Low Carb Gorilla Bread: A Paula Deen Copycat Recipe!

  • Recipe for Low Carb Gorilla Bread I've included two versions. One uses coconut flour and the other uses oat fiber. Both are delicious!
    Version One with Coconut flour (video version)
    1/4 cup coconut flour
    1/2 cup almond flour
    1/2 tsp salt
    1 tsp baking powder
    1 1/2 tsp cinnamon
    3/4 cup Sukrin gold (brown sugar)*
    2 eggs
    1 tsp vanilla
    1 1/4 mozzarella cheese, shredded
    3 ounces cream cheese
    3 tablespoons of butter
    1/3 cup Sukrin gold (brown sugar)*
    1 tablespoon of cinnamon
    3 tablespoons butter, melted
    3 ounces cream cheese cut into pebble sized bits
    1/2 cup Sukrin fiber syrup gold
    1/2 cup chopped pecans
    Preheat oven to 325. Mix all of the dry ingredients. Add eggs and vanilla. Melt mozzarella, cream cheese, and stir. Melt butter. Add all to dry ingredients and mix by hand until the dough is well mixed. Don't overmix.
    Mix 1/3 cup Sukrin gold (brown sugar), 1 tablespoon cinnamon, and melted butter.
    Form small balls of dough and wrap around the pieces of cream cheese. Roll this in the cinnamon, brown sugar, butter mix and layer in a well-greased small bundt pan or 8" by 8" baking dish. You may want to add 1/4 cup of pecans to the bottom of the pan first. After the first layer covers the bottom, pour a generous cover of Sukrin fiber gold (or low carb syrup) over the dough. Add a second layer starting with pecans and dough rolled in cinnamon mix. Pour another 1/3 cup or so of Sukrin fiber syrup gold over the top.
    Bake at 325 degrees for about 35 minutes depending on the size of your dish. Check after 30 minutes. Cover with foil if it browns too much. Let sit at least 20 minutes before serving or before turning onto a plate. Enjoy!
    *if you don't have Sukrin gold (brown sugar), use your favorite granulated sugar and 1/2 tsp of molasses.
    Oat Fiber Version
    2/3 cup almond flour
    2/3 cup oat fiber
    2 tsp cinnamon
    2/3 cup Sukrin gold (brown sugar)
    1 tsp baking powder
    2 eggs
    1/2 tsp salt
    2 cups mozzarella, shredded
    4 ounces cream cheese
    6 tablespoons butter
    1/3 cup Sukrin gold (brown sugar)
    2 tsp cinnamon
    3 tablespoons melted butter
    1/2 cup chopped pecans (optional)
    1/2 cup Sukrin fiber syrup gold
    3 ounces cream cheese cut into small pebble-sized bits
    Follow directions above.

    I’m so glad you used coconut flour on this. I searched my local stores and could not find oat fiber, so I’ll need to order it online sometime. My mother was talking about monkey bread last summer. I’ve never tried monkey bread and look forward to trying this recipe out next time she comes to visit.
    I’ve just started Keto about a month ago and that is something else she’s going to have to adjust to next visit.

    The sucron gold syrup that you use is known to spike your glucose numbers by 89 points just for 2 teaspoons. That's a lot if your trying to stay in ketosis, just an FYI, I love your recipes

    i just watched this video and took note of your comment about Trader Joe's cream cheese changing carb count. i buy from TJs all the time but you do have to watch their carb counts (those are the ones i look at). i bought a so-called low carb bread of theirs for about a year sometime ago because it showed about 4 g net carbs per slice ... turned out they had done the calculation wrong and it was about 13 g per slice! or so one of their employees said to me ... that "they screwed up the whole thing" ... don't get me wrong ... i still LOVE Trader Joe's products if not their marketing decisions. (i.e. to not admit their mistake but just change the counts which i didn't notice for some time)
    this gorilla bread looks FABulous ... i'll definitely try it soon! thank you!

I thought it was so sweet that he got up without having to be told and got you the other set of measuring spoons.     I found that when you put the flour in the cheese and mic it , it incorporates so much better in the cheese/ you will notice the difference when you do this / with this dough , you can do so much / love this bread / ty Kristie

      Hi Kristie, Hope you and the family had wonderful Christmas time together: Ya, I accidentally put the flour and cheese together and nuked it . It turned out smooth and not grainy: To me , it made a huge difference and you will see when you try it : just put a spoonful of the two together , nuke it and you will notice it immediately: Ha, guess what I'm trying tomorrow? NOODLES! I'm going to use flax meal, psylium husk ,cheese and eggs. I have another replacement for the cheese if it doesnt work out , oat fiber and glucomannan powder : This mix makes great wraps in a jiffy but with a little tweaking , it just might work: I love NOODLES ! This mix also is great for dumplings! I'll let ya know how it works. Love to you : Gods speed and blessings to you and yours !

    That fiber syrup makes my blood sugar go up. I don't know what the difference is between the syrup and the powder but I don't get a spike with the powdered brown sweetener.

    sorry I went back and read the info on the website for the sukrin and it explains that the carbs aren't really seen by your body on the sukrin gold, but for the fiber syrup it warns to be careful because it may be seen to increaseyour blood sugar level, so I am going to test before and after eating to see if it affects me. it again thanks for the recipe, ours is just now ready to remove from the oven. states that it may spike levels in some people. I also was afraid to use oat fiber like you said you had used because i am trying to eat a LCHF Keto diet and avoid all fattening grains, so I was afraid of using the oat fiber it is high in carbs but if I remember correctly that is offset by the same amount of fiber.

    I made this and the dough was gooey. So trying to make the balls stick together with the cream cheese and then the cinnamon brown sugar mix was extremely difficult! It is not rising much either. The butter did mix with cheeses and it was loose. I think it will taste good, but not look anywhere near as good as yours. I used swerve brown sugar as that is my favorite. Any suggestions?
    Maybe melt the butter separately and add it separate from the cheese mix?

      +amanda reed I talk about it a little in my video on alternative ingredients. Most recently I've been using Sukrin products exclusively. It's mainly erythritol and stevia, both of with are natural and do not typically affect blood glucose

    I am late with this comment. But I use swerve brown sugar. it is erythritol based. We have dogs too, and I don't want xylitol in my house. I love erythritol. I am not a fan of fiber liquid sweeteners. Do you know if there are any newer alternatives for that?

      +ptiteourse so, for the dough recipe, the entire recipe has roughly 24 TOTAL carbs. The 4 ounces of cream cheese add another 4 total carbs. It also depends on how you count the sugar alcohols. I don't generally count the Sukrin syrup or brown sugar as it doesn't impact my blood glucose. I hope that helps!

    We are baking this now, thanks for your work, but I have a couple of questions.
    I ordered the sukrin products a couple of weeks ago and when we went back tonight to review your video before making this I heard you mention the discount but it sounded like you said pet friend as a code? I can't make the words out but read "friends" in your comment, what is the code because I already ordered once and missed the discount, thanks.
    I also noticed that the sukrin gold lable said it was 5 G. of carbs for 1 teaspoon and real sugar is only 4 G. per teaspoon it looks like I may not be able to eat this recipe and how can it be low carb?
    BTW, the uncooked batter taste too good! probably because it is really high carb?

    You should test your blood sugar levels after you use the fiber syrup you might be surprised at the results...I just learned this myself from another channel

    Have you tested your blood glucose after using some of the sweeteners? There are reviews on Amazon that the fiber gold spikes blood sugar just like pure sugar. I just bought some Just Like Sugar and now am going to try and return it because I just found similar reviews on that. But I ordered a blood glucose meter so I can test the effects of certain sweeteners on me and certain meals as I am very sensitive and two of my grandparents and an aunt had type II diabetes and I have insulin resistance, so a little can spike me high. I just wonder how many of these products are stalling us.

    Is the sukrin gold a sugar alcohol? I tried to make a cheese cake using swerve and not only was it not that good it really bothered my stomach.

      erythritol is a sugar alcohol; however, it's one that typically doesn't give tummy issues. nonetheless, you could be sensitive to it. Sukrin gold is a blend of sweeteners, and yes, erythritol is in there. I truly don't care for just Swerve. before I started using Sukrin, I always mixed Swerve with either liquid sucralose or liquid stevia to offset the aftertaste. I'm sorry that your cheesecake didn't taste good. the alternative sweeteners can be hard to get used to. I went several months using nothing and gradually my tastes adapted. no one has told me that they didn't like the Sukrin products, but your experience might vary.

      +Joseph Hurd wow! so, for the dough recipe, the entire recipe has roughly 24 TOTAL carbs. The 4 ounces of cream cheese add another 4 total carbs. It also depends on how you count the sugar alcohols. I don't generally count the Sukrin syrup or brown sugar as it doesn't impact my blood glucose. I hope that helps!

      Thanks for the quick reply. I looked into Sukrin Gold and found this on their website:
      "Technically, erythritol is a carbohydrate, but it does not behave like
      regular carbohydrates such as sugar and starch. Erythritol is not used
      as energy in the body, but is excreted unused in the urine. You do not
      need to take into account erythritol when calculating your intake of
      carbohydrates."
      I can extrapolate from here, but, obviously, very few carbs per ball, even if I binge and eat the whole batch! I can't wait to make some!

    Yum!! Cant wait to try this.. I made the high carb version last year with the cream cheese in it but I never heard it called Gorilla Bread.. Makes sense though.     Sukrin has 5 gr carbs in 1 tea spoon . How come then it considered low carb ?

      Hey Anna, I just saw your comment and thought I'd try to help! Sukrin's main ingredients are erythritol (a sugar alcohol, on the label as 'polyols') and stevia which aren't broken down by the body and so don't impact blood sugar levels. You can effectively ignore the carbs in a lot of sugar alcohols. It's useful to know the GI (Glycemic Index - how much a sugar/sugar substitute affects blood sugar levels) of whichever sweetener you use - the lower the better! Erythritol has a GI of 1 and stevia is a natural sweetener has a GI of 0!

    Just a suggestion on the microwave... put a thin shim of paper or cardboard on the corner closest to the camera so the door doesn't interfere with your video. It is very hard to see what you are doing when the microwave door is open.

    Cream cheese sounds terrible monkey bread is butter cinnamon sugar not cream cheese
