In China we use 1 cleaver to do everything Same cleaver chops fresh fish, and then meats and cooked chicken whole It can also cut some fruits afterwards All in 1 sitting

Years ago I was vacationing in Reykjavik and went to a small mom&pop fishmonger on the pier. We were there at closing and were the last customers- as we finished we were invited into the back to watch the finale of Eurovision. They had some pretty wild slabs of tuna and whale they would be breaking down after we left.
um vez tava num bar dois caras um era bem forte, e outro tinha mais de 1.90m pelo jeito eles eram lutadores de alguma coisa, usavam camisetas dava entender coisa do genero... um era de menor depois vir a saber, mas não aparentava...... eles começaram a tirar sarro de um velho, começaram a insulta-ló sem parar chamando de vovozinho treme-treme e o senhor nem se importava, ficava na dele tomando sua pinga, agia como se não fosse com ele. Este senhor era pequeno uns 1.65m e magro, se via que era do sitio pela suas roupas. Ai o senhor deixo o local e saiu do bar. Os dois caras ficaram pé da vida e começaram a falar que ia atrás dele para dar uma surra.... uns caras que estavam vendo falou para eles pararem com aquilo, mas foi em vão...... os dois foram atras do senhor tirar satisfação mas o senhor não falava nada, até que um dele dei um empurrão no senhor e ele caiu no chão... ele se levantou e um dele foi para lhe dar um soco na cara..... o senhor pegou a mão que ia em sua direção levando-a para cima e com a outra mão enfiou um tipo de uma faca debaixo do braço dele que foi direto no coração...... o cara ficou duro e morreu na hora, escorregando pelos braços do senhor o outro comparsa entrou em choque e ficou cristalizado. Depois fiquei sabendo que velhinho matava porco quase todos os dias e que ele era muitíssimo habilidoso com facas e laminas pois ele mesmo que as fabricava, pois seus cortes eram perfeitos e precisos.

Not only was this man's artisanship a joy to watch, I was impressed with how gently he handles each finished section. Really respects the product. I would really love to find this place and enjoy this sashimi. Guess I'll have to go to my local sushi place and enjoy. Actually the local place is pretty good, with it's own sushi master, Juno.
@@over60exercise makes sense. I've been to Taiwan six times and their sashimi is as good as Japan (been twice) I heard in the old days they would only import Blue Fin to Japan because of the price but not anymore the Taiwanese are just as enthusiastic now. I miss the night markets!
As a man who worked 22 years in a beef meat packing in Alberta Canada this is some of the best meat cutting I've ever seen. I love those knives.

Not only was this man's artisanship a joy to watch, I was impressed with how gently he handles each finished section. Really respects the product. I would really love to find this place and enjoy this sashimi. Guess I'll have to go to my local sushi place and enjoy. Actually the local place is pretty good, with it's own sushi master, Juno.

It's probably the Tsukiji fish market in Tokyo. I've been there and had the most amazing sushi/sashimi ever. It was so good it damn near made me cry.

@@over60exercise makes sense. I've been to Taiwan six times and their sashimi is as good as Japan (been twice) I heard in the old days they would only import Blue Fin to Japan because of the price but not anymore the Taiwanese are just as enthusiastic now. I miss the night markets!
