We never have to look at these labels here because all of these products are already certified and expected to be all of those good things. No Wonder most of the American foods are just "Forbidden in the EU!"
That's why American's are obesed. And it's not fair that we have to pay more money for cage free eggs, but make sure that it saids organic. Free-range this and that and grass fed. Non GMO and it has the label. I swear sometimes this country is trying to kill us.
It’s not quite true like this, here in Europe we also have to look carefully at the labels, because factory farming is all over the place unfortunately, and you do really have to look carefully that you buy something called “Bio” meaning organic/grass fed, free range etc.!! And those products are quite a bit more expensive than factory farmed beef or food in general!! And on top of that you have different certified labels, of which not all of them are as “Biological” as they should be despite the declaration!! It’s frustrating when you pay more and are still not 100% sure how much “Bio” it really is!! But this is the same all over the world, those labels have to fulfill a certain ‘standard’ and the rest can bee whatever! It’s not so easy to know exactly which of these labels are really good and ‘clean’ labels you can absolutely trust! Each country has different labels, which makes it even more complicated, you really only learn to know the right “stuff” when you live in the country AND you’re informing yourself at sites like Greenpeace, Peta etc.

Two important observations which may help others: in Europe it is difficult to get grass fed dairy in the winter months due to slow down of grass growing; I have had a serious problem with dairy for many years but am amazed that when I TOTALLY gave up gluten (over been avoiding it for many years) I find that I can now tolerated dairy. What a revaluation! I think it was a casein allergy, definitely wasn’t lactose but am sure that gluten enflamed my digestive tract so that if I consumed dairy it burned, all the way from my mouth onwards. I can’t believe it.
Raw cow or goat milk are best since they contain bacteria and enzymes that help digestion whereas the pasteurized versions they remove it causing all sorts of problems.
There was no mention of ultra-pasteurization. The shelves are filled with all sorts of grass fed products but all the nutrition has been erased by the method of flash pasteurizing at about 280 degrees! That's why the expiration dates are between 2-4 months! All your dairy. Less spoilage, but at our expense.
All my childhood I suffered from very strong migraine pains. Pain most of the time was so strong that I was unable to move. Sounds and bright light made things even worse. My parents tried everything. I spend years visiting different types of healthcare specialists. Even had a full brain CT scan at age 13, which is not recommended for children due to such high radiation dose. No one could tell me what was causing such strong pain and no one knew how to help me. And only when I left my parents and started living on my own I understood where the problem was. It was dairy products. My body does not tolerate it. And while I been living with my parents we consumed dairy products on a daily basis and this made me very sick.
The only dairy products I eat are Greek sheep/goat yoghurt and sheep/goat feta cheese, in small amounts a couple of times per week. No bloating, they are very low in sugars and carbs and all organic of course, complete with their skincare. The yoghurt in particular, we purchase it inside little clay vessels and doesn't last very long. Feta cheese on the other hand is on another level when it comes to cheeses. Hi! I have access to raw goat's milk, could you tell me how do you make goat's sour cream? I made cream cheese by adding 2 tbsp of apple cider vinegar in 3 litres of goat's milk( I previously heated it on the stove, removed from heat when it has boiled, I don't know the temp :/) , left it for 3 days on room temp. and drained it through the cheesecloth, also, does anyone know how many carbs ig might have? 🤔 Thanks!!
Can't go wrong with raw milk in general it's a good source of nutrition and calories. Though I think I am going to have to cycle off on the raw milk and do a concentrated keto for a while. Can't see why people would avoid it, from healthy sources not the dirty sources.
Dr Berg, would you please look into and report on home-fermented dairy, specifically kefir? Reason being, commercial kefir is low in benefits and high in sugars, especially lactose. Whereas home fermenting you can control the lactose content and the benefits are magnitudes higher-b's, K and peptides. Same with yogurts, including non-dairy types. Thx ❤️
It's very easy to make Kefir. A teaspoon caucasian kefir grains in 1 liter milk (cow/goat/sheep) outside the fridge for 24 hours / more or less is a question of taste. The grains are growing very fast, so you sure can find some in the community/neighbourhood . Do not use metal strainer or spoon.
@@gk-mt3vy yes, I'm well aware of how to brew Kefir, but I want Doc to cover it, including nutritional aspects. However, you're mistaken with the common myth about metal. You can use stainless steel for processing kefir, it's not a problem whatsoever.
I am on Keto for 3 years, and started doing dairy free keto since last year. I feel so much better. I still consume dairy products once in awhile when I am outside or with friends but I make sure those are pasture raised.
We have some cows at home and we make many different kind of product from milk. My favourite one is the fresh whipped cream with some berries after fasting +workout.

He mentions that he is talking about the carbs in it. You need to check the carbs 8n the brand that you want to use. Then factor in how many spare carbs you have. Finally figure it out. Since you mention kitchen scales, I am guessing that you have a basic carb to calorie meal plan or a specific carb number and lower plan.
Ive been making my own greek yogurt from organic milk and i strain it till its as thick as cream cheese. Then add a little water to cream it to taste and texture. I also add vanilla bean paste and stevia/monk fruit.
There is a Greek yogurt with no sugar. It's called Chobani and it'll say zero on top; however, it does have monk fruit and stevia in it. They don't tell you that plus it's flavored with vanilla. It's wonderful! I'll eat 2 tablespoons with fruit.
You just confirmed what I suspected about lactose allergy. I think the reason why some ppl have this, is because they lack the good bacteria in their gut. I suspect its possible to fix it, if you eat certain food with the good bacteria. In fact I think most food allergies is due to lack of good bacteria in your gut. If you perform enema which flush out your colon, you may develop food allergies later on unless you replenish your gut with good bacteria. I think this happened to me. I was able to eat soy beans all my life, but suddenly I develop allergies to it after flushing out my colon

I have been suspicious of my increasing sinus and general congestion over recent years and was certain of the connection between dairy products and this symptom usually occurring upon waking in the morning, plus the lactose intolerance, good to have confirmation that it is not necessarily an allergy for that. I agree with you, if I consume daily when I awake in the morning I have mucus, nasal and or congestion! Normally I never had to blow my nose or clear my nasal passages.
Great advice here….Problem is, in the end we still can only choose from what we can obtain…and afford. I try to keep my (whole) milk consumption down to half a pint a day…it does have some carbs and sugar in it, but I need my Cheddar cheese!!! We have also totally stopped spreads and veg oil use, now converted to real butter and extra virgin Olive oil instead. Yes….I was shocked looking at flavoured bio yoghurt…So much carbs.

Heads up! Yoplait now makes an ultra-filtered greek-style yogurt that has 2g of carbs and 26g of protein per cup! It's the most keto-friendly yogurt I've yet to find!
@@bagelz3359 Eh, actually this is healthier! Less carbs and sugar because it's triple filtered as apposed to twice filtered. Sadly, Yoplait doesn't carry the YQ yogurt in many places anymore and I can no longer find it. Next lowest carb count is 6-7g per serving for regular plain Greek yogurt.

I'm eating a carnivore diet/OMAD currently. Trying to cut also on dairy. I replaced butter with coconut oil. Feel better to be honest. Will keep doing that for the next month.

Go to any raw milk cheese maker and ask if they know a farmer to get raw milk from. Or if you know any farmers, ask them. Technically, being part of a cow share will legally allow you to get raw some milk. Just don't advertise it.

However in sud Italy I see people combining all the time carboidrates with protein and fat and they live over 90 and not have diabetes etc. Get a bit confuse when I get these data and sometime no match with what I see. They of course eat good quality food and not eat junk but not pay attention on combinations.
Domenico di pierro Food is better quality in Italy than in US. Dr Berg's practice is based in US and he saw patterns of many sick people coming through his office. It all goes back to the food.
Domenico, Italians who do not live in big cities mostly eat products that they grow locally. The land is fertile, and regulations about hormons and GMO are strict. People who live up to their '90 (a part being blessed with a great DNA) are people who starved or had a very low calorie intake during the many years before and after World War II. After many years of "intermittent fasting", these people have more chances of still living a good-healthy life, even if they eat some carbs mixed with proteins and fats ( mostly olive oil locally made). Many of these old people remain active even in their '90, they walk a lot, they bike, they have a good social life, they make their meals from scratch, drink mineral water, they participate in local fairs and religious events, they take care of they grand-children...There are at least 3 locations in Italy with a lot of people who get older than 100. In one area, these falks largely use a special tipe of locally grown rosmary... I think longevity is an ensemble of factors, and diet plays a huge role in it, but it is not the only answer.
@Lorella Paltrinieri I enjoyed your comment. My son lived in Rome for several months during his university studies and his health felt liberated over the better quality of food there. He has had expansive food allergies all his life and they cause much inflammation for him.
I think it's the quality of the food and lifestyle in general. 7 years ago, I went to Italy for a 3 week vacation and weighed myself before leaving home. We walked a lot everyday and ate whatever we wanted. Most days it was a small breakfast, like a cornetto & espresso, a 2 course lunch and a nice dinner with wine. I had gelato almost everyday and also had it twice on 2 occasions. I came home, weighed myself and I had lost 15 lbs. I couldn't believe it! Granted, we walked a ton, especially the 3-4 days in Rome, but I came away convinced that the food had something to do with it. Obviously, nothing scientific, just my personal experience.

I think is the food but also when you go for a vacation in a new place you are less stressed and generally more uptone and the body in that state work much better. So I think its a lot different factors involved. For instance I do kinesiology testing ( muscle testing) and I have tried to see how the body reacts on myself and other people. I have tested if I combine Rye bread with coconut butter and almond butter and despite what DR. Berg says about not combine carb with fat the results were impressive.Ths muscle was very strong and means iwas very healthy for the body. While I tested tomato on myself and others and the results were shocking, the muscle turned very weak and seems the body dont like that., the same with carots. also I do believe body are different what is good for one may not be good for others. In generally i follow DR. Berg because a lot he says make sense and are good tips but some points like this one Im a bit in doubt as I see evidences that somehow dont match., Like many old people not on keto but on a moderate carbo diet with eating a bit of everything ( not junk food of course) and living over 90, and not getting the disease he mention. Also they do not take vitamins either. Interesting.

Use goat instead of cow's milk, as it has a more digestible form of casein. If on Keto stick to mature, hard cheeses which are mainly fat, and stay away from milk which is higher in lactose/sugar. Hard mature cheeses also have a higher amount of Vit K2. Using milk in Kefir, let it ferment for a few days as the kefir grains eat the lactose lowering the sugar/carb content.
I love raw goats cheese, buffalo mozzarella cheese and there’s a brand Wyngaard from The Netherlands ( this one is not raw but pasteurized) it’s incredible delicious to my palate, it has a top layer of rosemary,I just want to eat it all. All this to say I don’t miss at all cow cheese. Goat cheese is a staple in my house and the buffalo mozzarella for the pizza dough is pretty good as well. 😁

I had to resort to raw milk to satisfy my daily calcium needs. I couldn't eat enough vegetables to do that! Self magazine has a nutrient analyzer that helps one eat healthy. I use it to find out if my diet was meeting my nutrient needs. Consistantly short on calcium and magnesium. So I resumed drinking raw milk and chelated mgso4 supplement. My morning achyness is almost gone. I was raised on raw milk so there you go.
Ensure that you are getting sufficient magnesium with you calcium intake. You need to have about a 2:1 calcium to magnesium ration for proper assimilation.
Canada also regulates that any growth hormones (beef cattle) and antibiotics that may be given to animals for consumption follow strict regulations regarding a period of withdrawal, so that when they go to market, there is 0 content of these in them for our consumption. I believe Europe does the same; I wish we were more stringent, but it's better than no laws or regulations at all.
I couldn't live without dairy. Milk, yogurt, cheese, butter, cream. I never get any adverse reaction. Hopefully it's safe to continue for me. I always buy organic. Maybe it's in my genetics as there was a famine in which all the people that couldn't digest dairy died out. I find it strange that people always complain about adverse reactions to dairy.
Me too, I love dairy and do fine with it. It's concentrated food, though. Milk is liquid calories, cream and butter are concentrated fat, versus the portion of fat you'd get from an egg or steak. So I have to careful with consumption or I weight gain. If you can afford the calories and do well with it, what a lucky deal!
Often you use the terminology "whole cream". What exactly does that mean? We live in Canada, and whipping cream here is 35% MF. Is that what you would consider "whole cream"? We do buy it organic, but haven't been able to find it grass fed here unfortunately.

Raw cheese helps. Ate it one day and it was grass fed organic, etc. a day or two later I had normal formed stool because raw cheese is a probiotic. Before that rarely had healthy stool.

@@simpleme5719 I was the same. One thing I did when I suspected a food was the culprit. I did an elimination diet. I took one thing at a time out of my diet for ten days, then started eating it again. Taking careful note how my body responded. I had been diagnosed with taloosa hunt syndrome( inflammation of cranial nerve 4 or 6.) Doing research on that I came across an article that ask the question Is there a connection between Taloosa Hunt Syndrome and Gluten? Read it and started eliminating gluten from my diet. In about 7 days symptoms were decreasing and in one month almost all were gone! I felt human again. As I got smarter about what gluten and GMO foods do to the human body and took them out of my diet I felt better and better and got healthier. Since then I've discovered corn starch was what was causing RUQ pain. It rotted my gallbladder, had to have it removed. I'm 81 and feel 71. I raise my own chickens and have found a source of raw milk. When I can afford it I buy organic vegetables and am on a low carb gluten free diet. I wish you luck in finding the cause of your leaky gut. I urge you to try the elimination diet.

Raw goat milk for years: We raise Nubian dairy goats. Funny story, my Dad wouldn't drink the goats milk so as an experiment, we filled an empty store bought milk carton with the goats milk. He couldn't tell the difference and loved it!

Raw goat milk all the way! I make all my cheeses, yogurt & sour cream in the raw form (never heated over 100°) so all the enzymes are intact.
I bought mine from Costco and its their brand Kirkland and my family won't eat it because its so gamy tasting.

I made cream cheese by adding 2 tbsp of apple cider vinegar in 3 litres of goat's milk( I previously heated it on the stove, removed from heat when it has boiled, I don't know the temp :/) , left it for 3 days on room temp. and drained it through the cheesecloth, also, does anyone know how many carbs ig might have? 🤔 Thanks!!

Can't go wrong with raw milk in general it's a good source of nutrition and calories. Though I think I am going to have to cycle off on the raw milk and do a concentrated keto for a while. Can't see why people would avoid it, from healthy sources not the dirty sources.

Dr Berg, would you please look into and report on home-fermented dairy, specifically kefir? Reason being, commercial kefir is low in benefits and high in sugars, especially lactose. Whereas home fermenting you can control the lactose content and the benefits are magnitudes higher-b's, K and peptides. Same with yogurts, including non-dairy types. Thx ❤️

A teaspoon caucasian kefir grains in 1 liter milk (cow/goat/sheep) outside the fridge for 24 hours / more or less is a question of taste.
The grains are growing very fast, so you sure can find some in the community/neighbourhood .

I am on Keto for 3 years, and started doing dairy free keto since last year. I feel so much better.
I still consume dairy products once in awhile when I am outside or with friends but I make sure those are pasture raised.
We have some cows at home and we make many different kind of product from milk. My favourite one is the fresh whipped cream with some berries after fasting +workout.

He mentions that he is talking about the carbs in it.
You need to check the carbs 8n the brand that you want to use. Then factor in how many spare carbs you have. Finally figure it out. Since you mention kitchen scales, I am guessing that you have a basic carb to calorie meal plan or a specific carb number and lower plan.

Ive been making my own greek yogurt from organic milk and i strain it till its as thick as cream cheese. Then add a little water to cream it to taste and texture. I also add vanilla bean paste and stevia/monk fruit.
Grass fed milk taste creamy
Grain fed milk taste like chicken feed or grain
There is a Greek yogurt with no sugar. It's called Chobani and it'll say zero on top; however, it does have monk fruit and stevia in it. They don't tell you that plus it's flavored with vanilla. It's wonderful! I'll eat 2 tablespoons with fruit.

If I do any dairy, I get Organic and make it last longer by diluting is with distilled water. I turn a half gallon into a gallon.
That isn’t good. You are only getting 50% of the nutritional benefits that you get by buying 2% milk.
You just confirmed what I suspected about lactose allergy. I think the reason why some ppl have this, is because they lack the good bacteria in their gut. I suspect its possible to fix it, if you eat certain food with the good bacteria. In fact I think most food allergies is due to lack of good bacteria in your gut. If you perform enema which flush out your colon, you may develop food allergies later on unless you replenish your gut with good bacteria. I think this happened to me. I was able to eat soy beans all my life, but suddenly I develop allergies to it after flushing out my colon
If you're consuming homemade kefir you get with it a long list of beneficial organisms to populate your gut with dairy consuming microbes.

I have been suspicious of my increasing sinus and general congestion over recent years and was certain of the connection between dairy products and this symptom usually occurring upon waking in the morning, plus the lactose intolerance, good to have confirmation that it is not necessarily an allergy for that. Great advice here….Problem is, in the end we still can only choose from what we can obtain…and afford. I try to keep my (whole) milk consumption down to half a pint a day…it does have some carbs and sugar in it, but I need my Cheddar cheese!!! We have also totally stopped spreads and veg oil use, now converted to real butter and extra virgin Olive oil instead. Yes….I was shocked looking at flavoured bio yoghurt…So much carbs.

Go to any raw milk cheese maker and ask if they know a farmer to get raw milk from.
Or if you know any farmers, ask them.
Technically, being part of a cow share will legally allow you to get raw some milk. Just don't advertise it.
good to know. However in sud Italy I see people combining all the time carboidrates with protein and fat and they live over 90 and not have diabetes etc.

Food is better quality in Italy than in US. Dr Berg's practice is based in US and he saw patterns of many sick people coming through his office. It all goes back to the food.
Domenico, Italians who do not live in big cities mostly eat products that they grow locally. The land is fertile, and regulations about hormons and GMO are strict. People who live up to their '90 (a part being blessed with a great DNA) are people who starved or had a very low calorie intake during the many years before and after World War II. After many years of "intermittent fasting", these people have more chances of still living a good-healthy life, even if they eat some carbs mixed with proteins and fats ( mostly olive oil locally made). Many of these old people remain active even in their '90, they walk a lot, they bike, they have a good social life, they make their meals from scratch, drink mineral water, they participate in local fairs and religious events, they take care of they grand-children...There are at least 3 locations in Italy with a lot of people who get older than 100. In one area, these falks largely use a special tipe of locally grown rosmary... I think longevity is an ensemble of factors, and diet plays a huge role in it, but it is not the only answer.
@Lorella Paltrinieri I enjoyed your comment. My son lived in Rome for several months during his university studies and his health felt liberated over the better quality of food there. He has had expansive food allergies all his life and they cause much inflammation for him.
I think it's the quality of the food and lifestyle in general. 7 years ago, I went to Italy for a 3 week vacation and weighed myself before leaving home. We walked a lot everyday and ate whatever we wanted. Most days it was a small breakfast, like a cornetto & espresso, a 2 course lunch and a nice dinner with wine. I had gelato almost everyday and also had it twice on 2 occasions. I came home, weighed myself and I had lost 15 lbs. I couldn't believe it! Granted, we walked a ton, especially the 3-4 days in Rome, but I came away convinced that the food had something to do with it. Obviously, nothing scientific, just my personal experience.

I think is the food but also when you go for a vacation in a new place you are less stressed and generally more uptone and the body in that state work much better.
So I think its a lot different factors involved.
For instance I do kinesiology testing ( muscle testing) and I have tried to see how the body reacts on myself and other people. I have tested if I combine Rye bread with coconut butter and almond butter and despite what DR. Berg says about not combine carb with fat the results were impressive.Ths muscle was very strong and means iwas very healthy for the body. While I tested tomato on myself and others and the results were shocking, the muscle turned very weak and seems the body dont like that., the same with carots.
also I do believe body are different what is good for one may not be good for others.
In generally i follow DR. Berg because a lot he says make sense and are good tips but some points like this one Im a bit in doubt as I see evidences that somehow dont match., Like many old people not on keto but on a moderate carbo diet with eating a bit of everything ( not junk food of course) and living over 90, and not getting the disease he mention. Also they do not take vitamins either. Interesting.

Dont do high fat or high protein with high carb! I didnt kno that. Im not doing keto but recently really increased my healthy fats. Will keep in mind.
Use goat instead of cow's milk, as it has a more digestible form of casein. If on Keto stick to mature, hard cheeses which are mainly fat, and stay away from milk which is higher in lactose/sugar. Hard mature cheeses also have a higher amount of Vit K2. Using milk in Kefir, let it ferment for a few days as the kefir grains eat the lactose lowering the sugar/carb content.

I love raw goats cheese, buffalo mozzarella cheese and there’s a brand Wyngaard from The Netherlands ( this one is not raw but pasteurized) it’s incredible delicious to my palate, it has a top layer of rosemary,I just want to eat it all. All this to say I don’t miss at all cow cheese. Goat cheese is a staple in my house and the buffalo mozzarella for the pizza dough is pretty good as well.

Question: Is organic (pasteurized) milk good?
I had to resort to raw milk to satisfy my daily calcium needs. I couldn't eat enough vegetables to do that! Self magazine has a nutrient analyzer that helps one eat healthy. I use it to find out if my diet was meeting my nutrient needs. Consistantly short on calcium and magnesium. So I resumed drinking raw milk and chelated mgso4 supplement. My morning achyness is almost gone. I was raised on raw milk so there you go.
That's probably where you are getting more potassium.
Ensure that you are getting sufficient magnesium with you calcium intake.
You need to have about a 2:1 calcium to magnesium ration for proper assimilation.
Raw milk is actually the only version of milk that's truly healthy.

Canada also regulates that any growth hormones (beef cattle) and antibiotics that may be given to animals for consumption follow strict regulations regarding a period of withdrawal, so that when they go to market, there is 0 content of these in them for our consumption. I believe Europe does the same; I wish we were more stringent, but it's better than no laws or regulations at all.
I couldn't live without dairy. Milk, yogurt, cheese, butter, cream. I never get any adverse reaction. Hopefully it's safe to continue for me. I always buy organic. Maybe it's in my genetics as there was a famine in which all the people that couldn't digest dairy died out. I find it strange that people always complain about adverse reactions to dairy.
Me too, I love dairy and do fine with it. It's concentrated food, though. Milk is liquid calories, cream and butter are concentrated fat, versus the portion of fat you'd get from an egg or steak. So I have to careful with consumption or I weight gain. If you can afford the calories and do well with it, what a lucky deal!

Often you use the terminology "whole cream". What exactly does that mean? We live in Canada, and whipping cream here is 35% MF. Is that what you would consider "whole cream"? We do buy it organic, but haven't been able to find it grass fed here unfortunately.

I started with eggs and raw yogurt Kefir, after 20 years of veganism, because I started to feel many symptoms of vitamin and mineral deficiency..
Veganism + organic eggs, raw milk, yogurt, kefir is the way to go, stay away from actual meat.
I love all dairy, but I use heavy cream a lot, for whipped cream and sometimes butter. Generally buy the grass-fed Irish butter.

Raw cheese helps. Ate it one day and it was grass fed organic, etc. a day or two later I had normal formed stool because raw cheese is a probiotic. Before that rarely had healthy stool.

I took one thing at a time out of my diet for ten days, then started eating it again. Taking careful note how my body responded. I had been diagnosed with taloosa hunt syndrome( inflammation of cranial nerve 4 or 6.) Doing research on that I came across an article that ask the question Is there a connection between Taloosa Hunt Syndrome and Gluten? Read it and started eliminating gluten from my diet. In about 7 days symptoms were decreasing and in one month almost all were gone! I felt human again. As I got smarter about what gluten and GMO foods do to the human body and took them out of my diet I felt better and better and got healthier. Since then I've discovered corn starch was what was causing RUQ pain. It rotted my gallbladder, had to have it removed. I'm 81 and feel 71. I raise my own chickens and have found a source of raw milk. When I can afford it I buy organic vegetables and am on a low carb gluten free diet. I wish you luck in finding the cause of your leaky gut. I urge you to try the elimination diet.

Raw goat milk for years: We raise Nubian dairy goats. Funny story, my Dad wouldn't drink the goats milk so as an experiment, we filled an empty store bought milk carton with the goats milk. He couldn't tell the difference and loved it!
I'm in Israel and no hormones in the milk but unfortunately we have very high pesticides on our non organic veggies.
