- Vegan what I eat in a day WFPBNO is what I will be sharing with you today. Today's meals will feature the mighty bean. Beans are so important to add to our diet. They contain lots of fiber, which helps your gut microbiome get healthy. The full recipes are below and be sure to check out everything in the description box for all the resources I offer.
BREAKFAST
Mung bean eggs in a hash brown nest
4 cups defrosted frozen no oil hash browns or 4 cups grated potatoes that have been prebaked or steamed and refrigerated for overnight.
3 mushrooms chopped
1/2 cup bell peppers chopped
1/2 cup chopped onion
garlic salt
onion powder
smoked paprika
chopped cherry tomatoes
1 1/2 cups chopped spinach
Preheat oven to 400 degrees
Season hash browns and press into muffin cups. Use a silicone or non stick muffin cups.
Press some of the hash browns into the cups making sure to go up the sides making a nice little nest for the eggs.
Bake for 20-25 minutes or until they start to brown.

• How To Make A WFPB Veg...
In a non stick pan add some water and saute the mushroom onion and bell peppers for about five minutes then add spinach and cook for 2-3 minutes until it wilts down an bit. Add to a bowl and let veggies cool for about 5 minutes. Add the egg mixture to the veggies mix well.
Add 1 Tablespoon of egg mixture to each of the hash brown nest and add some chopped cherry tomatoes to each and bake for another 20 to 25 minutes or until it is set. For any left overs you can make scrambled eggs or it will keep in the fridge for about 5 days.
LEFT OVERS FOR LUNCH
I used left over rice, steamed broccoli and marinated tempeh* Add to a bowl and heat. Top with Japanese BBQ sauce or any sauce you like.
*MARINATED TEMPEH
1 package of tempeh cubed
Japanese BBQ sauce
Add the tempeh to a container with a lid and add enough BBQ sauce to cover tempeh. Refrigerate for a few hours or overnight. Flip the container a few times during the marinating process.
When ready to cook drain off excess sauce add to your air fryer @400 degrees for 12 to 15 minutes.
CREAMY WHITE BEAN AND KALE SOUP
2 cans white beans rinsed and drained
1 carrot diced
2 celery stalks diced
1 onion diced
1 small potato diced
2 1/2 cups or more of veggie broth
3 tsp minced garlic
1 tsp salt
1 sprig of fresh rosemary or 1/2 tsp dried
1 Tablespoon Italian seasoning
1 Tsp. oregano
1/8 to 1/4 red pepper flakes (optional)
5 ounces chopped kale
In a large pot add some water. On medium heat saute the carrots, onions and celery for 6-7 minutes until soft. Add the spices and garlic and cook 1 minute. Add the rest of the ingredients except kale. Make sure there is enough liquid to cover everything if not add more broth or water. Bring to a boil and simmer for 20 to 25 minutes. Remove the rosemary stem and add the kale and stir for 1 minute, then turn off heat cover and let sit for 5 minutes.

Tim just watched you make the breakfast potato mung bean thing and was like "We are making those!!". So I think that is on our to do list. We have made something similar but we never cooked the potatoes first. I think that changes the recipe for the better. Lunch was a winner. I loves me some tempeh. The soup was right on the money. Loved everything you ate today. I swear, meat eaters dont know what they are missing.
Really nice beany recipes, they look delicious. I liked the way you mostly just called your filling eggs, and mentioned scrambled egg. It's this type of usage that will help eating plant-based eggs the norm, nice one!

Oh my goodness Deb, I absolutely love this idea. I was vegetarian from 16 years old to 36 years old before I turned vegan and way back then I used to take little omelette cups to work with me and that’s one thing I still miss huge, even though it’s been 44 years since I started this journey, eggs is one of the things that was always so versatile and easy to whip up quickly. I am so going to do this. I am soaking some mung beans right now for tomorrow. 😃
