People don’t even use common sense anymore. If you don’t want to use canned chicken, cook your own. If you don’t want to use processed cheese, milk your cow and make your own. As he has said before most all recipes are a suggestion. Surely you’ll can take an idea and make it your own. I, for one, appreciate the time and effort they spent making the video.
You hit the nail on the head some people are not getting the message.
and if you don't like the recipe, go out to eat.
The only thing I would change is garlic powder instead of garlic salt, and I would eliminate the salt, as soup is high in sodium. I have to watch my sodium intake. Otherwise, the recipe is fine if you don't have restrictions.
The problem is: UA-cam is run by idiots.
That’s why I don’t read comments, there is always someone complaining! Why, no one makes them watch! Be kind!
Great teaching style. Good for beginner cooks. Many hold up an ingredient for half of a nano second. I was reminded this recipe is in my church’s cookbook from the 80’s and I’ve forgotten to use it. I now have it bookmarked for next family meal. I appreciate the kindness shown to each other and that a special guest is acknowledged.
You can tell Tom was a Teacher! Point by point clear instructions!!
I love the way that he clearly explains everything. And I love the way that he shows each ingredient and tells you about options to adjust to my own tastes. Thank you for all of the great recipes.
I like the way you spread everything out so evenly. I detest when some cooks leave a corner half empty so whoever gets that corner is cheated out of some ingredients.
We agree! We try to keep anyone from getting “uneven”bites. Thank you for watching.
Oh plz karen 🙄
And they dont scrap the bowls that drives me crazy lol😅😂
Meee too!
@@58sewgood maybe they scraped the bowls off camera
I appreciate that you show all the ingredients first. It makes following you much easier. Thanks!
Absolutely agree!

You do a wonderful job showing how you prepare things. You are very detailed and make everything so simple. I wish my husband had learned how to cook but he really doesn’t have an interest in it. Your wife is very fortunate. I can’t wait to try this dish.
A rotisserie chicken would be great too. This looks delicious. Thx
We hope you enjoy it. Thanks for watching ! We appreciate it!
I’m going to make this soon, it sure looks good ( and easy).
Yes I would prefer the supermarket already cooked rotisserie chicken than the canned chicken but canned is a good alternative is you aren't able to get out the house or short on time.
My Mom used to make the original version of this in the 80’s. It was a Rotel tomato recipe called Hot Rotel Casserole. It only uses 1 can of Cream of chicken and just regular crushed up basic unflavored yellow Tortilla Chips (if you want to avoid the MSG in the Doritos). We split the layers of the chips: one in the bottom as the first layer and the other as the last layer on the top. It tastes like Chilaquiles from the Mexican restaurant. The first time my Mom made it my Dad said “Yum! What is this called? Please keep making it”. I make this often for my own family whenever I buy a rotisserie chicken. I can smell it thru the video🤤🤗💛
We love your story! Thanks for sharing it. We really enjoy this meal. Thank you for watching.
I can’t use the cream of soups due to our daughter having celiac disease but I’m thinking I will make a gluten free cream of chicken sauce and use a small, maybe 8 ounce tub of sour cream to make it it creamy.
Thank you for mentioning your recipe uses only 1 can of soup.
We buy a rotisserie chicken from Costco once a week so I will try that too.
@@louettesommers8594 there are recipes out there if how to make homemade cream of chicken soup you may want to look into. I don’t want MSG in my foods so I buy Kroger’s Simple Truth line of Cream soups (they make both a Chicken and a Mushroom one) bc they don’t have any blatant or hidden MSG ingredients but I’m not sure about gluten issues.
okay so it's like chilaquiles, that makes a lot of sense! n_n thanks for sharing.
@@louettesommers8594Campbells makes a gluten free cream of chicken soup and mushroom as well. Walmart also has gluten free cream of chicken soup and mushroom soup as well.
I watch for your videos every day, in case you share a new one. I too love the way you cook as well as how Melissa videos; you 2 are a great time. Thank you for preparing your meals so precise and neat, lots of your viewers notice that. I am making this dish today, as soon as the kids and grandkids come over. Thank you again for the time and effort putting these videos together. God bless you both
Looks DeLish❤
This looks yummers. I think I would add some black beans as well!
Made this for supper tonight and we all loved it! I used enchilada sauce instead of Rotel and fritos instead of doritos and my own home canned chicken instead of cans (had to use what I had) but it was really good. Thanks for the recipe.
We’re so glad it turned out well and you enjoyed it. Thanks for the great feedback!
Sounds perfect 🤩
Yumm
Sounds good to me @debragriffith6628

😮😮Homemade canned chicken? Plz share how you do that with me plz!!!! ❤
Love your recipes and you are a very clean and neat cook. No sloppiness what so ever. You take your time to do a good video, and that does make a big difference in how others love to follow you. Keep it up!
I agree. It’s very relaxing to watch due to how neat and organized everything is. I like the pace of his voice and movements. Can’t watch when people are speaking rapidly .
Awwwwwww….. I love your daughters dog!!!! Sweet!!! Plus, I’m going to try this recipe for sure! 👍😁. Thank you Tom & Melissa! ❤️🙏. Deb. From Indiana.
I'm so sad to tell you that we lost Maisey to cancer. It was heartbreaking. She was the sweetest dog!

We love Mexican cuisine, soooo, I will probably add a black bean or refried bean layer and sprinkle some chopped cilantro in with the soup mixture. What I like about casseroles is you can always mix it up for variations. Bon appetit.
The black bean layer sounds good too!
Heyyyy, those are good ideas! You're a smart cookie! Thanks for suggesting a variant to what already sounds good,
My husband is not a chicken person so I use ground hb with taco seasonings! I add 2 mushroom, 1 chicken soups
You know I bet you could put a rice layer!
@@debragreen7272yes, I would mix the rice in with the chicken and add a little taco seasoning to it
I just wanted to tell you how much I enjoy your videos , I'm not much of a cook since my husband passed but you inspired me to try the Mexican chicken casserole & I liked it so much that I just made it again but this time I used ground beef & condensed tomato soup , I did it exactly the same with these ingredients & it is so good ! Thanks for the inspiration and God bless you and your family!
Oh my goodness..now let me tell you something. I said I was going to try this one..I did for supper tonight..it was a HIT..!! My grandson LOVED it and so did my daughter..it was KNOCK YOUR SOCKS OFF GOOD..! I WILL be making this again..WOW it was so GOOD..!!!! Thank you for sharing this recipe..!! I didn't use a 9 X 13 pan as there is only 3 of us here. I used a 9 X 9 pan. It is the perfect size for us. So needless to say I did have to reduce the measurements. Ok I got to get off here..I got to go get seconds..lol..
I love your show. I'm in north central Oregon watching you and watching heavy snow coming down.
Thank you my dear friend loves the recipes I share.
Bless you both
Love your recipes! I have tried many. Thanks for sharing. Will definitely try this one.
Ahh, this sure looks tasty! Love your channel, your recipes, your hospitality. Feel as though I am right there with you two!
This looks great! Your special guest is precious!❤
I love the way you cook. I just discovered your channel and I love it. Keep those great recipes coming.
Thank you for the encouragement and we’re so glad you’ve joined us!
I made this exactly as described, it was delicious. I ended up baking it for 50 minutes to get all the edges bubbly, it's pretty dense. The next day leftovers were really good too.
We’re so happy to hear you enjoyed it. And we think the leftovers are great, too! Thanks for watching.
Love this! I've been making a variation of this since the early 80's. Great thing about it is that you can change it up just about every time you make it. For the first layer I use plain Doritos, then chicken, onions & chilis then cheese (Velveeta & Cheddar/Jack). Then black olives & diced pimentos. Just one can of Cream of Chicken and one can Rotel. With the Rotel, no need for pepper and with the soup and cheese, no need for more salt. I mix the soup/Rotel with Mexican oregano, cumin, garlic powder. and spread over the top.
I never had a name for it, but one time a friend from out of town was staying with us and he asked for me to make that chicken stuff, you know, that chicken s***. So for the last 20+ years we have called it "Chicken Sh**". LOL!
Love your channel by the way!
I loved your story. Thank you so much for watching and supporting our channel. Have a great day.
Years ago my son brought home a recipe for Mexican chicken and rice. His friend’s Mom had made it, and he loved it, so we’ve made it many times. It was made in a pot completely. I may try yours, but we really love this recipe, so not sure I’d replace that recipes for yours.
Can you add your recipe
I hope it’s all right to post a recipe I’ve made for Mexican Chicken and Rice.
1 Tlbsp oil, 1 pound boneless chicken breast, cubed, 1 small onion, 1 small green pepper (I prefer red bell pepper), chopped, 1-10 ounce package frozen sweet corn, thawed, 1 cup chicken broth, 1 cup mild (or level of heat preferred), 1 and 1/2 cups Minute rice (instant), and 1/2 cup (2 oz) shredded Cheddar cheese.
Twenty-five minute prep time. Heat oil in a large pot on medium-high heat. Add chicken, onion and bell pepper (this is raw chicken). Cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to a boil. Stir in rice and cover. Remove from heat. Let stand covered for 5 minutes. Fluff with a fork. Sprinkle with the cheese. Cover and let stand 2 minutes, or until cheese melts. Makes 4 servings.
As I have commented before, I LOVE your videos and your style of teaching. I have prepared many of your recipes and they are my go-to when I am cooking for someone besides me. This will be my next one. I just make your Teriyaki Crock Pot meatballs and buttered noodles, and it was a huge hit with the 2 college boys who rent my basement apartment. Tom and Melissa, you are the best!!!
Thank you so much for those kind words. We are delighted that you've had success with our recipes. We love that kind of feedback. It's so nice to hear from you!
We are trying this very soon! I love how you lay everything out in the order of usage. It must be the teacher in you! Retired elementary school teacher here!
Teachers can be spotted a mile away! 😊 We are very happy to have you watching and we hope you enjoy this casserole.
I would stir the dry seasonings into the soups and not try to distribute over casserole with the measuring spoon. Run the risk of dropping the seasoning all in one clump using the measuring spoon.
Oh everyone's a professional chef in the comments, aren't they?
Will definitely try this Casserole. You and your wife are so kind to each other. Love your videos!!!
I'm new with this channel. The recipes sound good and interesting. Tom (?) seems so comfortable talking on camera, and explains everything with ease. I would've guessed a teacher, and was glad to hear he was one. I bet he was a great teacher.
Welcome to the table with us! We are so glad you're watching. I'm a bit biased, but in my opinion, he was THE BEST teacher! His students were so lucky to have him. I think his teaching skills shine through on these videos. Thank you so much for watching our channel. We hope you're having a great day!
Looks so good!

Thank you so much for sharing all of your delicious recipes! My family and I really appreciate it! Great for back to school dinners! We are out here in Oregon, by Mt.Hood. We start school the day after Labor Day. Thanks again, we love your UA-cam channel!🤗

We hope you enjoyed it! And we want to say how much we appreciate you for watching our video!
This looks great for a fast go to recipe just love to see a MAN in the kitchen either cooking or better yet “helping”. A little long in the instructions but better to have more info than not enough. Thanks for sharing I enjoyed it😊
Casserole looks delicious ❤

Looks great! My grandkids will love this one!
Thanks for joining us!
I’m definitely going to make this casserole! Looks delicious
It looks very good, thanks guys! I do agree the sodium content is high, and since I have high blood pressure, l too would have to cut out some of the sodium. It's too bad that some people in the comments have to criticize those of us that need a low sodium diet. But there's ppl like that in every crowd, unfortunately.
Thank you!
I love y'alls channel!! I especially love how everything is scraped clean. Other cooking channels drive me crazy wasting ingredients.😂
Oh my 😮😍🔥 I’m definitely making / trying this ! Ty ❤
We hope it’s a hit with you and your family!
I love you brother you are one of my favorite channels this looks so delicious I have got to try! God bless you both!

Perfect, I have a couple of cans of canned chicken that I have been trying to use up. This looks so good can't wait to try it. Thanks!
Great Video!! Liked the way you explained it all. T hank you. Can’t wait to try it. Looks delicious.❤
Hope you enjoy!
Too much salt. Substitute garlic salt with garlic powder. Use real tortilla chips than Doritos. Use real cheese than Velveeta.😮 Otherwise, it is a good recipe.
I love the way you explain all of your videos and shoe all the ingredients
Definitely going to make this but cut in half to keep cost down. Thank you for the detailed video (great camera work too). 👏👏👏👏
Awww a compliment to the videographer! 😊. We are grateful you watched our video! Hope your family enjoys the casserole!
How neat to see this video. My mom got this recipe from her aunt in TN in the 80’s. We call it chicken tortilla casserole. So many variations and yours looks delicious too ❤ canned chicken! Never thought of that!! What a time saver!
Sometimes a time saver is all that keeps us out of the fast food line! While we agree anything totally homemade is better - sometimes we are so grateful for a shortcut! Life can get hectic!
