@@ChewonVegan Just trying to help, my husband almost died on that diet. They told him that being vegan or eating processed foods is killing people, keeps them rolling in money. Processed foods have no food value, not even so called plant based. We went over to Dr fuhrman way, and now my husband is off blood pressure and getting better. I did feed him 2 quart glasses of homemade juice, veggies.
I never cook/prep. Frozen veggies, beans, rice, potatoes, corn, peas, lentils already cooked (some have up to 2-3 grams fat per serving, one raw vegetable per meal also, fruit, and for dinner oats + blueberries/blackberries. Nutritional yeast, omega 3, tofu, vitamin D for micro ratios. No fat sauces (teryaki, sweet chilli, barbecue, salsa, muhamara, etc). Very simple and cheap. Sometimes I make a dessert: plant milk + rice + cinnamon + optional fruit, baked pears, baked apples, apple pie (no oil/sugar added), aired popcorn, whatever. My meals ready in 5-6 minutes. For those who really don’t have time to cook/prep, or feel overwhelmed.
I like to add red lentils into any recipe with red sauce. It thickens it, no one really knows it’s there unless they look closely, and to me I cannot really even taste it, depending on how much you add. But I add it to tomatoe based soups, marinara sauce, anything red. And really, since they change color once cooked there are other foods you can add it too as well. Really helps me to bump my protein. I am a bariatric patient. Sadly many years ago in the 1990’s I made the decision for roux en y with gastroplasty. So. I eat five small plant based meals a day instead of two or three to get enough protein in. And the bariatric surgeon told me to aim for only 60 grams a day. But, I have learned whenever I let my protein go down to 50 or 60 grams a day I gain weight. For instance, I recently over a period of about four months was not feeling well. I think my calories eaten actually went down, and as a long distance hiker, my activity level plummeted. Over four months I gained forty pounds. So. Now I am finding myself back eating to lose weight ( while hiking so much I was actually struggling to eat enough to keep my weight up. And as a 66 year old woman who yo yo dieted so much of my life, I think I destroyed my metabolism. I have to eat high protein and keep active and moving to keep my weight under control. Heck, even riding my motorcycle seems to use a fair amount of calories. So now that I am feeling well again, I find myself at the gym , starting to hike again and riding my motorcycle. ( it’s a three wheeler…..lol….😅). Next spring I will be doing a 500 mile hike in Spain and shortly after that , about a week another two hundred miles in Scotland. So am at the very beginning stages of training after two recent surgeries. But Dr has released me, so here I go!!

You are so welcome! Here is the recipe for my dressing 3 T balsamic vinegar ( I like to use flavored vinegars) 2 T Dijon mustard and 1 Tablespoon maple syrup. Add it all to a jar and give it a good shake.
I have been WFPB for nearly 4 years and from the start I have done this same type of prep. Works beautifully. Be mindful of buying just enough groceries to get used up within a few days.

For arthritis people like me you can cube the tofu into dice that fit on your fork, if that's easier for you.I can't crumble or wring but knife is ok for me.
Good, down to earth, nutrition balanced and tasty home cooked meal (and no nasty slaughterhouses involved!) I enjoyed the presentation, it was detailed, generously explained, and not overly fancy, pretentious, or show-offy. I have tofu in the fridge and was going to make my usual soy sauce marinated steaks, but I think I'll try this instead!

Thank you so much! As far as servings size, this is probably 4- 6 servings. I didn't figure the macros for this one. But you can input the ingredients into Cronometer or my fitness pal and you can get the macros that way. These are both free app.

Should’ve added a can of fire roasted tomatoes to the taco TVP mixture. I always do. It adds the right amount of liquid you need to make it saucy.

If you have freezer space some of it could be frozen. Like the potatoes, scramble, lentils, taco mix, green bean and broccoli mix.
