This is one of my favorite dishes my Mom use to make. Sometimes she would add diced ham or cooked sausage in it and she’d call it a “Breakfast Casserole”. Brings back memories. She’s been gone 28 years today, October 13th.
Love how you line everything in order of use AND that you believe, as I do, in cleaning out completely every can, dish, utensil used along with how very neat you are. Just pulled out a bag of hash browns from the freezer and that's one definite for breakfast tomorrow!

Thank you for your videos. I look forward to watching them. Instead of plain old sour cream, I use French Onion sour cream dip .... like the potato chip dip. And I make it a loaded hash brown casserole by mixing in chopped crispy bacon pieces. Now I'm hungry lol

Sounds wonderful. I make a chicken casserole that uses plain crushed potato chips on top. I always use sour cream and onion flavored potato chips. Makes a tremendous, delicious difference!

I got this recipe from a friend close to 35 years ago and know it as "Funeral Potatoes". It's pure comfort food. My tweak to it is that I add 1tsp garlic powder and 1/4 tsp celery seed. I have added diced ham on occasion but basically just leave it as is. When I take it somewhere there are never any leftovers. I can see that you wear out your spatulas the way I do. Every last drop, speck or whatever comes out of the can or bowl.

I noticed you were using the Ore-Ida brand potatoes for your hash brown casserole(no dissing that brand), but have you ever tried the Simply Potatoes brand before? They are usually found in the cold section and they are never frozen, always ready to use. They are good for this casserole as well, my opinion. I grate the onion, use the onion and the juice. I use cream of mushroom soup and top with 2 cups of crushed cornflakes rather than Ritz crackers. My Mom, God rest her soul didnt like chicken soup, so I changed it and used mushroom soup. One if my friends uses cream of celery soup.
I just found your videos tonight. I watched several of them. I was so happy that I found you. You have the best recipes. They are easy and fast to make. And..not so expensive to make. You are one of the few cooks that get everything out of the bowel. I will be making some of your recipes. I hope that sometime that you might have some recipes for maybe 2 people. Made this recipe last night. I added a fresh seeded and chopped jalapeno to my onion and sauteed in butted on stove top. Followed remaining recipe as written. This dish is comfort food for me. Our dear friend’s mother made this and I loved it! I asked her for the recipe and she hesitated. She said, “Don’t tell Shawn what is in it.” He loved her hash brown casserole, but he wouldn’t eat chicken. She never told him it had cream of chicken soup! She is a mess! She loved her boy. Shawn passed from brain cancer 2 years ago. He is dearly missed.

My grandma always fixed this when she had a pot luck to go to and it was always on the table for family reunions. It's a favorite of mine for any kind of gathering and most holidays.
Here in Wisconsin, we make a very similar casserole, Potato Casserole", the only difference is we use the cubed frozen potatoes and the topping is crushed cornflakes mixed with a little butter to make the topping(not the frosted just plain). Another name people call them is "party potatoes " because they're so delicious to take to a party! Thanks so much for sharing!
Just made this last week. It is a meal by itself. Except I had heard it was made with corn flakes, and didn't want to buy them just for the one cup needed. Think I will try the Ritz Cracker topping, sounds good. I use the extra sharp cheddar cheese, and I really prefer that. Like you say, change anything you want. I watched six of your shows in a row! It's the middle of the night. oh well, I am retired. Love your recipes.
My family has made this for years!! Although We have a couple of onion haters in the fam so we have to grate the onion to hide Them!! We add slightly more hash brown than you did again to hide the onions!! We use cream of celery instead of cream of chicken!! We also add crispy bacon!! And we use a mix of crushed up Ritz Crackers, Oyster Crackers and Cornflakes with butter on the top which really does make a difference as its a multi textured crunch😉 Such a good side dish!!
I hate onion too, for a reason. I was invited to to my boyfriends house for dinner and they ask if there was anything I didn't eat. I said, onion, it makes me sick. The step Dad was a high end chef who was well known. The meal was delicious and very impressive. But that night I woke up at 3 am sweating and feeling nauseous. When I tried to get up for work the next day I started throwing up, I was dizzy and couldn't go to work. So I missed a full day of work. My boyfriend called me and I said how sick I was. I threw up until everything was gone just like bad food poisoning. He said he felt fine but he'd check on his parents. He called me later and said they were fine. That weekend he went to their house and his mother ask how I was. He told them I missed a day of work and still wasn't feeling 100% after eating their dinner. She confessed it could have been the onions. Yes, the 2 onions that the stepfather finely minced into the potato casserole he made. He minced them so I couldn't see them and them served me a larger than normal portion. He seasoned them, added sour cream etc so you couldn't really taste them and I don't dislike the flavor, they just make me sick. He did it on purpose because it was all in my head. My boyfriend was very mad and told me. I was livid. I had suffered before during and after I threw up 7 times. I liked him but I could never see myself married with wicked in-laws like that, so I broke up with him. I heard he wasn't speaking to them for a long time. So when you want to be a A Hole and slip something in someone's food because you think it's stupid, you might not know if they just say they don't like it or they are allergic to it. Expect if you send them to the ER to pay the bill or be sued, A Hole.
I have been a follower of yours for a long time now. Well the 3-4 or 5 months I’ve been doing this. I love all of your recipes, but most of all I appreciate and love the way you show us all of the ingredients and the sizes. I am almost 80 and that means a great great deal to me. For each cooking channel I watch, the host always has their own way of showing pleasure at the cooked dish they have made. I smile whenever Tom does his taste test. Each creation is delicious! 😋(And he shows it. 😊)
My recipe actually calls for a lb of bacon chopped up after it's been fried and it's good but honestly I didn't find that it added enough flavor to make worthwhile the frying of the bacon but it does work.😊
I use the cubed hash browns and I just take the hash browns out while I am putting the rest together, they are not thawed. It is a good recipe no matter how your do it!
I do it the same way just dump everything in the dish frozen and all.. then in the oven for I think it's 30 min. Pull out stir everything up and back in for I think 45 min. But I use half as much sour cream, 16 oz would just be too much for me. Also I've found a whole stick of butter is way too much. It ends up all liquidy and slimy at the bottom of the pan. To me it's so much easier to throw it all in frozen than to wait for them to that. I love this stuff and can make a whole meal of it. I love watching other people make the same things and see how they do it.
I think I might add some green onion also, just because I love me some green onion and some diced ham. It just sounds like it goes with it. Love you two, together! thank you for the recipes.
Tried it. It was great. Made one small addition. Bacon pieces. They come in 10 oz bags from our local grocery store. I put a handful in. Bacon makes everything taste better.🙂
Hello, I use the bag of hashbrowns that already have onions and peppers in it and it turns out good. Also, for more moistness I add a 2 cans of cream of chicken soup. Keep of the good work on your videos.❤
I have made this before but never had the Ritz topping. I always use cream of chicken with this and with the sour cream it just has the best tang. I use the chopped up hash browns so when I stir it together I don’t have to worry about it turning into mashed potatoes so much. But I just bet you the flavor is just the same. Sometimes if it has been a long time since we have had it I just CRAVE it! I make many things using cream of mushroom but this one I just have to use cream of chicken! Try the chicken first if you haven’t, there’s just something about it going with it so great. You better write down the recipe wherever you take it, someone will want to write it down and if you are dropping it off to someone, just give them a copy of it, it will be requested I promise. Tom and Melissa, I don’t know how you do it, but you always come up with the best recipes and directions. You missed your calling, you should have taught Home Economics, I swear!! Then you could have had an advanced class with all these textbook recipes! But then, no one would have ever let you retire. We all love you so much and I keep hearing how one day they will have a huge convention in Las Vegas, or some city large enough to hold a UA-cam Convention. I’m not familiar with that brand but Tom may be. He enjoys the hunt of the shopping more than me and probably pays a lot more attention.

Cream of celery soup is the best way to go, for those of us, who dislike mushrooms.
You should try cream of mushroom and corn flakes for comparison. It's the way I have made it for 30 years.

My grandma always fixed this when she had a pot luck to go to and it was always on the table for family reunions. It's a favorite of mine for any kind of gathering and most holidays.
It's such a nice side dish for a pot luck. It's tastes great and pretty much everyone loves potatoes!
Here in Wisconsin, we make a very similar casserole, Potato Casserole", the only difference is we use the cubed frozen potatoes and the topping is crushed cornflakes mixed with a little butter to make the topping(not the frosted just plain). Another name people call them is "party potatoes " because they're so delicious to take to a party! Thanks so much for sharing!

Just made this last week. It is a meal by itself. Except I had heard it was made with corn flakes, and didn't want to buy them just for the one cup needed. Think I will try the Ritz Cracker topping, sounds good. I use the extra sharp cheddar cheese, and I really prefer that. Like you say, change anything you want. I watched six of your shows in a row! It's the middle of the night. oh well, I am retired. Love your recipes.

My family has made this for years!! Although We have a couple of onion haters in the fam so we have to grate the onion to hide Them!! We add slightly more hash brown than you did again to hide the onions!! We use cream of celery instead of cream of chicken!! We also add crispy bacon!! And we use a mix of crushed up Ritz Crackers, Oyster Crackers and Cornflakes with butter on the top which really does make a difference as its a multi textured crunch😉 Such a good side dish!!
I hate onion too, for a reason. I was invited to to my boyfriends house for dinner and they ask if there was anything I didn't eat. I said, onion, it makes me sick.
The step Dad was a high end chef who was well known.
The meal was delicious and very impressive. But that night I woke up at 3 am sweating and feeling nauseous. When I tried to get up for work the next day I started throwing up, I was dizzy and couldn't go to work. So I missed a full day of work. My boyfriend called me and I said how sick I was. I threw up until everything was gone just like bad food poisoning. He said he felt fine but he'd check on his parents. He called me later and said they were fine. That weekend he went to their house and his mother ask how I was. He told them I missed a day of work and still wasn't feeling 100% after eating their dinner. She confessed it could have been the onions. Yes, the 2 onions that the stepfather finely minced into the potato casserole he made. He minced them so I couldn't see them and them served me a larger than normal portion. He seasoned them, added sour cream etc so you couldn't really taste them and I don't dislike the flavor, they just make me sick. He did it on purpose because it was all in my head.
My boyfriend was very mad and told me. I was livid. I had suffered before during and after I threw up 7 times. I liked him but I could never see myself married with wicked in-laws like that, so I broke up with him. I heard he wasn't speaking to them for a long time.
So when you want to be a A Hole and slip something in someone's food because you think it's stupid, you might not know if they just say they don't like it or they are allergic to it. Expect if you send them to the ER to pay the bill or be sued, A Hole.
This is one of my favorite recipes. My mom used to make it to accompany our Christmas dinner. I also would take it to funeral receptions at my church.

Funeral potatoes! That’s what they are called in Utah and Idaho! They are ALWAYS served at Mormon funeral gatherings!!! Yummy!!
That's interesting because here in Kentucky the "funeral food" we're always asked to make is a corn pudding! But these do travel well and are good for potlucks, church meals, etc. Thanks so much for watching our channel. We really do appreciate it.

Leave out the sour cream and replace with mayonnaise.
I like sour cream, but I don't like the full taste of it in the casserole so I would probably use half the amount and replace with mayo.
Use plain yogurt to replace sour cream.

My recipe actually calls for a lb of bacon chopped up after it's been fried and it's good but honestly I didn't find that it added enough flavor to make worthwhile the frying of the bacon but it does work.😊

I use the cubed hash browns and I just take the hash browns out while I am putting the rest together, they are not thawed. It is a good recipe no matter how your do it!
I do it the same way just dump everything in the dish frozen and all.. then in the oven for I think it's 30 min. Pull out stir everything up and back in for I think 45 min. But I use half as much sour cream, 16 oz would just be too much for me. Also I've found a whole stick of butter is way too much. It ends up all liquidy and slimy at the bottom of the pan. To me it's so much easier to throw it all in frozen than to wait for them to that. I love this stuff and can make a whole meal of it. I love watching other people make the same things and see how they do it.
I think I might add some green onion also, just because I love me some green onion and some diced ham. It just sounds like it goes with it. Love you two, together! thank you for the recipes.
Tried it. It was great. Made one small addition. Bacon pieces. They come in 10 oz bags from our local grocery store. I put a handful in. Bacon makes everything taste better.🙂

I love the ritz topping on the broccoli casserole that I make.
I have made this before but never had the Ritz topping. I always use cream of chicken with this and with the sour cream it just has the best tang. I use the chopped up hash browns so when I stir it together I don’t have to worry about it turning into mashed potatoes so much. But I just bet you the flavor is just the same. Sometimes if it has been a long time since we have had it I just CRAVE it! I make many things using cream of mushroom but this one I just have to use cream of chicken! Try the chicken first if you haven’t, there’s just something about it going with it so great. You better write down the recipe wherever you take it, someone will want to write it down and if you are dropping it off to someone, just give them a copy of it, it will be requested I promise. Tom and Melissa, I don’t know how you do it, but you always come up with the best recipes and directions. You missed your calling, you should have taught Home Economics, I swear!! Then you could have had an advanced class with all these textbook recipes! But then, no one would have ever let you retire. We all love you so much and I keep hearing how one day they will have a huge convention in Las Vegas, or some city large enough to hold a UA-cam Convention.
