BEEF ENCHILADA CASSEROLE how to make / with homemade ENCHILADA SAUCE ❤

- This is a modern version of enchiladas, BEEF ENCHILADA CASSEROLE is a meal in itself, I serve it with the traditional refried beans and mexican rice or with a simple salad and avocado, and you can't forget the sour cream...the key ingredient for enchiladas is the rich flavor of the chili powder, paprika, and corn tortillas, and it's so much quicker in a no roll casserole. BEEF ENCHILADA CASSEROLE can be made the day before then refrigerated until ready to use and it will definitely be a hit in your home.
● CHECK CASSEROLE IN THE OVEN AFTER 25 MINUTES , IF BUBBLY, ITS READY OR LEAVE IT A LITTLE LONGER. (REMOVE FROM OVEN WHEN BUBBLY)
MEAT INGREDIENTS
1 LB. 80/20 ground beef (drained)
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp pepper
1 tsp salt
2 TBSP canned green chilies
ENCHILADA SAUCE
3 Tbsp melted butter (unsalted butter) (you can add little bit more if needed)
3 Tbsp All purpose flour
2 1/2 Tbsp chili powder (I used Gebhardts)
1 Tbsp paprika
3 C. Chicken Broth (low sodium)
2 tsp garlic powder 1 tsp onion powder
1 tsp ground cumin
2 tsp tomato paste
1 tsp chicken bouillon (you can add more if you like)
1 tsp oregano
1/2 tsp sugar
1/2 tsp pepper (you decide)
TASTE AND ADJUST
TORTILLAS
3/4 C. vegetable oil
12 corn tortillas (depending on your casserole size)
ADDITIONAL INGREDIENTS
3 C. Colby Jack Cheese (freshly grated)
Finely chopped onions (to your liking)
Sour Cream (to your liking)

Im a firefighter, I usually do traditional enchiladas however, since we are a busy station, this is way faster to make! THANK YOU
Today is my husband’s 75th birthday, and he requested “his girl, Rachel’s” enchiladas. We have made many of your recipes, and have loved every one of them. I only began cooking during the pandemic, and still am very much a novice. I really appreciate the care you take to explain each step. You’re an excellent teacher. Also-my husband and I say, “Just like that!” to each other constantly. We think you’re adorable! x
You are amazing Rachel love watching you cook all your amazing dishes. Thank you so much. 😊
Didn't say how long in the oven.

Rachel, I live in Phoenix AZ where there are many Mexican food restaurants. I made this for our dinner today and they were the BEST enchiladas we ever had! So delicious, and I over-ate! Thank you for this recipe and all your videos. You are a joy to watch.
I live in north phoenix. What is your favorite Mexican restaurant here. Have you ever tried topshelf Mexican restaurant? Im always looking for a new good mexican resturant. Thanks!

Hands down! Best enchilada sauce! Delicious recipes from the cleanest, tidiest, best instructor. Thank you Rachel!
I have bought enchilada sauce in the can for years, I never knew it was so easy to make. You are the best teacher. You explain everything and make it look so easy. Your husband is one lucky guy! Thank you Rachel! 💐

Rachel, it is the next evening and I made this casserole for dinner. I am telling you that this is absolutely one of the most delicious dishes I’ve ever prepared for us myself. I have made many things at home and they were a “flop” but we ate and ate until we were afraid we would be sick!!! Thank you so much. I will be trying lots more of your recipes and I will for sure be referring people to your channel❤️❤️❤️

But for how long was it in the oven?

Nothing better than "wet corn".... Drool.
I just made this and I’m ashamed to say, I ate the whole thing by myself lol. I just kept going back for seconds and couldn’t stop myself!! It was SO good. Just as good as any Mexican restaurant and healthier imo because I could control the amount of sodium. Next time I’m going to have to buy Gebhardt’s chili powder though.
I'm so glad you enjoyed it my friend, we've done the same thing. I think Gebhardts is better than any other store bought chili powder. Thank you so much for your comment my friend. ❤️
My husband and I love Mexican food, and when I made this dish the first time we absolutely loved it!! I have made it several times since. Your awesome Rachel 😊
K....so I made this Sunday, I thought my husband was going to eat the whole thing. We both loved this dish! The next day he scrambled some eggs and heated a small amount of this dish and rolled the mixture in a flour tortilla and wow what a great breakfast wrap! Love ALL your recipes and thanks for walking us through the steps....I feel comfortable reproducing your wonderful creations.

Hi Rachel. Thank you so much for all that you do. Last year, I made the enchilada casserole and sauce for our Bible study group. Everyone loved it! I'll be making it again this evening for them. Every Thursday I cook for our group. They're family. Thank you for sharing your recipes. It makes cooking so much easier for me. God bless you!
I was so excited about making your sauce for this. I took your sauce & let it sit for 2 days in the fridge, letting the flavors marry real well. I seared some chuck roast cubes then added your sauce to it, simmered 45 minutes on low stirring often. I use the street taco tortillas with extra sharp shredded cheddar. It was amazing !!!
Yezzz,my plan exactly. Make the sauce, add some leftover chicken and extra sharp cheddar. Looking forward to it.
I'd like to make extra SAUCE, to freeze and have it on hand. 😊. . . I'm going to try this. Soon. As I love enchiladas. With lots of SAUCE.
Update: I made this for dinner tonight and my husband orbited the moon in delight, using the descriptors “rich texture, great flavor, delectable dinner” and “oh, wow!” as he wrapped himself around two hearty servings. Thank you for this excellent addition to my Hallowed Recipe Box, where only the best-of-the-best recipes are allowed to reside. ❤️
Greetings from Bermuda! I really enjoyed the video and plan to make this meal soon.
@Cindi Rice I couldn't have said it better! It was a huge hit at my house too! Will definitely save this recipe and make this casserole again!!

Rachel, I love ALL your recipes, but this is my favorite because enchilada casserole is my favorite thing to eat. The only change I make is by adding a can of sliced black olives, because I like them in and on just about everything. I have a casserole in the oven right now - can't wait to eat it in a little while! Thanks for sharing your amazing recipes with us!
My mom used to add black olives to her enchiladas and I still do!

You have great taste and are one of the best teachers I have ever seen in my life. You do what others don't. You keep it simple, explain, and demonstrate things in a way that anyone of can understand. Good food brings people together. It does not matter what language we speak or what country we come from. Thanks for being selfless and teaching us.
Agreed!
Rachel, your cooking reminds me of a sweet neighbor I had in Arizona. She loved to cook, and to share her meals with loved ones.
I was lucky enough to be able to buy the ingredients, she had fixed income, and she would do the cooking.
As I had 2 jobs, I am retired RN, it was a wonderful trade. She would have a meal waiting for me on my "Friday", even if it was a Monday!
So many happy memories of her cooking.
And, because made with love, you also know her secret.
Thank you for sharing. I am trying this soon.
My neighbor has passed on, but her memories will always bring a smile.
This looks so good, I can't wait to try this! Especially your sauce that starts with a roux! I loved how you mixed it up, slowly to let the flavors come out and bloom to their fullest. You make it seem so easy, thanks Rachel. 🥰🥰
My best friend from 5th grade through high school was Mexican and both of his parents were fabulous cooks. I could smell the cooking in this video thinking back to having dinner at their house countless times. I prefer real enchiladas but make enchilada casserole more often simply because it tastes the same but so much easier. I've never made sauce from scratch though. Going to try this. Great video.
Love this recipe! My mother taught me how to make that exact homemade enchilada sauce. Your video brought tears to my eyes as I lost my mother 2 years ago. You have a new subscriber!
So sorry for your loss my friend, I'm so glad you enjoyed it. Thank you so much for your comment. ❤️
Ditto. We toasted the flour before the butter.

Hello Ms. Rachel, Just watched your beef enchilada. recipe. It looks devine. Im 80 years old and am losing my eye sight also can hardly stand up at all because of a very bad back. I lived in the Rio Grande Valley in Texas for most of my adult life. My kids were born there and my family came to love authentic Mexican food from the local restaurants. After I retired from teaching we moved to Arkansas. I am so glad I have found your channel so I can try to bring a bit of south Texas cuisine to our table here. Thank you so very much for sharing your recipes here.
Aww, I hope you are happy in Arkansas, it is far from the Valley, we live in Ohio half of the year and I love it here, but I do miss the Valley too. Blessings and thank you so much for sharing. I appreciate your comment and support of my channel my friend. ❤
When I was in Kindergarten (1968), my family moved from Southern California to Virginia. (Dad was military). I remember my mother making California Tahhh-Koos (hamburger, Lettuce, tomato, Longhorn Cheese) for guests and they were amazed. My mom had to buy her corn tortillas in a can at the military base. Today, we have such wonderful Mexican Food and it’s great that our entire society has embraced it. Food truly unites us.
You remind me of, and miss greatly, my parents. From Ark 1914 & 1920, came to Alaska in the 50s. Her recipes and stories from their generation, love that. I agree she is my favorite and I like that she shares her knowledge and doesn’t keep her recipes a secret by leaving one ingredient out. Many do so they can remain exceptional or private with family secrets to cooking authentic dishes. I also like the no wrapping of the tortillas that is so messy and time consuming.

Rachel! This Beef Enchilada Casserole is absolutely fabulous!! I made it for the first time today. It really was quite simple and has just the right blend of spices and ingredients. I used the Colby Jack cheese too. I served it with shredded lettuce and chopped Roma tomatoes. My husband had seconds! We are using leftovers as enchilada dip with unsalted tortilla chips. Thank you for sharing this recipe!
This is by far the Best Enchilada sauce… ever… ! I was so sick of can sauce… this is a lot of work at 1st.. but the more u make it, the ingredients just come naturally. You could use this sauce for other recipes. I add black beans , cooked rice, or red kidney beans any of these to the meat. I always drain my beans and rise well. I sometimes use more corn tortillas just to make a larger dish.. sooooooo good ..Thank you for sharing.❤️

Rachel, I tried the Salisbury Steak recipe. It came out fantastic! My wife, who hates onions and doesn't like to try new things, loved it. She's bragging me up for it. Thank you.
Such a pleasure to see a cooking video where the cook is clean and conscientious about the video. Recently I watched two cooking videos where the cooks handled their pets, one a cat and one a dog. They did not show themselves washing their hands afterwards. The viewers interpret this as unclean. Not to mention the pet hair on their clothes. Both sites have lost me as a viewer. Keep up the good work Rachel! Everything always looks delicious!
Rachel- thank you for your video tutorial & recipe. This is the best recipe I’ve used & it was a big hit at a recent party not to mention the taste being spot on❣️🌷😉
I just made a casserole very similar to this last week to take to friends. They loved it. I'm going to try Rachel's version though, because I think her enchilada sauce will be much better than mine. I love her recipes and think she is just wonderful. She's like everyone's Abuelita and I would love to have an invitation to eat at her house.
I cannot wait to try this! For years my mom rolled her enchiladas. Then she found a similar recipe to this, but with canned sauce. It was so much faster to make than rolled ones but still tasted great. I plan to make yours soon. The only change I will make is to add black olives. My mom (gone 21 years now) always added them and they taste so good with them!
Yummy!! Enjoy my friend. ❤👍
I agree about the black olives. My Nana was from Sonora and raised us because mom had to work.I had made them and taught my girls.. that was what they wanted for Birthdays. And now that I am 88 they treat me.
So at my age.. will cheat a little and use can enchilada sauce but the ideal of the casserole instead of rolled I think I can do … and more often.. loved your cooking style❤️ another Nana
Yes on the black olives...my mom used them
Looks so yummy, I want some right now.

Rachel this looks amazing! And you are absolutely delightful in your approach to demonstrating your craft.
A very good recipe! I have made it twice. Each time, great results. I used Mexican oregano and my own homemade tomato paste. I especially appreciate Rachel's concise written recipe and instructions. There's just one thing missing from the written instructions, though. Please add the oven temperature, 375 degrees Fahrenheit to the written instructions for future Rachel followers. I am a new fan and a forever Rachel Follower!

375° around 30 min
I absolutely ADORE your cooking videos! You are a wonderful teacher! I made this beef enchilada recipe which was DELICIOUS although I did make some mistakes which I'll recount here to help others. I mistakenly added all of the chicken broth at once to the roux so my sauce wasn't was thick and velvety as yours. Also, I used a 13" x 9" dish which was too big. I learned that 11" x 7" is the proper size. To avoid these mistakes in the future, I'll copy/paste your ingredients onto a document and then type in the instructions below so that I'll know that the chicken broth is 3 cups, DIVIDED, and that they should be added one at a time. Although you clearly demonstrate this in the video, it's hard to watch the video while cooking at the same time. Also, I found that it's necessary to measure all of the spices out ahead of time as you do since it's too rushed to try to measure while the sauce is in progress. I'll make a note of all of these tips in the instructions when I type them up and print out to have next time I make it. THANK YOU for your fabulous instructions and for all that you do to bring these videos to us!!!! You are AMAZING!!!!
It's all about PREP! If you get everything ready to add or mix before you begin you will find cooking so much more enjoyable. Clean as you go. Another invaluable tip. One more...sharp knives. When I go to cook at a friend's house, I always take my own knives. It makes it so much more fun to cook with the RIGHT tools for the job! I do mean sharp!
Amen. I trying to get the list of instruction as I having troubles finding but I hope I get them soon I want to.mske foru birthday. I love you cooking and you videos. You're an angel. Thoughtfuully Yvonne in UK
She should make it easier to print the entire instructions.
Hi Rachel I just want to share with you that I enjoy watching you cook, your choice of recipes to make and your explanations behind your skills. I have to admit I didn’t think I’d like you, and now I can’t keep count how many dishes I’ve watched you cook. Oh! And I like your name- Rachel.
So delicious thanks for sharing ❤
Hi Rachel. I have been trying to make a Cheese Enchiladas Casserole. Soo much easier than rolling Enchiladas one by one. Your recipe is just what I have been looking for. Thank you Rachel!
You’re welcome my friend, it’ll be delicious… you can add more ground beef if you like. Thank you so much for your support of my channel.❤️
Your cooking technique makes me feel like I'm leaning across the counter watching you--like the times I watched my grandmother cook in Uvalde. God bless you!
I made this today and OMGoodness - it was truly some of the best enchiladas I've ever had! I'm in OK now but originally from Texas so I've had more than my share of enchiladas. The only thing I wasn't sure of was whether or not the paprika should be sweet or smoked. I ended up using smoked, so maybe that is the intent? I used chili powder I buy at Sam's Club, but ordered some Gebhardt's this afternoon and can't wait to make these again using the good stuff! This is what I grew up with in Texas, but it is not sold locally here in the Tulsa area. I absolutely LOVE the videos and the step by step instructions. I've been cooking for well over 60 years and still love great instructions. Thank you so much for the fabulous recipe. I can't wait to try some of your other recipes!
Rachel
I'm going to try this one for sure! Thanks for all you do!
Made this yesterday. Aside from substituting shredded chicken breast for the ground beef, I followed the recipe/directions to a "T". OMG, these were seriously the best enchiladas I've ever had! No need to order enchiladas at a restaurant anymore now that I can make my own at home.
Rachel, I have made this for my family, and every time they say, “this is the BOMB!” My husband says it’s his favorite enchilada sauce! Thank you so much for this wonderful recipe!

Rachel, we were raised in San Antonio and finally settled in Houston. The Tex-Mex has improved over the years here, but when I found your channel,I knew I I was going to love your enchilada sauce. Gosh,…… my goodness, I made it this afternoon to serve with my tamales and chili and it was delicious; it brought back some pleasant childhood memories. Thank you so much!!! Next I will make this enchilada casserole. Your instruction are crystal clear.
Rachel I absolutely adore your cooking show. I have made several of your recipes, however this is the BEST ONE by far!!! I made it for company with the Blanco Rice, it was a HIT! Thank you so much for your recipes, we love you :)

Looks so delicious ❤
Muchas gracias Rachel me encanta !
This looks so good. I know they must be good. My mom taught me to make enchiladas basically the same way you made this, only we did cook the tortillas a little on the crispy side, and stacked then like pancakes with all the ingredients on every layer. Then we had a side of refried beans. Omg they are so delicious. My mom was born in Roswell then raised in texas. But she used to go to Juárez, they would teach her how to cook some dishes. Thank you so very much for sharing, I love watching your channel.
Hello how're you doing over there ?
I live watching her too. Her voice is so soothing
DELISH! I made this for the first time for my 13 year old daughter and I last night. After the first bite, she said, "you have to make this more often! I'm having a second helping!" LOL. Absolutely wonderful!!
I love this recipe!! Thanks for sharing your expertise-my husband loves it and I also served it to dinner guests. It’s so authenticity delicious! 😋
