I’ve made this salad for years. I do put avocado in it on the side. And my recipe has me make the dressing. It’s phenomenal. You take one can of tomato soup, 1/2 cup of vinegar, 1/2 cup olive oil, 1/2 cup of sugar, one tablespoon of Worcestershire sauce and tablespoon of chopped onion. Put it all in the blender and blend it up. My husband can’t enough of that dressing. In fact I usually double the recipe. Also sliced olives taste good in it.

I use same but add diced red, orange and / or yellow bell pepper. Or some of each makes it very colorful. Sometimes a diced up jalapeño too. If want, diet or sugar free Catalina tastes exactly like the original.

This is one of our favorite salads. We have people on multiple diets in this house. Low carb. Lactose intolerant. Kidney diet. I prepare this salad with hamburger, low sodoum taco seasoning, lettuce, tomato, onion. And pinto beans, drained and rinsed. I serve the doritoes, cheese, and dressing separately so people can use a smaller portion if need be. Also, this way leftover salad can be stored in the fridge without getting the chips and lettuce soggy. Of course it will not last long. Thank you for this recipe. I knew I could make it for everyone with different diets, but I forgot some of the ingredients.

Here in Texas we mix 1 cup Hot salsa and 1 cup ranch dressing and most people call it southwest dressing. It’s really good on that salad and often people replace the hamburger with little chunks of taco seasoned chicken. And most people add roasted corn cut from the cob into the salad. If you don’t have a way to roast corn every time you want to use it in a dish you can empty a can of corn into a frying pan with a couple of spoons of butter and let it simmer until it simmers completely dry. And then stir it once it gets dry until it gets a little brown around the edges and it’ll kind of dry roast like it does on a grill and get that roasted corn flavor. It won’t have a charcoal flavor but the butter really makes it taste like it’s grilled to me.

Been making this salad since my cousin made it for me and shared the recipe back in the early '80's. It was my introduction to Catalina salad dressing. Only difference, we layered the ingredients in the individual bowls and let each person mix it (or not) as it was eaten...keeping the lettuce and chips crispy longer (and in my opinion, not that it makes a hill of beans... a better visual presentation). We also used Fritos on occasion...This salad is definitely yummy!

When making this salad, we like to fry half of the onion with the meat. It brings out the sweetness of the onion and it's a nice contrast with the raw onion on the salad. Also, if you find your onion is really strong, cooking it with the meat tones it down quite a bit.

I fix this salad a lot, however I put the tomato, onion, separate so if others don’t want to add tomato they don’t have to. I even put the cheese in a separate bowl and let each person add what they want. I also leave meat in the skillet. That way you don’t mix up a huge salad and have a lot left over. Then I store everything separate.

Mix the ingredients in the bowl… let everyone serve themselves and add however much crunched Doritos and dressing to taste. Or if your taking to a party or potluck supper Add the Doritos and dressing when you get to your venue. Been doin this for 40+ years and it works great.

This comes at a great time. I’ve been thinking of making a Taco Salad for the last few days.
I also was going to request that you guys share some more main courses with us.
How about a Salisbury (Hamburger) Steak. Chicken fried steak, baked Chicken, Pork Chops?? 🙏🙏🙏

I use Catalina dressing too. Black beans good also. I add a little water with the taco seasons and simmer a little. Thanks for the tip for draining fat I will surely do that. I will make it your way at least once. A good party plan.

An even easier and cleaner way to extract grease from the meat is to mop it out of the pan with a paper towel or two. Just toss it into the trash when saturated. No greasy strainer to clean up afterwards. Save your foil for other uses.

That doesn't seem easier by any means. Besides that's a lot of grease to be sopping up w/paper towels. Also, the point is to drain the meat.

I got that recipe years ago from my sister-in-law and like you, I love it. Thanks for reminding me about it. When I make it, I don't add any beans to it and I end up using two bottles of salad dressing. I used Russian Dressing in mind but Catalina would also be an excellent choice. I will be getting the ingredients for this salad later so that I can make it for my church group (we meet every Wed.) so that they can enjoy it as well.

You need Ortega Taco sauce to let people add this to their individual bowls along with more dressing if desired, plus ADD AVACADOS..chunked up..that is in the original salad recipe....pass around the bowl of chips so people can also add extra chips to their bowls!
Original recipe called for PURPLE onions..makes prettier salad! Yes drain beans for this salad and they are to be added to the HOT COOKED HAMBURGER..not directly to the salad..the idea is the hot hamburger mix added to the cold salad mix..

I TOTALLY AGREE!! I also put the add in’s in separate bowls so everyone can add what they want. I also use sour cream and taco sauce on the side. My actual salad has the taco seasoned meat, onions chopped fine, and black olives. Crushed up Doritos and western dressing, but not drenched in western in case someone wants to add taco sauce

Thanks for the tip on how to drain your meat! That is a really handy idea! Saves one from burning themselves trying to get the grease out. Thanks!!
Catalina is scarce around here so I use French in it's place. Makes a tasty substitute. 😊
That really is a handy dandy tool, that "meat breaker upper". I bought one myself as your wrist gets tired chopping meat. It sure makes fast work out of a "boring" part of cooking

I do have stuff that solidifies the fat but your aluminum foil trick is cool. I’ve been making this salad (minus the onions and the beans) for a few decades. It was always a great addition to a potluck and it’s got to be the Catalina salad dressing or it doesn’t taste the same. 🇨🇦🇨🇦
