Hi JoAnn, we are so pleased to have you as a new member! We see your posts in the group and love interacting with you and getting to know you better. Between 320 - 360 F, depending on your oven, is great for roasting vegetables. Keep in mind that ovens will fluctuate in temperature a little so always keep an eye on your food and use your best judgement. We look forward to seeing more of your posts in the group, Jo Ann!
