, and I don’t like coffee.

    Just made this recipe today. Followed it exactly.... First batch, flawless. Second batch, flawless. Started eating first batch. Second batch still on counter cooling. I'm going to include these caramels in my Christmas boxes this year. The batch size Herr is perfect for gift giving. It's even fast enough when you want something sweet!!!       I like to add a touch vanilla extract just before adding the butter for the final 3-4 minutes of stirring 🙌 certainly worth a try.
      Its great to experiment too like I found using brown sugar and dissolving medium strength coffee beans for a more darker coffee caramel taste! 🙏

    I attempted to make this caramel again and I believe I finally got it correct. My candy thermometer ( which I found hiding in a drawer and ancient as can be) showed a temperature of 220 degrees Fahrenheit but my cold water test had a touch harder consistency but still pliable. It’s cooling in the fridge and I’ve got my 🤞🏻❣️❣️

      @Terrie Severson Don't forget to adjust for your altitutde. If you live at a higher elevation, your temperature has to be adjusted. Lots of people just go by what their thermometer says, but ya gotta change it if ya live at elevation.

    I made this today and it’s fun and fairly easy. Mine turned out perfectly other than the fact that I overcooked the caramel a little bit and now it has a strong toffee flavour. It still tastes good and I will get it a lighter taste and colour next time. Also the sound when pouring the cream in sounds like I’m summoning a demon or something it’s so loud.

      Try warming your cream a little first or use room temperature. ❤🐄

    No need to stir, only later, when the cream goes in. Also, when the sugar and some water is in your pot, wash the sugar cristals away from the pan sides. Or else your candy will totally cristalise and ruin the smooth texture you are after.
    -Soft ball stage is fudge like candy you can bite in easily.
    -Hard ball stage is sticky or even really hard candy. Very nice too.
    I often made this for my sons when they where small. Still do sometimes. They love it!
    If you bake popcorn first you can also pour a batch of soft caramel over it and stir it well through . Yum!

    I’ve been looking for an easy caramel candy that I can cover in dark chocolate (similar to the ones found in gift candy boxes). All the recipes for chocolate covered caramels are too dark and too hard , so this should be perfect!

      I pour it over a try of pecans, walnuts, peanuts, let cool then break apart and let cool for diping in chocolate. Perfect turtles

    First time making carmal and this was really easy for me and I'm basically a kid too! It's tasted really good but I think I may have over cooked then slightly because they were a little hard.
    Edit: I figured out why it turned out hard I didn't add enough of the milk. I remade a 2nd batch that's twice as large and it turned out soft this time

      Don’t worry you didn’t over cook it the sugar just reached the crack hard stage where it basically turns into a bigger sugar crystal

      I would also recommend putting in about 1/4 cup of water so it slows down the cooking quite a bit and all the water will evaporate

    Thank you for the video! You can accomplish the same thing by simply boiling sweetened condensed milk with no additional ingredients required. It tastes just like Kraft caramels. The longer you boil it, the stronger the flavor and the harder the caramel will set after it cools. Don’t overcook or it will taste like charcoal…lol…

    I made the candy today and I certainly messed it up. I think I over cooked the batch . The color was correct but after it cooled, etc., the caramel was hard and I had to break it in pieces. I did get a soft ball stage so the mishap occurred after that. I’m not giving up , so I’ll try again with hopefully better results.

      You've probably got it by now, but that problem usually comes from actually over cooking. It continues to cook really quickly so you have to be fast with your testing and get it off the heat.

      Everytime i try to make this my arms get sore from mixing and when I finally pour in the whipping cream all the sugar just clumps up together onto my spoon and hardens leaving a puddle of cream and a little bit on caramel at the bottom of my pot. I feel like im doing something wrong too

      It is not enough fat in milk, just 3,7 percent and in cream it is 32 percent.
      Just try but it will not be as smooth.
      You may also add some powdery sugar to soften the toffee.

    my grandma taught me the soft ball method 40 years ago, it's how everyone did it before we had fancy candy thermometers. Cook longer and waiting until it makes a hard ball for hard toffee.

    I wonder if you can add coco or fresh apple juice for more flavors.
    Great consistency on the caramel. But when I've made caramel stirring didn't just give it crystals but it hardened a lot so I had to throw it and next time have water with a closed lid.
    Then I had to stir continuously, I only had a few seconds to remove it.
    If I did the water test then it would've burnt in the time you took to make the ball.

      Heavy cream or malai as we call it. Just strain it with a strainer to reduce that extra fat

    Simple and delicious caramel (dulce de Leche) can be made with a can of sweetened condensed milk. It is cooked while unopened, in the can. Remove the label. Do not open. boil the can, submerged in a pot of salt water on Simmer for a few hours. Alternatively you can bake the can in a water bath for an hour. The longer it bakes the thicker and darker it gets.

      My mom made this when I was younger just as you described. It came out like a thick caramel syrup and it was absolutely delicious!🥰

      But it wouldn't be a candy.
      Just tick caramelized condensed milk which is good to make a cream for cake if put to mixer and blend with butter.
