Ok, this soup is D-lish!! I must admit, I'm not a vegetarian or vegan, but after watching this video, I rushed to the store and got all the ingredients for this and also the pumpkin/ricotta shells! I'm super excited to try that as well! I'm a single 47 year old guy zesting lemons for a Gremolata!?! Who am I?? 😂 Needless to say, thank you for inspiring me to step out of my comfort zone and try something new! 🙏💕

I made this with less than half of the ingredients (no fresh herbs or kale, just used dried herbs and spices and frozen spinach, and used a teaspoon of flour instead of potatoes) and it came out tasting like a restaurant meal. So delicious! I imagine the original recipe is phenomenal.
You could do a voice for a Fairy or Princess in an animated Disney movie.

Literally just watched this video and realized I had all ingredients I needed and hopped up to make it. I didn’t have white beans so I used chickpeas instead and threw some red lentils in for some extra protein and it was INCREDIBLE!!! Such a good cold weather soup now that’s it’s getting cold here in Chicago! Thank you for the recipe!!

I didnt have white beans but used canned red ones and hope turns out ok…
Just made this today and followed directions to T with one exception. I used baby spinach instead of kale because it is what I had on hand. SO GOOD! It will be one I repeat often. Thank you!

This soup is SO good... it has become a staple for me.. it’s even very delicious without adding extra herbs and the artichoke hearts. I love it!!

Just wanted to thank you for the tip on preserving my herbs longer. This week I had to throw away my rosemary and thyme- I only got to use them once or twice! It hurts to throw it away.

Low moisture fresh herbs like rosemary and thyme should never be thrown out just because they dried out before you could use them. Even dried, they will still pack a lot more flavor than store bought dried herbs which may be up to a year old before they're packaged and sold.

This one deserves a comment. I have been tired of eating meat all the time and was looking for a simple vegetarian soup. I stumbled upon this recipe and honestly thought that it may be way above my skill level but I decided to try it. After trying this recipe, I now thinking of cooking as a true art! I would never think that pairing some the ingredients would produce such a rich flavour. My mind is blown and after binge watching your videos, I may be on my way to becoming a vegan. I want to try everything! Thank you for sharing this dish and taking the time to thoroughly explain the process.

I made this yesterday (Sunday)...and I will enjoy for the week. So good. Thanks for the inspiration. I changed it up a bit. I added more greens -- kale and spinach. The idea to cream 1/2 of the beans (I mashed with a potato masher) to make it creamier -- YES! Love this recipe---it's my new soup for winter. Thank you!!!

I made this for dinner today and I. Am. In. Love. Best soup I've ever made and the first time making anything entirely plant-based. I'm SO STOKED! What a soup! The gremolata was so incredibly worth the few minutes of chopping. My partner could not stop remarking on how good it all smelled while it was cooking and how YUMMY it was once we were digging in. Absolutely heavenly, thank you for the recipe, guidance, and tips!!!! I'm excited to keep coming back to this channel as I keep on building plant-based habits and meals.
Thanks for the video! I made this tonight, and it came out great, even with several substitutions: extra carrots and potatoes for celery and artichokes I did not have; spinach for kale; marjoram for rosemary; dried basil and parsley for fresh, and a teaspoon of lemon juice for lemon zest. I also cut up and tossed a few small mushrooms that were around.
I sprinkled a little organic virgin olive oil on the first bowl, but don't see the need for adding that extra fat to an already tasty soup. Looking forward to the leftovers, and making it again but with all the original ingredients.
Note: your written instructions don't actually state when to add the Gremolata to the soup.

Your recipes are always so beautiful, flavorful, and full of color and fresh, whole ingredients. Even more-so, most of the ingredients are very easy to find and cheap. I really adore it so much and I am so happy I found your channel! It makes my life as a vegan college student who cares about eating nutritious foods much easier.
This was so awesome and it was the perfect close to a day of smoothies, so warming and hardy! I added great northern beans to the cannilini, because I trippled the recipe and didn't have access to fresh herbs, so I used dry. So delicious!

I had a can of artichoke hearts at home (my ex bought it, so at least for 2 years), never knew what to do with it, so I decided to use it in this soup. What a beautiful way of freeing up space for new and better memories! Thank you :)

I'm in love with this soup and making variations of it. My favorite so far has been adding cremini mushrooms sauteed until brown with chopped fresh thyme, which was a test replacement for pancetta that I saw someone use in another recipe. Also riced cauliflower is an excellent addition especially the texture it adds. I like to sautee or roast everything whether I add a potato or cauliflower, getting some color on it gives the soup such a rich flavor.
I just made this tonight. It is SO GOOD! Even my kids that are not fan of veggies said it was yummy! We just added a garlic bread on the side. Thanks for teaching us more tips on how to flavor our food!

Amazing, a herald of a new generation of soups. For the first time in my life have I found celery so much in its natural habitat, in no way overpowering but mingling with the senses. Superlative.
I used spinach and kale in mine, still really good. On a cold winter night like tonight, I wanted a hearty, warm, yummy, nutritious soup and this hit the mark.
My family doesn't like kale so I also substituted spinach and they loved it.
Tried it for Thanksgiving. Everybody loved it!! Thanks a lot Nisha for actually introducing me to so many ingredients 🥰. Also loved that extra saving tip too.

If you want to use parm cheese on top, skip the red pepper flakes because it is heavy on the stomach. I have tried this with parsnips for extra vegetables and it also came out really delish.

Thank you so much for the idea of freezing herbs in oil, I needed that. My daughter is vegetarian while the rest of the fam is not. I will make this soup as my base and then split adding ham for the rest of the family. This is a beautiful soup that I know will taste great - she will love it.
I always enjoy her recipes and presentation. When I cook with onions, I keep the peel as whole as I can and cook it as well. It gives off much flavor as well as some salts to the dish. Keeping it intact allows you to pull it out at the end of cooking.

Hi Priya, yes that should work, you probably want to simmer the collard greens for a bit longer since they're tougher than kale leaves.

Just made this soup for dinner and it was a super hit with everyone! My friend says she could eat it everyday and even for breakfast. The gremolata topping, which I have made before for one of her other soup recipes, was the kicker. I do add the lemon juice as well. This is a sure-fire winner to add to the regular repertoire.
