    Tried and approved! Truly the BEST pancake recipe in the UA-cam World!!! Anyone reading this.... DO NOT skip this recipe! Yes, a lot of ingredients but so, very worth it!!

    Hi! I tried these, but couldn't get the hang of cooking them. The first few I burned, then the next few, I couldn't turn. :(.... However, I tasted my "ruined" pancakes and realized the batter was really good! So, I took the remaining batter I had, and put it in muffin tins and baked at 350 for 15 min. What I ended up with was a cake like muffins that tasted great, and were not eggy! :). I sprinkled cinnamon and a stevia blend on top of a few before I baked them, and the rest I left plain. I am so happy I did that, because I feel this base recipe has so many options for muffins! Thank you!

      +Lisa Stauffer You have to use a pretty low heat. It's a delicate balance and I sometimes get impatient with them. The muffings are a great idea!!

    I had a tough time with using this for pancakes. But it's fabulous for waffles! They cook faster because of the indentations, and don't stick. Love it Kristie! I used maple extract and a little cinnamon and all they need is a little butter! Best Pancake batter I've tried over 1 1/2 years of non stop KETO. : )

    These were the best pancakes ever!! I am so impressed. They remind me of the texture of the pancakes at House of Pancakes. It made quite a few so I froze some for my breakfast throughout the week (yesssss). I'm so thankful for this recipe. And my picky 13 year old daughter LOVES them too (she doesn't like anything).

    Made these twice, first time used sour cream w/o pork rinds Pam spray on griddle. Second time with bulgarian yogurt & rinds, coconut flour & Used coconut oil on the griddle.
    My first batch was not fragile at all.
    Second batch was so delicate at flip lots were broken.
    They tasted SO GOOD, even w/the rinds! Mine worked & held better w/higher heat though.

    I made these and they are great. I did have a little trouble with flipping as you described the first time I made them. I bought a set of silicone egg rings and place the batter in them until they firm up and they flip much more easily. I also mix the dry ingredients in four individual batches in seperate ziplock sandwich bags so all i have to do is shake the bag, dump it in a bowl and add the wet ingredients, it saves a lot of time. Great job, keep them coming!

    Califia brand almond milk has no junk fillers and is quite thick. It works really well in recipes, and for buttermilk for dairy free folks, just add the vinegar to coconut milk. I am allergic to dairy, and it works well for me. I can't wait to try this recipe!!!

    This is something I can't wait to play with. Looks good. I've done low carb in the past but over this past year feel back into old habits. Resulting in a regain of 50 lbs. My family is now in the process of moving and so what extra time I have I'm using to relearn. Very grateful to have found your channel and to be relearning and collecting your recopies. Once we get moved it's back on. Thanks for sharing

    Ingredients
    1 cup heavy whipping cream
    2 TBSP white vinegar
    1 cup almond flour
    1/3 cup vanilla egg white protein powder (whey protein powder will also work)
    Tbsp. coconut flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    if desired, and sweetener (liquid or powder or combination)2 pastured eggs
    3 T melted butter
    2 tsp vanilla extract
    2 TBSP coconut milk or water
    Instructions
    1. Start by making “buttermilk”. In a glass bowl, mix cream and vinegar. Set aside to thicken. In a mixing bowl, add almond flour, protein powder, coconut flour, baking powder, baking soda, salt, and cinnamon. If using powdered sweetener such as Splenda, Swerve, or powdered stevia, add that too. Mix well and set aside.
    3. To the “buttermilk”, add eggs, melted butter, vanilla extract, and coconut milk or water (may need to add more if batter is too thick).
    4.Use a whisk to blend it well and then add it to the dry ingredients. Mix well. I used ghee in a medium to low heat skillet (almond flour burns at medium temperatures).
    Although the texture is very much like traditional pancakes, the batter is a bit more fragile, so making them a little smaller, about 3 inches in diameter, makes them easier to flip. Serve warm with sugar free maple syrup and butter.

    I have your new cookbook, "Cooking Keto with Kristie" & found the recipe for these pancakes in it. We have been eating keto for about 5 or 6 weeks & were longing for something that had a bread or pancake consistency. I made these pancakes yesterday but like a lot of others who have commented, I couldn't turn them over. I kept at it until all the batter was cooked & even the messy ones were edible. We couldn't believe how great they tasted -- thank you, thank you, Kristie! Had some left-over in the fridge & husband just heated up a couple in the micro-wave & they still tasted great. I will probably just put them in muffin tins next time & bake in the oven as others have done because it was time consuming standing at the stove. Wonderful combination of ingredients, though.

      With some maple flavoring in the batter, they made our breakfast sandwiches taste like McGriddles, only SO much better. With a little faux syrup (browned butter, stevia, and maple flavor) to dip, the little ones felt like they had a real treat. It feels good to share food with my family, instead of having to always have separate meals. So, thanks for sharing your recipes! I never thought to see a day when I would be excited to get oat fiber in the mail. Hahaha!

    thanks for the recipe. I just made it (minus the pork rind dust). That taste is absolutely perfect. Very sweet and cake like. However, they were impossible to flip as pancakes. And there was a lot of batter. so I poured half the batter into a silicone cupcake pan and baked for 25 minutes on 380F. They turned out perfect!

      +Eva Lina The pork rinds as as a "glue". you could add a few tablespoons of coconut flour! Glad you able to salvage it!!

    You really knocked it out of the ballpark with these, Kristie! We enjoyed these for breakfast this morning and still have a ton leftover for the fridge (always a bonus!). These are WAY more delicious than any cream cheese pancake! P.S. I think you'd do fine in culinary school!

    Kristie, these pancakes were amazing, but no matter what we did they would not flip. I tried them as muffins (both mini and regular) and they were just too heavy to rise and bake all the way through, so I lined a sheet pan (jelly roll pan) with parchment and spread the batter out and baked it flat. I cut the pancakes with a pizza cutter and POOF pancake sticks I was even able to add blueberries! Thanks for your recipes!

    Recipe link didn't work! Enjoying your videos. Suggest you only buy and use sea salt or pink Himalayan. Regular salt supposedly scratches inside of arteries causing narrowing when cholesterol tries to patch them. Also, I would use organic or natural soda. Thanks for recipes!

    I look forward to trying this, without an appliance. However, I wince every time I watch you use Morton’s Salt. I love that you mention substitutes. Would these turn out better if you allow the batter to thicken? I see they have a weird consistency compared to flour pancakes. I purchased a syrup suggested by another keto cook, but have yet to try it. I have to disagree with one statement you made though. I think you would excel in Culinary school!     I don't know if you knew but there is a syrup that is sold by walden farms that is Keto friendly.

      +Suplado1er Yes, there are several low carb syrups, but many of them have malitol or other ingredients that raise my blood glucose or simply don't work for me. If you're one of those lucky folks who can enjoy them, than good for you!

      Well you have inspired me with your great skills and creativity...I have always had a love of cooking and am looking into building my keto pantry thanks to some helpful tips you've shared..thanks so much! I have a rare muscle disease called McArdles disease that has led me to this path of eating...funny thing is I store too much glycogen in my skeletal muscles but I can't retrieve it for energy!! Interesting and very rare...so switching to using ketones will be substantial in my life...but I've only recently learned and researched a Ketogenic way of eating...glad there are lots of options in preparing foods...it makes it so wonderful:) looking forward to making some of your recipes soon. I will share a pic or two when I do.

    I'm glad your looking for better options ( flavors) on baked goods , cause most I've made all came out too Eggy for my liking . Now for something this Yummy looking , I might buy Goats milk . I was hoping after being on Keto - my stomach would heal , no such luck Yet!

      SharpieNail Art Try coconut cream or coconut milk. that would sub for the cream here. Maybe use a little less because it's not as thick. You won't get the "buttermilk" but the vinegar will still react with the baking soda.

    OMG these were delicious. I actually like them better than regular pancakes! I had no trouble flipping them. The only change I made was to add an extra egg because I didn't have the egg white powder. Oh my-- excellent. I made 3 pancakes and that was truly more than enough for my breakfast. I took the remaining batter and stirred in a little bit of freeze dried raspberries and blueberries (couldn't make up my mind) and spooned the batter into coconut oil-sprayed muffin tray--- into the oven at 350 degrees and I have enough muffins for breakfast for the next week! Thank you so much! I can stay on this with pancakes as an occasional treat that won't break the diet!

    I just made these pancakes and they were delicious! I did have trouble flipping them and I should have just mixed half the batter because it made way too much for my husband and I. I wondered if you could cook them and freeze them or how long the batter will last in the frig? Love your videos!!

    Just tried these pancakes they are SUPER delicious!! Not eggy at all and to even my non-low carb husband they tasted like the pecan waffles at waffle house..... HOWEVER.... they are a mother to flip!! lol I made them "dollar" size like you said and that helped, but also the lower heat on the griddle and just being patient and letting them hang out for about 5 min at least on first side and then try to flip... Do you know if these work in a waffle iron if I made the batter slightly thicker? Have you tried that yet? thanks!!

      Suzanne Holman They are a total PITA to flip! I've got to fix that. Please try the waffle iron and let me know. Reducing the amount of butter seems to help. It's especially hard to flip them if you use coconut flour and not oat fiber.

      Cooking Keto with Kristie this is a very long winded way of making pancakes in my op, there are many Keto/GF or low carb pancake recipes that don’t need all these ingredient. All that sweetener is not needed at all in my op. I only put a small amount of Blueberries in at the end. Thanks for your time in sharing.

    couldn't find "Oat Fiber" locally, i will keep looking. Other comments indicate this is the key to your demo-flip holding together vs. coconut flour (crumbly).

      RhymHiz Song Is highly unlikely that you will find oat fiber locally. Go with the Anthony's brand on Amazon, it's a solid option!

      Michelle Feliciano I ordered it from Honeyville, which is where I tend to buy my almond flour and hazelnut flour. A few times a year they offer 15%-20% off with flat rate shipping. I buy the 25lb bag of almond flour and then divvy it into gallon freezer bags. All of my nut flours get stored in the freezer. Hope that helps!

      Kay Marl The stevia is usually to take away some of the cooling effect of erythritol. However, many of us don’t mind it.
