Bring on the Crowd: Taco Skillet Bake

  • Another great recipe for any large gathering or for a simple dinner. This recipe uses hamburger and Mexican sausage (chorizo) for an out of this world skillet bake.
    Serve it with fresh avocado, salsa or pico, and sour cream. Your guests will never know how simple it is--they will just think you're a culinary genius!
    1.25 lbs ground beet
    1 lb Mexican sausage (chorizo)
    1 cup of chopped onion
    1 cup chopped green bell pepper
    1/2 tsp salt
    1 tsp chopped garlic
    1 tsp cumin
    2 tsp chili powder
    1 14-ounce can of crushed tomatoes (no sugar added)
    1 3.5 ounce can green chilies
    3 ounces of cream cheese
    3 (or more) cups shredded cheddar cheese
    Brown ground beef and chorizo. Add onion and bell pepper to the pan and cook until tender. Add seasonings, crushed tomatoes, chilies, and cream cheese. Mix well. Add shredded cheddar cheese. Bake in 375 degree oven for about 20 minutes or until hot and bubbly.

    Mrs. Kristie, I am a new subscriber and I've been binge watching your videos, lol! We have just started our keto lifestyle. I fixed the Taco bake tonight & it was SO delish! A few days ago , I fixed the crack slaw & loved it so much that I passed the recipe off to a friend of mine. Hubby & I are looking forward to trying your other recipes. Thank u for your inspirational videos. Like you, I m short(4'11"). We have 2 stick together! :-)

    Great recipe! - Years ago I learned to always take low carb snacks to social functions, low carb veggies, low carb dip, lots of cheese and ice cold flavored soda water - I only ate what I brought to the snack table so even if I over indulged because of the social atmosphere it was not really too bad - I really love wine, so I just put some in the soda water and made a spritzer - I never had a sweet tooth but I love chips and dip, pretzels, popcorn and any other high carb, high salt snack - Unfortunately I slowly developed bad habit, so now I am starting again - Thanks for sharing your weight loss journey and recipes like this -

    OMG! I actually cooked something I enjoyed eating. I don't usually follow a recipe closely because I don't have all the ingredients ( mostly seasonings. since I don't cook enough they tend to go bad so I buy and toss). I've stocked up. Now excited to try more recipes from the cookbook.

    Love your videos. They help me stay keto. Tried the cheesecake with a pecan, hazelnut flour, oh my was it great. How soon will next cookbook be out. Knowing that regular food can be made keto keeps me going. Your videoes and diet doctor are my main keto sites.

    Hey Kristie! I made this tonight. I prepared a salad on the side with romaine, avocado, cilantro and scallions and for my family made a steam bag of brown rice to serve it over. For myself, I made a medium cooked egg and ate it kind of like a huevos rancheros.... It was very filling and super easy! I LOVE your recipes. You are my keto idol!

      You truly are an inspiration to me. After watching your video about your weight loss journey, I found it to be a close mirror image of my own life. I guess that was my "connect" to you. HOWEVER,,,, Unlike your daily vow to yourself to "just get through today", I wake up every morning and say to myself... I've had enough!!!!! Then I check my urine and I am in ketosis or I watch such inspirational people as yourself on youtube or on some of my facebook forums and I think, this is possible. I reflect on your words and your success more often than you might think. I always look forward to your videos and totally crack up at your silly boy! I love how patient you are with your children and how your whole family has a part in the making of the videos together. Your daughter is so autonomous managing this way of eating. She really gets it! You should be proud of her! (As I am sure you are). It's tough being a teen and to avoid all the junk that she encounters and to avoid it is awesome!       Thanks for the kind words about my daughter. she amazes me--everything I wish I could be. I'm not always so patient with them, but I enjoy having them in the kitchen helping. I couldn't do any of this without their support.

    Looks good - I'll give it a try. Incidentally, I know what you mean about not being able to eat things when in a group setting. I can't eat gluten (well, I could if I want to get sick), and it is only possible to eat something other than my own dish, if another person brings something that is also gluten free. So, when the gluten free people are all in attendance, we get to eat what each of us has brought. It is VERY hard when I am the only one, plus going to dinner at someone's home is almost impossible. Of course, most people just think that gluten is bread or pasta - they don't realize that gluten is put into so many things as fillers and stabelizers, etc. Thanks for using individual seasonings for the video since Taco seasoning usually has gluten in it.

      +Glenda Correll Exactly! You have to read every label. There are times when I simply explain that my body is carb intolerant. That puts it on me and doesn't put a value statement out there that judges what other folks eat. If they then google carb intolerant they will find good info by Dr. Phinney and Dr. Volek.

      Costco sells a gluten free McCormick taco seasoning for about 4.99. Also try offering aldente corn noodles to your gluten eating guest sometime, my picky little brother actually enjoys them even more than the old fashioned wheat noodles.

    Hi Kristie! I'm not sure if this is the right place to ask you this since it's not about the recipe, but do you count macro-nutrients? Do you have a certain amount of carbs that you try to stay under, or do you just try to eat as low carb as possible? I hear different things (max 20 carbs vs. max 80-100 carbs) about getting into ketosis. I've ordered the first book you recommended, but am anxious to get started now. It seems like a lot of the people who do Keto are athletes, which I am not!, so I'm not sure how much of what they say applies to me. Thanks! Also, your necklace and the blue are very flattering on you. 😌

      the recommended macros I've followed are from Dr. Westman. His general eating plan is fewer than 20 total carbs per day without worrying about calories. what I also understand that to follow a ketogenic diet usually means 65 to 70% of calories from fat. as you get closer to goal many folks find that they need to eat a little less fat and more protein. hope that helps!! excited that you're excite!

      Okay, so 20 carbs is the standard. Good to know. Guess I need to get an app to help me keep track. So much to learn and get straight in my head. I'm so thankful I found your channel. I have kiddos too (ages 10, 12, & 15) so I really appreciate seeing how you include them, and your husband. Went to Trader Joe's yesterday and bought most of the stuff you recommended. My kids love the bacon cheese, and I agree with your hubby on the Unexpected Cheddar. OMG! My new favorite! Have a great weekend!

      Sounds like you're a fast learner! The free app MyFitnessPal is. It perfect, but the one I prefer when I track. So glad the Trader Joe's video was helpful! Their cheeses are amazing. I like the full fat raw milk cheeses and my daughter likes Kerrygold Dubliner from there. My husband still has me buy 6 packages of unexpected cheddar at a time!! Lol! We get there maybe once a month so he has me stocking up. Your kids are at great ages to understand the science and do this along with you.

    Going to serve this the night before Thanksgiving...The family will be arriving in the evening to decorate the Christmas tree and I need something easy for dinner that is Keto based. I do make my own taco seasoning that is super simple to make from scratch. I always have it premade on hand and of course it is sugar free.

    With the chorizo and the cheese, that is super oily. Why not use very low fat ground beef instead of 90/10?

    Make your own Taco seasoning. Ingredients
    2 tablespoons chili powder
    1 tablespoon ground cumin
    1 teaspoons xanthan gum
    2 teaspoons kosher salt
    1 1/2 teaspoons hot smoked paprika
    1 teaspoon ground coriander
    1/2 teaspoon cayenne pepper
    Use 2 1/2 Table spoons per Lb on meat. Store rest till next time.

I just saw your Video ( meal plan) where you mention Olive Gardens Zuppa Toscana. Just started making it last year. Thought it was a lost Recipe. But thanks to you and your modifications I can still have it! I have one request. How about meals for your husband to take to work ideas. My Husband loves his sandwiches. So far I have talked him out of bread. So he took up Mission Tortilla wraps! I need suggestions to help him along. I am not trying to force him to eat this way he is willing with guidance. I just am learning myself so I need help guiding him lol. I just received the ingredients for your flat bread.Also need to replace his bag of chips habit.

      +thehomegardener was going to recommend the flat bread! lol! will he eat pork rinds for crunch? we like a product called Moon Cheese, it's like a crunchy cheeto and very low carb. can he take leftovers to warm? the flatbread might work well if you add seasonings he likes. what about biscuits for sandwiches?

    Please look for Hatch green chili from NM and you'll love Mexican vanilla (La Vencedora) cheapest if bought in Mexico but available on Amazon. Takes about 1/2 as much to start but you'll love it so much your oops may get bigger over time. Hope you try these. Sherry

    I watched another blogger make taco meat recently who put some of the meat into her Ninja after the seasonings were added which she felt "incorporated the fat into the meat better". LOVED that idea and will try that next time i try your Taco Bake. What are your thoughts Kristie?

    I made this today for the first time and i have to say it was AMAZING!!!! OMG totally addictive.. the taco taste and with the sausage and cream cheese in there makes for a terrific flavor, I ate it with Keto connects low carb naan..     I do not care for the flavor of chirizo at local restaurants so I am going to substitute regular non-nitrate sausage instead and we will see how it taste! thanks for your hard work making these videos and I have been saying all along we could hear you better if you had a mike, glad to see you got one, it does help!

    One could also use pork rinds in place of chips if they want to eat/serve it like a dip. Also on a slice of cloud bread and eat as an open face sandwich or on top of a large cheese crisp like a tostada.

    Kristie, I am new to Keto and so glad I found you and your video's on UA-cam :) Do you have an idea for alternates to green peppers? And do the green chilies taste anything like green peppers? I just can't eat them. I typically leave them out of everything I cook and add more onion:) but that adds more carbs. Thanks!!

    I didn't know that about the brighter coloured vegetables being higher in carbs, that's really useful to know. Dish looks delish too!

      +Jonathan Russell That's just a general rule of thumb, so I always check for yourself. I know it's true for the peppers and cabbage. And of course, wouldn't ya know red, orange, and yellow are my favorite peppers! lol!

      great question. for most folks, it would serve 8 especially with avocado, pico, and sour cream or maybe even lettuce and pork rinds.

    I've always been told that you can't cook acidic foods like tomato sauce in cast iron. Guess it's not true!

      thanks for that validation!! you can drive yourself crazy trying to keep up with all the various media. I'm starting to think I ain't got time for that! lol! maybe if I just focus on videos and keeping the blog updated, the rest of it won't matter. I don't do this for fame or fortune or even for my livelihood, so the most important thing is to just keep on keeping on!

      +missKalltheweigh The only chips I've made are kale chips. I've wanted to try zucchini chips and spinach chips, but just haven't gotten around to it. when I want crunchy, I tend to eat pork rinds or moon cheese. OMGee I love moon cheese!
