Theres a chef that offers professional chocolatier classes. I’ve bought a few courses and they are A+, her name is Melissa Coppel if you’re ever interested
i studied under a Callebaut master chocolatier when i was taking my pastry chef course. it was phenomenal the art and detail that was taught. it forever made me meticulous with regard to mise en place, patience and finesse when it came to creating. this was a joy to watch - thanks Bon Appetit
I was thinking of going to some of their courses, but i think it's a shame that they only show a couple of recipies. And it's a bit expensive in my country. I think maybe online courses are better. Not sure.
Powerful Michael Laiskonis. I've been following his career since 2004 and there's not even a slightly negative thing I can say about him. Truly one of the greatest minds and an incredibly humble human being. Thank you Michael
I loved watching the chef creating chocolates by hand! Some of my favorite jobs have been my chocolatier jobs where I got to play with really high quality chocolate all day and creating new flavors 😊❤
I absolutely admire chef Laiskonis, been a huge fan of his since my apprenticeship days. His pastry skills are a sight to behold. I hope you make more videos showcasing his talents.
I make handmade chocolates for my family every Christmas and I love working with chocolate, These recipes look incredible. I definitely want to try the nougat one for sure. Thanks so much for sharing. Lee :)
My mom and I used to make truffles all the time. coconut, cocoa powder, and nuts were popular. But we never dipped in chocolate first. Sometimes she would put in mint extract. Mint with the cocoa powder was awesome, big favorite.
Wow! So many tips and delicate details! I can’t thank you enough for the precise information you gave me although I have attended a professional course on chocolate! Thank you again 🙏🙏
Awesome video! It is one of the rare videos that covers the process end to end on a really high level. It's only missing the actual proportions but excellent otherwise. I've been making chocolate for a few years now and can tell his technique and understanding is spot on. Have to try the nougat next!
The best way I have seen handmade chocolate being made, I didn't skip a second and loved every second of this video, great content with a good amount of quality information. We definitely need more content like this on chocolate.
Fantastic immersion into the world of a true master. Absolutely mesmerizing. A+++. Please have him back, many times. He's "creative" director - is he ever! Would love to see his creative take on Christmas candy, Valentines treats or even Halloween. 😘
very interesting to see the tempering technique of using the marble slab and the ?spackle knife? on a portion of the heated chocolate and then reintroducing to the remainder chocolate to cool everything down to the right temperature -
i dont even really eat chocolate, but the intricate focus on every little detail still kept this super interesting. even though i immediately cringed at the 4 star intro quip
aight i cringed at half the french expressions in the video, but it was still super cool to see :D but if anybody reads this, for the love of god - its "nuh - got", and not "new - get" when trying to pronounce "nougat"
Can we get more videos with this guy? His narration is heavenly.
I absolutely LOVED this! I wish there was a regular series just on the expertise of a master chocolatier. I could have watched him all day. Well done!

You should check out Amaury Guichon, his channel is amazing
I will never complain how much eating hand made chocolates costs again.
😆👍
Same!!
Anything that is handmade. Time consuming with the infusion of special intent.
I'll make them myself before I pay for them
My budget only allow a bag of semisweet chocolate baking chips and a bottle of Cabernet Sauvignon
@@fancyincubus that sounds like a pretty great night in to me 😊

this man respects the chemistry.
This man cant define what an emulsion is, you must be American.
@@ljubomirjuraj9658 Define an emulsion.

@@vladimirpoutine4140 I was asking the dude who I replied to, but I know what it is xD
I appreciate the thought though.
Masters of their craft make something look so easy to make yet knows it takes years and years of repetition and practice. This video is awesome.
Good point

"sometimes I don't even use a thermometer I can just tell by the feel". The biggest flex to have ever been used on this channel.

Something about the process of making these chocolate treats is very interesting to me, love this vid!
Your mini food videos are captivating and full of creativity 🎥 The way you bring each tiny dish to life is nothing short of amazing 🌈
This is inspiring me to bake my own chocolate candy I mean this is some serious dedication to your own craft
This was so educational and entertaining to watch. Was not bored one bit. Great video
Whenever someone breaks out the actual vanilla bean, you know they’re serious.

This was so soothing & interesting to watch. Would have loved some measurements to go along with the instructions!
One of the best videos I've ever seen. Informative, calm, focused on the topic rather the person who does it. Awesome!
That was the most interesting 17 minutes I’ve spent in a long time!! 👏 👏 🍫
Bonbon = "good good" 😋
Yeah this guy is amazing, please make some more videos with him
Thank-you! This was really a lovely video! Passing on the knowledge of how to make beautiful luxurious candies is very nice of you.
This maître chocolatier exudes so much class and expertise. What an inspiration.
I’ve saved this in my “food and drink recipes to try”. But let’s be honest. I’ll never get to even near trying this.
Fantastic immersion into the world of a true master. Absolutely mesmerizing. A+++.

Gosh you are very accomplished in the art of Chocolate making.
At last a serious video about truffle making! it is crazy the amount of videos of clueless people teaching how to make truffles!

Wonderful. And the narration is so simplified and precise. 👏
It's magic. So beautiful.

I love Le Bernadin - my favorite place in NYC. You're a real talent I'd love to mimick these confections.
My toxic trait is saving this to my "baking and sweets" playlist, thinking I'll make this at some point..
I like that the chocolatiers apron is even tempered chocolate. Shiny.
super video. I love your voice. More videos please.😍
Can't wait to not even bother attempting this but still wanting to be able to do it
every one of there confections are a piece of art
This is a dangerous video. I'm likely to try and replicate a lot of this. I already have no life. Thanks! :P
He deserves a noble peace prize
