    thanks for putting up such informative videos. i grew up in the Pacific northwest and would fish the runs with my great grand father until he passed. being so young i missed out on a lot of this information and i feel like i missed out on a bit of my culture not picking up on these skills. i now live in the midwest and sometimes pick up large salmon from a local fish house who has to fly them overnight from the PNW. your videos on the smoking cures and techniques have helped me achieve some of the flavors of home. i really appreciate what you do here.

    I love salmon. You really don't need to do a whole lot with it to get great flavor. Salmon sashimi, smoked or just baked with a fresh squeeze of lemon is amazing. In my opinion, there is no other fish that even comes close to be my favorite.

      What kind of knife do you recommend? I'm generally cleaning salmon anywhere from 4 to 25 pounds. I have a nice dexter, though the knife he was using was making that thing look like butter. (And yup, sharp knife is rule one) .

      I'm sorry but I cut salmon for 3 years professionally and in my opinion he was not good. He do know how to do it but he was far from good.

    LOVE the fact that you have your Electric work-sharp knife sharpener close by! I've got one as well great thing it is indeed, easy to make sure your knife is sharp, so hard at times to filet with dull blade. Got mad last summer on dull knife did some looking around and was a good deal. Oh nice Video as well lol.

    I live on B.C.coast and have fished for large Chinook\King salmon for many years. Like DirtRider whose comment below is germane to my experience, I cut fish pretty well. However, that
    said, this gentleman showed me several twists of the knife of which I was unaware.
    Thank goodness you don't have to be an old dog like me to learn an old trick. (There may be hope for some of you young dogs as well unless you know everything already)

      The funny thing is, He does not tell you you can make soup of the head. He also throws away the back bone, you can make soup/stock of that. Throwing it back to the river does really not make any sense because salmon don't feed from the river, they just reproduce there.
      Moving on to the real part, man was that some nice handcrafting! God dayum that went fast and nice result as well! Looking dam good sir.

    I do the exact same thing with the meat left on the bone after filleting the meat off the bone. I make a Salmon Chowder with it that everyone really likes. Especially good on cold rainy days for dinner.

    Excellent video. The "Take Home" lesson for me was to clean the meat on the backbone for the smoker. I was pleasantly surprised how many shavings I got. The only thing I questioned was smoking the belly fat, which I generally throw away, because it is where the toxins concentrate. A fish that size is generally 2 to 3 years old.

    Dang, watching this at 11 pm and now all I can think about is some salmon, lol wait, I think I have some leftover salmon in the fridge, not nearly as good as fresh smoked salmon but it will have to do. Love those nice thick filets, yummmmmy. Salmon is my favorite fish for sure.

    I work for a charter service in Seward AK. I have always found it to be easier to teach beginner with a fish head on so you have something to grab on to. you have some very nice fillets though, it is a big king and you didn't butcher it like most people who cut in a sawing motion. a better way to clean your fish flesh off is take the knife and slide it against the fish softly to take all the slime and gunk off. Spraying it with water cab ruin the flesh, because salmon meat is very delicate.
