- What I eat in a day, going back to the basics of a WFPB diet. After gaining a few pounds last month I am going back to the basics of the starch solution. Feel free to join me! Here are the recipes for what I ate.
BREAKFAST
TOFU SCRAMBLE
INGREDIENTS
1/2 block xtra firm tofu pressed for 30 minutes
1/4 cup each of green and red pepper, red onion
2 mushrooms sliced
small prebaked potato chopped
handful of baby spinach
spices season to taste
onion powder
garlic powder
black salt (link below)
turmeric- enough to give it that yellow scramble egg color
INSTRUCTIONS
Start by sauting veggies in a non stick skillet with a little water for a few
minutes on medium heat. Next scoot the veggies over and crumble tofu into pan, add the spices and the potatoes and stir everything together and let cook for 5 minutes, taste and adjust seasoning if needed, then add the spinach and let wilt for a another couple of minutes. you can hot sauce or salsa if you want.
LUNCH
INGREDIENTS
1/2 of a 12-14 ounce bag of a frozen southwest veggie blend make sure it includes beans.
1 cup steamed broccoli
prebaked potato chopped
1 T nutritional yeast
1 T plant based cheese sauce
salt to taste
garlic powder, onion powder and cumin 1/4 tsp each
romaine lettuce chopped or shredded
salsa
INSTRUCTIONS
Preheat a non stick skillet and add frozen veggies, cover with lid and let cook for 5 minutes over medium heat, Then add the broccoli and potato and spices. Let cook for 2-3 minutes then add cheese sauce and let cook for another couple of minutes, taste and adjust seasonings as needed. Add Romaine to a bowl and add veggies over lettuce, and top with salsa.
DINNER
CHEEZY CHICKPEAS
1 can low sodium chickpeas with juice
1 T coconut aminos or soy sauce
1 T gluten free flour
1/2 cup nutritional yeast
INSTRUCTIONS
Add the entire can of chick peas with the juice to a sauce pan. Give the chick peas a bit of a mash. The add the rest of the ingredients and let heat through over medium heat.
I like to pour this over a baked potato and add a side of veggies.

That’s right what I need. I’ve lost about 28 pounds during 4-5 months by going WFPB and oil-free, but then some „cheating“ sneaked in in the form of processed plant protein and vegan ice cream. Now I’ve gained 4 pounds during a vacation, and I want to loose about 13 pounds until November. Thank you for sharing your journey. Love your no-nonsense approach to cooking.
@@zerogoldfish201 I don't like to use the word cheating because it implies you did something wrong, which you didn't. You ate a few things off plan. Don't be too hard on yourself we all veer off now and then. Look how great you are doing. You lost 28 pounds. That's amazing. Just get back to basics! Thank you for watching my videos:)

My favorite lunch is cheezy chickpeas! I make a batch in the morning before work and I get 3 lunches. I do add a hearty squirt of dijon mustard and a dollop of hot sauce. So delicious spooned over a microwaved potato. I top with broccoli and some sliced grape tomatoes. Heat it up at work and enjoy while sitting in my car. The perfect lunch. Yummy yum yum. I can eat it every day. 😎❤️

Hi Debbie. I just love your channel so much. I made rice paper tofu thanks to your idea. Debbie it was so good. Too good. I marinated it with the 321 dressing. I cut the tofu in French toast stick slices and after wrapping it in rice paper , I air fried it. When I tasted it i fainted lol. It was so good. Thank you for the info on tofu cause Ive been apprehensive to eat it as it is higher in calories. I feel better now.
Wonderful I am so glad you faced your fear about tofu. I had the same fear and was so uneasy about it but once I learned how to cook it it was a whole new world. Now I eat in all the time. There are so many options with tofu. Enjoy it
i like ur idea about cutting it in french toast stick slices! i have frozen tofu ready to try this recipe.
@@laurenbendik2006 lauren I had some today with a side salad. I've always loved tofu but was bummed when it was suggested not to eat it too much because it calorically dense but after debbie said enjoy it I'm no longer afraid. I will be careful not to overdo it tho. Let me know how yours comes out.

Thank you💚 most of the time eliminating dairy and gluten will have a huge effect on clearing up skin issues. I suggest you read the starch solution and start slow. It doesn't have to happen overnight. Good luck.

Great video!! I think simple is always best for me. Once I start to complicate things then I eat the wrong foods. I have lost 39lbs since 23rd Jan eating this way. I am feeling better than when I was in my 30s! Still got 16lbs to go but that’s ok it will come off eventually!
Don’t worry about your gain, I’m sure you will lose it. At least you know what works

I know you gained 4lbs. But you look fantastic to me. 60 years old. Only need to lose 10lbs. It's been impossible to break that 150lb line. Not Vegan and that's ok. Incorporating vegan meals now. I'll try your basic meals. See what happens. Never seen cheesy chickpeas. Definitely making those.
Thank you! The starch solution was the only thing that helped my lose the last 15 pounds. Eat as plant based as possible and you will get there. Baby steps, it doesn't have to be all or nothing to make positive health changes. You are going in the right direction. Good Luck💚
I’ve seen that chickpea recipe before but have never made it. I started cooking my own chickpeas from scratch so I will save some of the cooking liquid to make this recipe. Thanks for this series as I need it.
I need to do that more often and cook my chickpeas in my pressure cooker. Thank you for watching and I hope you enjoy the series💚
@@ChewonVegan I couldn’t believe the difference in taste and texture. I do 15 minutes in the instant pot and then let them sit for another 15 minutes. I do soak them overnight as it makes a difference too. And then I freeze some.

The Just Egg is really good too for every once in a while. It's just like scrambled eggs!
It's shocking how much food we get to eat on this diet without gaining weight. Seriously.
For me, the complete game changer was the flavored Balsamic vinegars we can get these days. No fat, tons of flavor. Makes salad and vegetable eating a whole new experience. I've lost 7lbs in the last 2 months while never going hungry.
California Balsamic has a Hickory BBQ flavored Balsamic that's EXACTLY like BBQ sauce. Curry, onion, garlic, Italian herb, and then the fruit flavors which are sweet. Honestly, I've not used oil since. And I cut out avocado. The weight just fell off.
It's the fat and oils mixed with white flours that's killing us. Cut those out and you're golden!

For the tofu scramble is that a single serving that you make with one block of tofu or is that multiple servings?
I used 1/2 block and that was a single serving.
These meals look so good!! Thank you!! I can’t wait to makes these! Can I ask how tall you are? I’m trying to get to 135 but cannot get below 150. I have been doing starch solution since Oct. my measurements are going down and I hoping the number on the scale will start moving soon.
I am 5' 6" . Keep at it and be consistent. I had to really look at what I was eating and making sure I was eating foods that are 600 calories per pound and below. I was also eating too much. Eat till you are comfortably full not stuffed. You got this💚

I see alot of vegan influencers using the Always pan. It's so expensive but I kinda want it.

I make my tofu scramble almost exactly the same. I add a little vegetable broth and a bunch of nutritional yeast. I recently had to cut out potatoes due to allergies 😫
I love tofu scramble, bummer about your potato allergy. I hope you can have sweet potatoes and of course their is always rice and pasta.

No raw vegetables? I have a humongous salad with homemade hummus and an air fried potato for lunch.
