- See what I eat in a day with no oven. Today I share with you 3 WFPBNO recipes all made with out an oven. My oven stopped working and my new oven has not come in yet, so I got a little creative. These 3 WFPBNO recipes are so easy. The full recipe for all 3 WFPBNO recipes below. Enjoy!
POACHED VEGAN EGG BITES
1/2 cup yellow split mung beans soaked over night, rinsed and drained
1/4 cup unsweetened plant based milk
1/4 cup aqua faba
1/2 tsp each salt, onion powder, garlic powder, turmeric
1 tsp baking powder
2 T nutritional yeast
Black salt to taste
3 T chopped bell pepper
3 T onion
1 cup finely chopped spinach
Add the first 7 ingredients to a blender or bullet and blend till smooth
Then stir in veggies and mix well
Preheat your egg poacher on medium high heat
Fill each one with the vegan egg mixture
Cover and cook till set. Do not over cook or they will be very dry.
You can add any combo of veggies you like.
These are delicious on their own or as a sandwich or eggs benedict.
CHICK PEA NOODLE SOUP
CHICKPEA NOODLE SOUP
4 T water
1 med onion diced
1 carrot diced
1 stalks celery diced
1/2 chopped zucchini
2 tsp minced garlic
1 tsp each, onion powder, salt and garlic powder Italian seasoning
1/2 c red lentils rinsed and drained
7 cups water (sub veggie stock if not using bouillon)
2 not chick'n bouillon cubes low sodium
1 can 14 oz. of rinsed and drained chickpeas
2 c pasta ( I used gluten free)
1 cup or more finely chopped spinach
Heat the water in a large pot. I used my Dutch oven
saute the onions, carrots, and celery zucchini over medium heat for 7 minutes until softened. Add more water if needed
Add the garlic and seasoning and cook for another minute or two
Add the water and bouillon cubes and bring to a simmer. Add chickpeas and pasta and simmer for 10- to 12 minutes or until al dente. Stir occasionally.
Add the spinach and simmer for the last couple of minutes of the cooking time.
AIR FRYER PIZZA
any pizza dough you like. You will need enough to make an 8" -9" round pizza
pizza sauce of your choice
veggies of your choice
plant based cheese sauce
Pizza seasonings
Make sure your dough is at room temp. place dough on parchment paper. press out the dough to form a round 8 to 9 inch pizza, it should be 1/4 inch thick. Add sauce and a some plant based cheese, then add veggies and more plant based cheese.
pre heat air fryer @ 400 degrees for 1 to two minutes.
place the pizza into the air fryer basket and air fry @ 400 degrees for 5 minutes. The pizza will be soft, this is not a crispy pizza, do not cook for more that 5 to 6 minutes or dough will become hard. If you want to crisp up the bottom the add to a hot skillet and cook till bottom is crispy.

CHEESE SAUCE RECIPE
1 Yukon gold potato
1 carrot
1 to 1 1/2 cups cauliflower
1 tsp each salt, onion powder, garlic powder
1 T lemon juice
4 to 5 T nutritional yeast
1/4 cup soy milk or any unsweetened plant milk
1 to 1 1/2 cup cooking water
Chop potato, carrot and cauliflower
Add to a pot of water, bring to boil and simmer for 15 minutes or until fork tender.
Scoop out the veggies and add to a blender, retain the cooking water in case you need more water to thin sauce..
Add the rest of the ingredients and blend well.

Forgot to mention one of the BEST purchases I’ve made in years. A Ninja oven/toaster oven/air fryer from Costco. My air fryer was too big, worked well big too bulky and having a toaster on the counter as well was taking up too much room. This Ninja unit sits nicely on the countertop and if necessary it will flip up to fit under the cabinets. I’ve hardly used my oven since I bought it. I have to use the oven for just a few things, it doesn’t accommodate a loaf pan very well nor does a large casserole dish doesn’t fit. It works like a charm and doesn’t heat the kitchen up like the oven. Another great feature is it heats up very fast, so to get to say 400 in the oven take 10 to 15 minutes, it’s only a few minutes in the Ninja. Oh and I am not a spokesperson or employee of Ninja, I just like the product!

Hi Debi, Thanks for another great set of recipes. I made the egg bites using silicon cupcake "molds" and baked them at 350 for 30 minutes -- came out great. I also took some pre-veg, plain egg mixture and made an omelet in my skillet on medium/high heat -- cooked both sides of the 'egg' then added veggies. Worked great and did not stick at all.

All three recipes are great, I’ve been wanting to make some ‘egg’ bites to have with English muffins, haven’t made them in while. Wasn’t it you that showed us the mung bean omelette recipe or maybe it was scrambled ’eggs’? Anyway they are a delicious substitute. The pasta soup and pizza also looks so good and easy. I do some thing similar to your eggs except I use garbanzo flour and I put them in silicone muffin molds and bale them. Maybe I'll try a water bath. Thanks for the inspiration!

I love that you put the red lentils in your soup. I put red lentils into everything I make with red sauce. Like spaghetti sauce becomes thicker, increased fiber and nutrition. And you don’t even notice the lentils are in there.

I'm wondering whether the pizza could go on the DASH 8" griddle. Also I'd guess the egg bites could go into the DASH Egg Bite maker. I've long since gotten rid of my stovetop egg poacher when I gave up eating eggs. Who'd a thunk?
You could use the Dash, but you could also use the oven. Same with the egg bites, just pour the into lined muffin pan.

Debbie, I don’t have an egg poacher and decided to cook in a fry pan on the stove top like for just eggs.
the mixture was probably too thick for this, just eggs is thinner. The flavor is perfect but the texture was a little rubbery, so next time I am going to try the oven method. ? 350 for 20 min?
Yes 350 for about 20 minutes or until set. If you want to make them into a scramble make them thinner. Personally like them in the oven or the egg poacher.
@@ChewonVegan Oh boy, I made these in my silicone muffin pan in the oven and they came out just perfect at 25 minutes at 350! I'm eating a couple of them hot right now and plan to save a couple refrigerated to see if I can include them in my camping food stash in the cooler.

Yes, much different, and different consistency
Yes very different. You really don't even taste them.
That’s such a cool idea to make the mung bean egg that way! I tried it in a pan just like scrambled eggs and it did not work at all. Complete fail.
This method is so easy. I also like to put them in a lined muffin pan, that works great too!
