  • The crew on the Pacific Dawn showing you how to cut a jackpot bluefin tuna. Caught on Aug 16th 2014. For those of you thinking that alot of meat went to waste, I personally think he did a good job filleting the fish with MINIMAL WASTE. The center line of the Tuna is the blood line which has un-edible meat. The belly was also kept which was delicious. The little waste there was, was only on the head, which only contains a small amount of meat.

    Idk why people are complaining about it being "waisted". Its not. What is left over is being given back to to ocean where bacteria, plant life, fish, crustaceans and mollusks will thrive on it and help grow the next generation of sea life.

      +xzinx yes when you run commercial or run a business you don't wanna be sitting there wasting your time on one fish for one specific cut of fish that is only about a quarter ounce more on the original cut learn business its quantity over quality in bigger businesses I'm sure if these people wanted more meat the could have kept the fish whole and done it their selves

    I don't understand all the haters. He didn't waste much at all! He kept the belly the collars. He missed some on the backbone but not that much. The only part I didn't like is than in the description it says the bloodline in inedible.

    That was definitely not a 65 lb tuna but nice quick job nonetheless. May have "missed" a little meat, but the only people who are complaining about that are people that don't clean fish, have never had to clean dozens of tuna in less than an hour, or those that live in extra rural areas and need to actually get as much meat as possible regardless of quality and taste so they can feed themselves more. These cuts had next to no bloodline, bones, and gut meat in them and that is what most fisherman who aren't hurting for money want from their fish. Plenty to eat and no additional preparation required.

    For those who are slow in the head.
    Taking the cheeks out is only worth the time when you have nothing more to do. If there is more tuna to cut you are wasting the tuna and raising the price of the remaining one since the supply is reduced.
    The cheeks aren't wasted since they are eaten by other fish.
    It would only be a waste relative to human consumption if they took the time to take the cheeks out when they could be cutting more loins.

      I dont have a video nor am I any kind of a cook. Fisherman taught me this once. But basically you take the triangle of meat that is attached to the fin (usually it ends up being that shape after the fish is cleaned) and drop it in a pan of hot butter or olive oil with fresh cracked pepper. Cook to your preference. The meat in that little area is incredibly tender and flavorful. Hope this is what you were looking for. Nice video, thank you!

    To people that buys bluefin tuna in the market for over $20 a pound, that is a lot of waste. But in real world, this is how fisherman fillet their fish. I would be sucking the meat off every single bone of the fish if it was me. But it is what it is.

    I don't know what part of the fish is wasted. Once the meat is cut the tail is just a spine and ribs. And the fillets have bone in them as well and that's what he was cutting off.

    I never get my fish fileted on the boat because there is so much waste. I know a lot of people don't mind, and I know the deck hands need to process a lot of fish... But it makes me quite sad to see such amazing fish get wasted

    In Malaysia u can make curry fish head with the fish head. And can cost you almost Rm100 per piece.
