Those noodles became my favorite the first time I had them. I went on Amazon to buy them to make your red pepper powder, oyster sauce and tofu recipe, they were an instant hit so I stocked up on them. I have both of your books but hadn't made it to this recipe yet and if I had I wouldn't have thought to swap the noodles out, great idea. I'll make this dish for dinner tonight, can't wait! I went back to my Amazon to see what the actual name of the noodles I bought was and it was Taiwanese Style Homemade Wide Dried Knife Sliced Ribbon Noodles (16.7oz, 2packs), they come in a pink and clear package, but if you type in Taiwanese noodles they should have those noodles from other brands also. They should also be available in an Asian market if you have one locally, I normally go there but the language barrier is a lot so unless I plan on going there for a few things I just order online. I know you'll love them, let me know what you think about them after you try it out. Hope this helps🙂
This looks so good. And those noodles remind me of pappardelle pasta (my favorite) only with ridges around the edges. Your recipes are so detailed and the dishes that you make always look delicious.

My mind is blown. I quite literally make this dish all the time. The only differences are 1) I don't add the mushrooms or bok choy, but I like the idea, and 2) I put my ginger, garlic, and green onion in the mortar and pestle together with the sesame seeds. I then bring my chili oil to a boil, and add that to the mortar and pestle as well. Then I crush it all into a delicious aromatic paste that goes on the noodles

Just found and subscribed to your channel. Lured in with a particular recipe [combination of ingredients I had not thought to combine] stayed because of your excellent delivery. No excess chit chat about your kids or dog or whatever!! Clear cooking instructions but no crazy stuff....I just don't need to have peeling potatoes etc and then watch 'em do it!! I've been cooking since I was 7yrs old, I am now 62. Still love to see something I don't know very well delivered. P.S sesame oil smells better than channel No 5!!

I saw this video today and realized I had all the ingredients in my kitchen-not the exact brands you mention, but close enough. I used baby Bella mushrooms and whole sesame seeds (couldn’t crush them) and you what?! It’s awesome. So tasty! And I made it all in less than 10 minutes. THANK YOU 🌟🌟🌟🌟🌟

This recipe looks amazing! I have mastered your chili oil and added fried sliced garlic to it which is delicious! The black vinegar adds a uniquely super umami depth of flavor. Can’t wait to use with this dish. Also, I use the noodles shown, which are THE best I have ever tasted! I’ve been buying on Amazon which are extremely expensive and most recently have found in Weee Asian Grocer online for 1/3 the cost. Thanks so much for your show! I’ve learned so much. I find that if I have the main staples, I can cook just about anything!
I could not find the hand cut Asian type. But at my (US) supermarket I found Sclafani brand that looks really close called "Malfani" style. They are like super thin lasagna noodles, rippled on both edges. I'm going to try first with the garlic chili noodles recipe.
@@sarahdee374 yep! Reginette and mafalde are two regional names of the same (or very similar) type of pasta. Philip Mulligan said they’re different from Asian style, but judging the visual impression from the video it seems not that far away 🤗

I've used and modified you recipes especially the garlic chilli noodles is what got me started cooking noodles, But I've brought these knife pared noodles and every time I've tried cooking them I've thrown the whole lot straight in the bin, Whenever I cook them no matter what amount of time they come out a disgusting sloppy sticky mess and haven't even added them to the sauce, Possibly I just like medium egg noodles as they come out perfect everytime and I love the garlic chilli noodle recipe, My cupboard and fridge are now loaded with noodles pantry items.
A really appealing dish that proves that you don't always have to cook elaborately to get something tasty on your plate. There can also be gladly times without meat.

I made this today with baby bok choy and king oyster mushrooms, which I sliced and sautéed first. It was excellent! If you don’t have bok choy, use spinach or asparagus. Both would work well. Just adjust cooking times accordingly.

Did you temper/blue the steel on your beautiful skillet before doing the ancient Asian discard aromatics like we do with a new wok? By the way, if you’re in B C, am only 11 miles south of one port of entry.
I made this and put the sesame seeds on medium and they popped all over the place! Lol😂😂😅 it was delicious though. I only had the Chinese vinegar and I see what you mean. It was def strong but the sesame and chili oil still came through

I use thick pappardelle for his recipes. My local supply is very limited. Works wonderfully!

I think the wheat used is different. Regninette is made from Durum wheat. I believe the Chinese noodle are blended wheats of a different species.

I don’t understand why mine comes out so salty whenever I follow the soy sauce portions though, even with my aminos I can barely add any before it’s too salty. What am I doing wrong?
