Going to try this one right away! Always wonder what to do with the Chinese chives, now I know. I love long beans - great texture and less prep than regular green beans. ETA: Just went out and got the ingredients and made this. It's a winner! Quick to make and absolutely delicious! I cooked the noodles for 15 minutes. They came out silky smooth and really soaked up the sauce.

I’ve been wanting to make your chili oil for a while and now I have the ingredients for it. I have several oil recipes I think I’ll make this week.
Your Chinese chives sound and look like ‘ramps’ here in eastern US. The tops of the leaves are a little wider and they have a bit of a wild taste too. The smell up the entire kitchen!
    Love your master class!

I would be interested in seeing a dish wo soy. How would you replace the soy sauce and such and get the similar yummy umami flavor. Sadly I have to avoid soy for awhile due to healthy reasons and I’m trying to figure out how I can get those similar flavors keeping it veg of course. Not so simple as just adding mushrooms and such. Soy free sauces aren’t that good and they are overly sweet. I would be curious to see. Best
