  • Cauliflower is a versatile vegetable for those following a LCHF way of eating. This is how I used one large head of cauliflower to make three different dishes very quickly: Cauli Mash, Cauliflower Pizza Casserole, and Twice Baked Faux-tato.

    Yesterday afternoon I made the Twice Baked Faux-tato and it came out great. My wife was skeptical about it when she saw what was being put into it. It came out great and my wife loved it, and said, I can eat this again. Sense it's only me and the wife at home, we had left overs. Today I ate another portion and even cold it tasted very good. I estimated a portion at 1/5 of the total disk. When I ran the numbers or one portion it came out at about 7.2 carbs, 12.4 protein, 28.8 fat, 337.4 calories. Those are excellent numbers to me, Thanks so much for the receipt.

    Hi Kristie,
    I just started following you and think you have a lot of helpful cooking and baking tips that I can easily change if needed for my own health needs (i.e. Organic, etc). The one thing I cannot change is the volume to a level that I can understand what important things you have to say. Would you consider writing your ingredients list/recipe instructions in your caption which you could edit? Also in some of your videos you have better quality volume, but in order to find the recipe the viewer must go on a wild goose chase from Pinterest to your blog. It's much easier if it's just listed there or there's links directly to your blog post about whichever video/recipe.

    I would suggest adding 1/2 of an egg to the cauli mash. It worked out beautifully for the topping of shepherds pie for me. Just like mashed potatoes.

    Hi Kristie, try adding a packet of hidden valley ranch seasoning mix to your mashed cauliflower. I used your recipe and added in the seasoning mix and its fabulous. I had ranch mashed potatoes before and I loved them so it gave me the idea for this too. I think it may also be good in keto cheddar drop biscuits.

      Roasting the cauliflower beforehand sounds delicious!! I often use the microwave to steam it so that the texture stays firm. Can you roast it without it getting too soft for potato salad?

    So many people seem to love cooking with dried minced onion, like you do. It actually gives me a headache, just the smell of it. I have much less problems with fresh onion cooked in a dish, seems less strong. I want to try the powdered onion but I am afraid it will have the same effect on me. Just throwing this in for those sensitive to onion.

    Love the videos. I really do wish though that u could go back through and add the recipies (ideally with net carbs per serving and for the whole recipe). That pizza casserole sounds awesome

      +Amber Larsen The recipes are now in the video description, so that shouldn't be a problem. I really encourage folks to take the time to calculate the nutrition information for themselves using the ingredients and portion size that is comfortable for them.

    I read in one of your viewer comments that you may redo this video for audio purposes. may I request that you add at the end "The Finished Product just out of the oven?'' Was that an oversight not showing the fully cooked meals? Everyone wants to see how delicious it looks out of the oven. As a former television host from the Home Shopping network, I can tell you the dish out of the oven at the end is what people want to see! As a life long LCHF lifestyle man, I don't think there's adequate space here to illustrate the extraordinary contribution your video's make in all our lives.     These then i transfer great uses for cauliflower. I take 2 bags of frozen cauliflower, I get these at my local target Store .99 cents each and I microwave them on high about 6-8 minutes then I transfer them to my food processor and add 1 stick of butter cut into small cubes and 1 8oz package of cream cheese cut into 8 pieces and add 2 spoons of chopped garlic to taste salt and pepper and cayenne pepper to taste I like it spicy then I wiz it up while hot and process until creamy it has the consistency of pureed mashed potatoes and or grits. I really love this

    I have not tried making my own ranch. I really need to focus some time on making keto friendly sauces and dressings. I think that's a good way to sneak in some extra fats!

    I have no idea. but I love my blender. I make nut butters with it now. and eat about a table spoon for a nice treat. no sugar add coconut oil. and it's great. I usually make pecan butter with vanilla and stivia. or I'll make almond butter with coconut oil. and it's delishius. :)

      it is delishous... but i still have not perfected the texture..but i dont care.... its still devine
      i use liquid stevia for sweetness, and vanilla, along with cocobut oil to help smooth
      have to add nut a small amount at a time so it doesnt gum up the blades as much
      just a few pointers :)

    I love you and love your videos! I wanted so bad to watch this video because I want to find different things to do with cauliflower BUT the sound of the video drove me crazy lol your speaking low so I turned it up but the banging of bowls, blenders, and all sorts of other loud moves made this video impossible.     you make great recipes, just a couple of suggestions maybe get a few donations and help you purchase a wireless mic that you could wear on you, that would help with your soft voice and the long distance from you to the camera mic. also just a note I try and stay away from the packaged shredded cheeses and things like the bacon you used because since i started this diet i have really been surprised when i read the ingredients. but shredded cheeses have a high amount of gluten and other chemicals in them to keep them from sticking together and this causes cellulite too. not complaining just trying to help, cook on thanks!

    I've been checking out your other videos I missed before I found you. Maybe it's me but I have my laptop speakers way up and sometimes I can't hardly hear you. Just wanted to give you a heads up . Oh that tip on oat fiber was a ( big ) help to me for I have many allergies and coconut products are one of them. I thought of syliyhum husk , I know I'm spelling that wrong lol . That stuff worries me , I heard it may cause digestive problems.

      SharpieNail Art Thanks for your feedback. I've been concerned about the volume. I know the LC cookie video needs to be redone. Do you remember if there are others? Psyllium husk becomes gel-like, so I don't think it would be a good one for one substitute.

      Yes the first cookie one was , and this one was really bad too. Didn't matter a lot on this cause at least I could see most of the amounts you put in. These where nice alternatives to plain cauliflower

    I am a fan of your awesome videos! I just have a hard time hearing your voice even on high volume. Quite a few videos are like this. Please speak louder, you have a sweet voice or get a mic up close. Also it would have been a good thing to show us the finished baked meals. Anyway, I have learned so much!     what is the fat percentage in the heavy cream? I cannot find anything labeled "heavy cream"....just "whipping cream" or "half and half", or "table cream"

      +graceinguelph Heavy cream has a higher fat content (at least 36%) while whipping cream is between 30% and 36% fat. Hope that helps!

      yeah. am sitting here in Berlin, Germany, nearly every evening watching your videos. The last 10 years i tried to loose 15kg of body weight with low fat, no sucess at all, only pure frustration. 1.5 years ago I tried Atkins, then LCHF the first time. I lost 13 kg within less than a year and no hunger at all. I never felt better in my life! Am SO happy that you share your experience on LCHF with us! Appreciated SO much!!!     I roast the cauliflower before the dishes you recommended- ohhh soo good! (or does that mess up the carb/sugar thing b/c roasting caramelizes them???)

      Roasting them is a great idea if you have the time. I suspect the change in carbs is negligible, but I can't say for certain.

    why do you not list the ingredients under each video. It makes if difficult to keeping typing list and ingredients while you are talking!!

    Isn't pepperoni full of nitrates, additives, and table salt? They are hugely bad for your health.

      While eating real, whole foods is generally considered a best option, nitrates and nitrites and salt are not necessarily "bad" for us. There are several good resources that explain that nitrites and nitrates occur naturally in the body and are not as harmful as once thought. In addition, on a ketogenic diet, adding salt to your diet is fine.

      Robb Wolf and Chris Kresser also provide good information on nitrates and nitrates. You might enjoy googling their thoughts.

      Thanks I will check it out...because at present I am too scared to by bacon here in perth because all I can find is nitrate, sugar, additives from the supermarket and even the near by butcher;s bacon has sugar and additives he says no nitrate.

      Emanuela Davis with regards to the sugar in bacon, be sure sugar is among the last of the ingredients and thst the carb count is truly 0. Good luck!

    I have a real problem hearing these videos, a real strain. Means losing interest in a minute or so.
